Bruschetta is a staple of summer meals.  I know it’s fall, and the days are getting colder, the sun is setting earlier, and you are probably thinking of warm, hearty meals…not fresh, summer sides.  BUT…bruschetta can be enjoyed in many ways.  Including being used as a pizza topping. If you have a vegetable garden in your backyard or perhaps like to visit your local Farmer’s Market, you can make bruschetta with some wonderfully fresh produce.  This time of year, you most likely have to purchase the ingredients at your local grocery store.  And that’s OK!  You’ll still have incredibly flavorful and fresh bruschetta to enjoy.  Now for this recipe, the bruschetta will be used as a pizza topping but you will have leftovers.  What to do with the leftovers you ask?  Add as a topping on a grilled chicken breast, serve as a salsa with tortilla chips, or serve with toasted baguette slices. Apple Butter & Prosciutto Naan Flatbread is the perfect fall dinner.  It’s easy to assemble, quick to make, and tastes amazing!  The classic combination of apples and cheese give this recipe a sweet and savory taste, and very unique flavor.  It’s a great way to use up those apples or apple butter you bought during a visit to the orchard this fall 😊 The recipe can be found here. Start by preheating the oven to 350 degrees F and lining a baking sheet with parchment paper. Place the flatbreads on the baking sheet. Top each flatbread with ¼ cup of apple butter.  Add more to taste.  I like to use store-bought apple butter (from either a local apple orchard or grocery store) for convenience.  You can use homemade apple butter if you prefer. If you are looking for a quick and easy weeknight meal, I have the perfect recipe – BLT Naan Flatbread.  It’s all the flavors of your favorite BLT sandwich but in flatbread form.  Think soft and chewy naan flatbread in lieu of toasted bread, crispy bacon, crunchy lettuce, juicy tomatoes, and melted cheese.  The mayonnaise is whisked into a lovely sauce to drizzle over the top.  And it’s all ready in about 20 minutes or less. Start by preparing the bacon according to package instructions.  I like to bake or fry my bacon (kind of depends on the time I have and how much cleanup I want to do).  Remove the bacon to a paper towel lined plate to drain the excess grease and cool.  Once cool, chop into pieces. Spooky Season is upon us!  Now that it’s after October 1, we can gear up for Halloween and all things spooky 😊 Halloween is a month-long celebration at my house.  We watch all the classic movies and anything new we can find, gorge ourselves on candy, and decorate with probably too many pumpkins.  But it’s fun and helps us get in the holiday spirit! Chicken Pesto Naan Flatbread is a quick and easy meal that comes together with minimal effort and few ingredients.  It’s filling, flavorful, and done in about 20 minutes.  This recipe is great for spring or summer and can be made in the oven or on the grill. The recipe can be found here. Start by preheating the oven to 350 degrees F.  Line a baking sheet with parchment paper. Place the flatbreads on the baking sheet. Top each with ¼ cup of pesto and spread evenly over the top.  Add more or less to taste.  We like pesto at our house, so I tend to go a little pesto crazy 🙂 Add ½ cup of mozzarella cheese to each flatbread. A previous blog of mine for White BBQ Sauce Grilled Chicken discusses a wonderful condiment – White BBQ Sauce.  Another recipe I created using the same BBQ sauce is for a White BBQ Sauce Grilled Chicken Flatbread.  It’s absolutely divine!  The White BBQ Sauce is tangy, zesty, and pairs well with grilled meat…or in this case, acts as a great pizza sauce 🙂 This flatbread recipe is simple to make and can be customized to any taste.  I like to use chicken, cheese, red onion, and green onion.  You can omit or add any items.  Try adding mushrooms or green pepper, chopped bacon, you name it!  Or skip any item if you have a pickier eater on your hands 🙂 The recipe for the White BBQ Sauce can be found here. There is nothing better than deep-dish pizza, especially when it’s homemade!  I love the fresh marinara sauce, fresh herbs, mounds of melted cheese, soft dough, and plethora of toppings.  It’s one of those meals you crave because you probably only have it 1-2 times each year and it’s most likely when you’re traveling to a city known for deep-dish pizza…  Well, you’re in luck!  I want to share my recipe for Homemade Cast-Iron Deep-Dish Pizza with you. Halloween is fast approaching – are you ready? We sure are. Halloween is a month-long celebration at our house. We decorate early, spend 31 days gorging on candy, watch every Halloween movie possible, and make some fun themed treats to enjoy. I want to share with you some of my new Halloween recipes and ideas for this year. Each is fairly customizable and will be sure to put your friends and family in a mood to celebrate. My first Halloween idea is for a Char-Spookery board. This is a traditional charcuterie board but with a spooky flair. To be called a charcuterie board, it must contain meat. Otherwise, it’s just a plain old board. What I like about charcuterie boards is how easy they are to put together and how customizable they are. When I think of crisp and refreshing, I think of caprese salad.  It has juicy, ripe tomatoes, slices of soft mozzarella, and is finished with incredibly fresh basil leaves.  If you add some French bread and a smear of pesto and can turn a lovely caprese salad into a tasty pizza.  It’s bursting with flavor and is to toasted to perfection. Slice the French bread in half, horizontally.  If the bread is too long to fit on a baking sheet, slice the bread in half so it will fit.  Make sure you look for soft Italian bread or French bread.  You don’t want to use a hearty baguette or anything that will be too hard and crusty after baking.
