More Cheese, Please!
It’s that time of year again with with holiday parties and gatherings, and since our cheese sale is on now we thought we would try our hand at making our own Charcuterie Board! Here is our before picture. Cheddar, gouda, havarti, blue, brie, gruyere, salami, prosciutto, parmesan, crackers, mini toast, sliced baguette, lingonberry jam, and hot pepper raspberry jam. Prosciutto Rolling. Then we sliced each of the cheeses into smaller bitesized portions. Our final result. Our Cheese and Meat Platter, served with fresh blackberries, raspberries, and salted cashews! Mexican Chicken and Rice is incredible! It has the best mesquite BBQ flavor, which is slightly sweet and smoky, and it pairs perfectly with Instant Pot Mexican Rice. Both the chicken and rice are pretty simple to assemble so this is a great go-to meal for any day of the week! The Mexican Chicken recipe can be found here. Then pour the entire bottle of Lowry’s marinade into the bag and toss to coat. Make sure the bag is completely seals and place in the fridge to marinate for at least 30 minutes, but ideally up to 2 hours. Chicken Egg Roll in a Bowl
Chicken Egg Roll in a Bowl combines the delicious flavors of your favorite Chinese restaurant appetizer in a one pan! It’s a delicious spin on a classic egg roll. This dish is quick to make, healthy to eat, and will change the way you eat egg rolls 🙂 The recipe can be found here. Start by heating a large skillet over medium heat. Add the ground chicken and heat until completely cooked. You can also substitute ground turkey or ground pork, if preferred. Next, add the garlic powder, fresh ginger, green onion, and soy sauce to the skillet. Stir to combine and heat slightly. Next, add the coleslaw to the pan and stir to combine. Lentil Sloppy Joe’s
Lentil Sloppy Joe’s are a plant-based twist on a classic sandwich. They are packed with flavor and protein and loved by vegans and meat eaters alike! If you are a meat eater, don’t be hesitant to try this recipe! The word “vegan” can be daunting but these are delicious, and you won’t know you aren’t eating meat. The lentils are hearty, and the sauce has a very similar taste to traditional Sloppy Joe’s. Lentil Sloppy Joe’s are an easy, filling, and inexpensive meal. Sheet Pan Roasted Gnocchi & Veggies is a great one-pan meal the whole family will love! It’s full of toasted gnocchi (store bought but still delicious), roasted fresh veggies, herbs, and a dusting of Parmesan cheese. It’s easy to throw together on a busy weeknight and is a meal that can be enjoyed year-round. The recipe can be found here. Start by preheating the oven to 425 degrees. Just when you thought breakfast couldn’t get any better, along comes Pancake Breakfast Tacos! All your favorite breakfast foods are combined in a pancake shell to create these breakfast tacos; piled high with scrambled eggs, bacon, sausage, etc. Super yummy and easy to make, so start your morning right with Pancake Breakfast Tacos! The recipe can be found here. Start by making the pancake mixture according to package instructions. Heat a flat-bottomed skillet or griddle. Once hot, add the pancake batter and cook the pancakes according to package instructions. I made 6 large pancakes but make however many batches necessary to feed your family or guests. If you are making multiple batches, I recommend preheating the oven to 200 degrees and placing the cooked pancakes on a baking sheet in the oven to stay warm while the rest of the pancakes are cooking. Yuletide Yummies
Baking is one of my favorite things to do but baking Christmas cookies is extra meaningful to me. I used to spend a few days with my mom in the kitchen before the holidays baking her traditional cookies. It was always so much fun…and something I looked forward to helping with every year. Nowadays, I help when I can, but also like to bake a few batches of my own. I like to create new recipes or put a holiday spin on an existing recipe. It’s fun to be creative and I love hearing reactions to the different goodies. It doesn’t hurt that I have a sweet tooth so if no one else wants the cookies, I sure do! Apple Cider Chicken & Apples is the ultimate fall dish! Think juicy chicken, tender apple slices, the crisp taste of apple cider……my mouth is watering just thinking about it 🙂 Your whole kitchen will smell like fall with this dish. It’s a healthy and simple fall meal. The recipe can be found here. Start by heating a large skillet over medium-high heat. Add the olive oil and onions and cook until soft and translucent. Then add the chicken, season with salt and pepper, and cook until the chicken is about 80% done. Chicken Apple Chili
With the low temperatures we’ve had lately I want to hunker down and have a hot meal after work. Chicken Apple Chili is my new favorite go-to meal! It’s a bit non-traditional but is very easy to assemble, is light and refreshing, and is the perfect fall meal. Plus, it comes together in just a few hours (set it and forget it) so you aren’t waiting 4-8 hours like traditional chili. The recipe can be found here. You need a slow cooker for this one-pot recipe. Add all ingredients to the bowl of the slow cooker, except the apples, and stir together. Cover and cook on high for 2 hours. Serve with chopped apples on top. Easy peasy! The only real effort you need to put into this recipe is chopping the veggies. I also like to use rotisserie chicken in this recipe. Terrific Turkey Dinner
One of my favorite Thanksgiving traditions from my childhood was getting up early to help my mom prepare all the food. We’d spend hours in the kitchen chopping vegetables, assembling casseroles, prepping the turkey (one in the oven and one on the grill), and baking pies. We would clean up and get ready for the day while everything was baking in the oven, then we’d wait for company to arrive. It was the best! This year, I’m thinking of changing the plan. Why not do something a little simpler and less time consuming so we can enjoy each other’s company and spend the day with family? The holidays are busy enough without spending hours in the kitchen, so I want to create a menu that is delicious but also fairly quick to put together.
