It doesn’t matter what time of year it is…ice cream is always an acceptable dessert.  Granted, I do tend to enjoy it more frequently during the summer months but every now and then a bowl of ice cream (better yet, homemade ice cream) satisfies my craving during the colder months of the year.  I like to make homemade ice cream.  Sure, store-bought ice cream is wonderful and super convenient but homemade ice cream tastes a bit like soft serve and is creamer in my opinion.  I have 3 recipes to share with you today for homemade ice cream: Birthday Cake Blueberry Butterfinger   The Birthday Cake Ice Cream is BY FAR my favorite ice cream I have ever made.  It tastes like cake batter…the pre-cooked batter you scrape out of the bowl and lick any excess off the spoon…that cake batter.  It’s sweet, creamy and is packed full of sprinkles.  It’s amazing. The Minnesota State Fair is in full swing.  Do you plan on going?  I know a lot of people that plan on attending the fair and a lot of people that don’t, for various reasons.  I sure love the fair and missed not being able to attend last year.  Unfortunately, this year, it’s also not in the cards for me.  However, that doesn’t mean I can’t enjoy some delicious fair food at home, and you can do the same! I consider myself to be a cookie connoisseur… or a cookie lover of sorts… so I will never turn down the option to sample a new cookie or try a new cookie recipe.  One of my favorite desserts is a warm cookie a la mode.  I could easily skip dinner and go right to dessert if I know this is on my menu, so I thought I would try my hand at making a homemade version.  Something I didn’t need to be at a restaurant to enjoy.  The result is a Cast Iron Chocolate Chip Skillet Cookie. Sunday, July 19, 2020 is National Ice Cream day, and what better way to celebrate than with some homemade ice cream! There really is no better time to enjoy ice cream than a hot summer day!  You can obviously eat ice cream year-round but it’s such a cool and refreshing treat during the warm months.  With so many flavors to choose from, you’ll be sure to find your favorite.  I wanted to do something different for National Ice Cream day so I’m celebrating by making homemade ice cream. Can you believe the 4th of July is this weekend?  I looked at my calendar and thought, that can’t be right.  What happened to the month of June?  I barely feel prepared!  But…. come Saturday, I will be ready. I’m putting others in charge of the food and am going to focus on desserts.  I know we’ll be spending as much time outside as possible, soaking up the sun, and social distancing with family and friends.  I want to make a variety of sweets with something for everyone.  I also want something that’s refreshing because it’s going to be HOT! Everyone loves ice cream!  Why you ask?  There are soooooooo many flavors to choose from, it’s refreshing on a hot summer day (but can be enjoyed year round), you can eat it anywhere, it goes with almost any dessert, you can make it at home….really the reasons to enjoy ice cream are endless 🙂 I enjoy making ice cream with my KitchenAid Ice Cream Maker and trying different flavors.  I’ve definitely had a few batches that didn’t turn out how I wanted but let’s be honest, I ate them anyway 🙂  Who would throw away perfectly good ice cream?  I do, however, have 3 favorites I would like to share with you today. If you’re anything like me, you love pumpkin spice!  I know, I know, a lot of people are over the pumpkin spice craze but with so many recipes to try how can you not be intrigued by its deliciousness?  I personally think it should be a year-round item and not just seasonal, but it’s not up to me.  To fulfill my need for pumpkin I decided to have ‘pumpkin weekend’ at our house to hopefully get it out of my system (between us, it will never be out of my system 😊). I love to eat apples year round but there is something special about eating apples in fall; the weather is getting cooler, colors are starting to change, and apple-picking season is upon us. They are crisp, sweet, refreshing, and a true symbol of fall. One of my favorite snacks to make in the fall is Apple Salsa. It’s something I had years ago at a local apple orchard and absolutely loved it! I knew I had to recreate it and spent hours trying to do so, and think I have the recipe perfected! The recipe can be found here. It’s the perfect combination of sweet and spicy. I think it’s more sweet than spicy but there is a subtle spicy undertone.
