Cajun Chicken Sloppy Joe’s is a wonderful weeknight meal! It’s easy to make, is done in less than 30 minutes, and is packed full of flavor. The Cajun seasoning really bring this dish together and is a wonderful spice. You can find it at your local Festival Foods or make a homemade version. It pairs well with so many dishes – pasta, shrimp, steak, chicken, etc. and has a bit of a kick. The bold, spicy flavor comes from the cayenne and the earthiness you tastes is from the herbs. Mediterranean Chicken Bowls
I’ve been a big fan of “bowls” lately. For example, instead of eating a stuffed bell pepper, I would eat the ingredients tossed together in a bowl. Or instead of having an egg roll, the ingredients would be in a bowl….you get the picture. My most recent bowl idea is for a Mediterranean Chicken Bowl. It has a lemon-dill rice, wonderfully seasoned Greek chicken, a fresh cucumber and tomato salad, and yummy tzatziki sauce to bring it all together. Halloween is fast approaching – are you ready? We sure are. Halloween is a month-long celebration at our house. We decorate early, spend 31 days gorging on candy, watch every Halloween movie possible, and make some fun themed treats to enjoy. I want to share with you some of my new Halloween recipes and ideas for this year. Each is fairly customizable and will be sure to put your friends and family in a mood to celebrate. My first Halloween idea is for a Char-Spookery board. This is a traditional charcuterie board but with a spooky flair. To be called a charcuterie board, it must contain meat. Willkommen to Oktoberfest!
Willkommen (or welcome) to Oktoberfest! If you aren’t familiar, Oktoberfest is the world’s largest Volksfest…or beer festival and traveling funfair, for those of use that don’t speak German. It’s held in Germany and runs about 2 weeks, typically from mid-Sept to the first Sunday in October. You can find traditional German food such as sausages, oversized soft pretzels, mustard and curry ketchup, cabbage and radish salads, dumplings, spaetzle, and obviously, plenty of ice-cold beer! More than 6 million people from around the world attend the event every year. Unfortunately, the Oktoberfest celebration in German is cancelled again this year, but that doesn’t mean you can’t still enjoy plenty of yummy food. Chicken. Bacon. Ranch. Three things that pair amazingly well together. Combine them in sandwich form and you have one mighty fine meal. Think tender chicken, creamy ranch (which really goes with just about anything), and crispy bacon smothered between a bun with some melted cheese for good measure. This is what dreams are made of. Cashew Chicken Lettuce Wraps are a delicious, low carb dinner option, and are better than takeout! That’s right…. I said it. Sometimes homemade meals are better than takeout. These lettuce wraps are restaurant style and come together in about 20 minutes. They are filled with tender chicken, cashews, ginger, garlic, and plenty of heat! Each lettuce wrap is full of flavor and make quite the healthy meal option. The recipe can be found here. Start by slicing the chicken into 1-inch pieces. Then, season with salt and pepper and set aside. An alternate option would be to substitute ground chicken or ground turkey if you prefer. Chicken Parmesan Sloppy Joe’s
Your favorite Chicken Parmesan dish is now available in sandwich form with Chicken Parmesan Sloppy Joe’s. These Sloppy Joe’s are a delectable mixture of chicken, tomato sauce, mozzarella cheese, and breadcrumbs. It’s a very family / kid friendly meal and tastes amazing!
