BBQ Chicken Pizza Rolls
BBQ Chicken Pizza Rolls are a spin on a classic pizza roll recipe. Imagine a pizza but replace the traditional ingredients like pepperoni and sausage and with BBQ sauce and chicken. Then imagine that same pizza in a bite sized form. That is basically what a pizza roll is; all your favorite ingredients rolled up and nestled in fluffy dough. The BBQ sauce replaces the marinara sauce in this dish and add the perfect amount of zest to each bite. It pairs perfectly with the tender chicken, crisp bacon, and melted cheese. Cashew Chicken Lettuce Wraps are a delicious, low carb dinner option, and are better than takeout! That’s right…. I said it. Sometimes homemade meals are better than takeout. These lettuce wraps are restaurant style and come together in about 20 minutes. They are filled with tender chicken, cashews, ginger, garlic, and plenty of heat! Each lettuce wrap is full of flavor and make quite the healthy meal option. The recipe can be found here. Start by slicing the chicken into 1-inch pieces. Then, season with salt and pepper and set aside. An alternate option would be to substitute ground chicken or ground turkey if you prefer. If you are searching for the perfect appetizer or side for your next cookout, look no further! Grilled Jalapeno Poppers are the way to go! They are stuffed with an addictive mixture of bacon, cream cheese, and cheddar cheese. The rich and creamy combination of the stuffing contrasts the spicy jalapeno peppers leaving you wanting more. Pizza for Breakfast!
Two of my favorite things to eat are breakfast foods and pizza. There is nothing like a good brunch with plenty of options to choose from but there is also something so satisfying about leftover pizza for breakfast. So really, pizza is a breakfast food 🙂 Today I want to share with you my recipe for a super simple Breakfast Pizza. We actually ate this for dinner one night (breakfast for dinner = brinner at our house) and it was the perfect meal, but you could easily whip this up on the weekend for breakfast. 4th Of July Celebration
The 4th of July is right around the corner and as things seem to be returning to normal, I’m sure a lot of people are planning a gathering with friends and family to celebrate. I know we sure are! The weather is predicted to be beautiful and sunny, and we haven’t entertained in a while, so we are really looking forward to the holiday. I have a few new recipes to share with you today. They are all 4th of July themed and something you can easily add to your menu – or anytime throughout summer! These Sloppy Joe’s are a delectable mixture of chicken, tomato sauce, mozzarella cheese, and breadcrumbs. It’s a very family / kid friendly meal and tastes amazing! Sheet Pan Encrusted Chicken
Sheet pan meals are becoming more frequent at our house. They are easy to assemble and quick to cleanup because all the cooking happens on…you guessed it…a sheet pan. We have a 2-person household as well, so the sheet pan meals are often enough to have for 2 meals. Depending on how busy we are during the week, this is either 2 dinners or 1 dinner and 1 lunch for us. The combinations are endless as well! We primarily make chicken with a vegetable on the side, but you could try turkey breasts, pork chops, etc. with any vegetable (or vegetables) of your choosing. My favorite recipe is for Sheet Pan Pretzel Encrusted Honey Mustard Chicken with Potatoes. I think coating to the chicken adds a fun element to the dish because you had added texture and flavor instead of just plain chicken. So, you get tender chicken in each bite with a little crunch. Air Fryer Blooming Onion
We don’t use our air fryer often but every now and again it’s fun to try a new recipe. This time we tried an Air Fryer Blooming Onion. A blooming onion is essentially a large onion that is sliced to resemble a flower, battered, deep fried, and served as an appetizer. My recipe removes the deep-frying step and has you air fry it instead. The batter creates this lovely crust that is crispy, the onion is tender, and the dipping sauce adds a nice tang to each bite.
