Pizza Party!

Friday night is pizza night at our house. With COVID, we’ve been cooking at home a lot more than ordering in or going out to eat so we’ve taken to preparing our own pizzas from scratch at home. It’s been fun to play around with toppings and be creative with what we add to each pizza. You can definitely stick with the traditional toppings if that’s what you prefer on pizza, but we like to branch out and make each pizza unique. This crust is a favorite of mine as well. Lemon Orzo with Roasted Vegetables

Lemon Orzo with Roasted Vegetables is not your typical pasta salad. It’s packed with texture and flavor yet is very light and refreshing. It works well as a side dish or as a standalone meal. I think it’s best served warm but room temp or chilled is also fine, it’s all about your preference. The vegetables are delicious when roasted because they are slightly caramelized. I like to use bell pepper, asparagus, cherry tomatoes, and red onion but you can substitute any veggies you like – eggplant, zucchini, squash, mushrooms, etc. You can really make this your own by using the veggies you crave. Labor Day Weekend

It’s a busy time of year with summer coming to an end, school starting, preparing for fall and all the delicious food that comes with it (more on that later) but we were able to squeeze in one more weekend at the cabin! We opted for a fairly simple menu because the weather was perfect and we wanted to make the most of the holiday weekend by spending as much time outside as possible. Let’s be honest, no one is up early at the lake, but when we do get up we are ready for some Bloody Mary’s and breakfast. Our favorite is Tito’s Vodka with equal parts Tomato Juice and Clamato plus all the fixings! We used Ellsworth, WI Cheese Curds, pickles, and summer sausage for our skewers.
