Instant Pot Cajun Chicken with Rice has become a family dinner favorite at my house.  It’s easy to make, delicious, and something simple you can make in one pot.  It’s the perfect comfort food on a cold night…or any busy night when you don’t have a lot of time to cook!  Even better, it saves on dishes, so you don’t have to spend too much time on cleanup duty 🙂 The recipe can be found here. Start by chopping the veggies. Then slice the chicken breasts, either into 1-inch pieces or strips.  Place the chicken in a bowl with 1 Tbsp Cajun seasoning and toss to coat. I love a good fried chicken sandwich and want to share my go-to recipe with you.  This Beer Battered Chicken Sandwich with Lime Coleslaw is crispy, juicy, and doesn’t disappoint.  The batter includes beer, giving it a light and crisp texture once fried, plus a slight beer flavor comes through in the crust and who doesn’t love that? I suggest using a brown ale for the best batter flavor but any malty ale or heavier seasonal beer (such as Oktoberfest) will work.  You only use 2 cups of beer so you will have a little extra in the bottle to enjoy while you cook 🙂 The chicken is only fried once and then finished in the oven.  Once an internal temperature of 165 degrees is reached, you could fry the chicken again for a very short amount of time to maximize crunch.  I’ve never done this but if you like … Continue reading

Margarita Chicken is one of my new favorite dishes.  It’s quick and easy to make, healthy, and a tasty meal you can enjoy all year round.  The chicken is grilled to perfection, then topped with melted cheese, pesto, tomatoes, and basil. The recipe can be found here. Here’s how you make it: Start by combining the olive oil, salt, pepper, garlic powder, and Italian seasoning in a bowl.  Add the chicken and toss to coat. In a separate bowl, combine the tomatoes, basil and lemon. Heat a skillet over medium-low heat.  Cook the chicken on each side for about 8-10 minutes.  I like to cook the chicken low and slow, so I don’t burn the meat if the chicken breasts are thick.  You can always cover the skillet to help evenly distribute the heat.  If you are better with a grill it’s OK to cook the chicken that way too! … Continue reading

When was the last time you ate a Sloppy Joe?  It’s not a common meal in my house but there is something about a Sloppy Joe that reminds me of family dinners as a child.  I wanted to create a new version of a Sloppy Joe that combines another favorite food of ours – buffalo chicken.  The result was a Buffalo Chicken Sloppy Joe.  It was amazing! These Buffalo Chicken Sloppy Joe’s have enough heat without being too spicy and veggies hidden within the meat that add great flavor.  I recommend drizzling some ranch or blue cheese dressing on top to offset the heat.  And because who can enjoy buffalo sauce without ranch or blue cheese?  It really completes the sandwich! For many years I thought the word “slider” meant a tiny hamburger, but boy was I wrong!  Sliders are small sandwiches made with slider rolls that come in a variety of flavors, and they are all the rage.  Think meat and cheese melted together in the oven on a crisp roll – yum! I have a great recipe for Chicken Cheddar Apple Burgers to share with you today.  If you love Fall and are looking to put the apples you bought at the orchard to good use or if you just aren’t ready to put the grill away, this recipe is for you!  The complimentary Fall favors come together to create a new take on classic BBQ. Zucchini noodles are all the rage and a low carb way of enjoying pasta.  If you have a spiralizer you can easily make your own “zoodles” but if you don’t have a spiralizer you can find pre-spiraled noodles at your local Festival Foods.  I think zoodles are a light yet delicious substitution for traditional pasta noodles.  They will fill you up but without the heavy, overly-full feeling, if that makes sense. My new favorite recipe is Zucchini Noodles with Pesto Chicken.  It’s super easy to make and only takes a few ingredients! The recipe can be found here. Orange Chicken is sure to be a hit at your dinner table.  The tender chicken is fried crisp and coated in a thick orange sauce.  There is no lack of flavor in this sweet and tangy dish.  It’s one of my favorite Asian dishes and will make you forget about takeout. Start by cubing the chicken into small pieces.  Then add the chicken to the batter and toss to coat.  Let the chicken sit in the batter for about 10 minutes, then toss again. Heat about 2 cups of peanut oil in a wok or skillet.  I prefer to use a wok because it’s easier to stir and contains a lot of oil splatter, but you will get very similar results with a skillet.  Add the chicken and fry until crispy, making sure the chicken is also cooked through.  Remove the chicken to drain while you make the sauce, keeping the chicken … Continue reading

What are potstickers?  My answer in one word: delicious. Potstickers are an Asian dumpling typically filled with meat and veggies, pan fried, and steamed to perfection.  They are crispy on the bottom, soft on the top, and worth the effort.  I’d like to share my favorite recipe for Chicken Potstickers with you. The recipe can be found here. Start by gathering all the ingredients you need to make the chicken “filling”.  Combine the chicken, scallions, bell pepper, egg, ketchup, mustard, Worcestershire sauce, brown sugar, salt, pepper, and cayenne in a mixing bowl.  If you don’t mind getting your hand dirty, combine the ingredients by hand.  This really helps to blend everything together. It’s easiest to do all your prep work ahead of time.  Place 2 baking sheets on the counter.  Dampen paper towels and cover the bottom of one pan.  Dampen more paper towels to lay on top of the potstickers.  The potstickers will sit between the damp paper towels … Continue reading
