Summer Salads
Summer is fast approaching and one thing I look forward to eating more of is salads. There is something about a big bowl of leafy greens with all the fixings that screams summer. It’s a healthy meal and is light and refreshing on a hot day. You also don’t often feel like you overate with a salad, and you can customize the ingredients to match your tastes. I want to share 4 of my favorite salad recipes with you: BLT Chicken Chopped Salad Grilled Chicken Arugula Salad with Strawberries & Feta Doritos Taco Salad Spinach Salad with Fruit & Maple Dressing All are simple to make, delicious, and large enough to feed a family of 4. Pan Seared Mediterranean Salmon
Pan Seared Mediterranean Salmon is an easy meal that comes together (from prep-time to completion) in about 30 minutes – perfect for a weeknight meal! The salmon is pan seared, which gives you a big return on texture and flavor. The skin is crispy, and the center is tender and moist. Once you add the accompanying ingredients you have a burst of Mediterranean flavors. This meal doesn’t take a lot of effort to make but will taste like it came from a restaurant. The recipe can be found here. Start by heating 1 Tbsp of olive oil in a large skillet over medium-high heat. Season the salmon filet(s) with salt and place in the hot pan, flesh side down (skin side up). Sear for 4-5 minutes. Creamy Hummus Pasta with Sun Dried Tomatoes is something we tried recently. We both like pasta and we both like hummus, so why not try them together, right? It’s savory, delicious, and light. You’ll be satisfied without the heavy feeling of being too full. The hummus replaces traditional pasta sauce, so you have a creamy and slightly nutty flavored sauce. The sun dried tomatoes are roasted with garlic so they are tender and give off great flavor. This recipe is a winner in our house! The recipe can be found here. Start by bringing a large pot of water to a boil and cooking the pasta according to package instructions. Reserve 1 cup of pasta water before draining, then set the reserved water and noodles aside. Do you ever ask your family what they want to for dinner and no one can agree on the perfect meal? That’s a common occurrence at my house too but recently I received a request for lasagna and thought it was a great suggestion…but what kind should I make? Andrew is more of a meat eater so I knew he would want a traditional lasagna, but I would prefer something more veggie based. Chicken for Din
If Frank’s Red Hot sauce is one of your favorite pantry items, this recipe for Spicy Chicken Meatballs will instantly become a favorite meal! Although very simple to put together, the sauce has such depth of flavor your family may believe it took you hours to make such a delicious meal. When I suggest this for dinner, no one turns these meatballs down as an option for dinner when I suggest them. A side dish of Cilantro Lime Rice complements these meatballs well and a simple recipe to make as a side dish. Heavenly Halibut
The fresh wild Halibut filets in our stores right now are fabulous, Halibut is delicious whether baked, sautéed, grilled, or broiled and I can’t get enough of it! My personal favorite recipe is Halibut with Leeks and Spinach! The prep is easy and don’t count on having leftovers because there will be clean plates! One thing I do not enjoy when preparing fish is removing the skin from the fish and our staff at the chefs counter will remove the skin for you if you ask them. A sure sign of spring!
The snow is still falling but a sure sign that spring is upon us: first of the season fresh wild Halibut fillets will arrive in the stores tomorrow!
