Spooky Season is upon us!  Now that it’s after October 1, we can gear up for Halloween and all things spooky 😊 Halloween is a month-long celebration at my house.  We watch all the classic movies and anything new we can find, gorge ourselves on candy, and decorate with probably too many pumpkins.  But it’s fun and helps us get in the holiday spirit! I like to try new Halloween themed recipes every year too.  It’s fun to have themed treats for a movie viewing party or to simply enjoy throughout the week.  This year, I have 3 recipes to share with you: Halloween Pizza Dip Candy Corn Quesadilla Candy Corn Cupcakes   Halloween Pizza Dip is the perfect appetizer!  It’s loaded with cheese, pizza sauce, and pepperoni, and is enjoyed with soft pizza dough bites that are baked around the dip.  It’s served hot, right from the oven, and won’t last long 😊 It’s easy to make and comes together in … Continue reading

Chicken Pesto Naan Flatbread is a quick and easy meal that comes together with minimal effort and few ingredients.  It’s filling, flavorful, and done in about 20 minutes.  This recipe is great for spring or summer and can be made in the oven or on the grill. The recipe can be found here. Start by preheating the oven to 350 degrees F.  Line a baking sheet with parchment paper. Place the flatbreads on the baking sheet. Top each with ¼ cup of pesto and spread evenly over the top.  Add more or less to taste.  We like pesto at our house, so I tend to go a little pesto crazy 🙂 Add ½ cup of mozzarella cheese to each flatbread. Add ½ cup of cooked and diced chicken to each flatbread.  This is the perfect way to use up leftover rotisserie chicken. Bake for 10-12 minutes or until the cheese … Continue reading

A previous blog of mine for White BBQ Sauce Grilled Chicken discusses a wonderful condiment – White BBQ Sauce.  Another recipe I created using the same BBQ sauce is for a White BBQ Sauce Grilled Chicken Flatbread.  It’s absolutely divine!  The White BBQ Sauce is tangy, zesty, and pairs well with grilled meat…or in this case, acts as a great pizza sauce 🙂 This flatbread recipe is simple to make and can be customized to any taste.  I like to use chicken, cheese, red onion, and green onion.  You can omit or add any items.  Try adding mushrooms or green pepper, chopped bacon, you name it!  Or skip any item if you have a pickier eater on your hands 🙂 The recipe for the White BBQ Sauce can be found here. The recipe for the White BBQ Sauce Grilled Chicken Flatbread can be found here. Start by making the BBQ … Continue reading

There is nothing better than deep-dish pizza, especially when it’s homemade!  I love the fresh marinara sauce, fresh herbs, mounds of melted cheese, soft dough, and plethora of toppings.  It’s one of those meals you crave because you probably only have it 1-2 times each year and it’s most likely when you’re traveling to a city known for deep-dish pizza…  Well, you’re in luck!  I want to share my recipe for Homemade Cast-Iron Deep-Dish Pizza with you. The recipe can be found here. The dough is Chicago-style, meaning it not only covers the bottom of the pan but also stretches up the sides of the pan.  The dough isn’t overly complicated to make, but does need time to proof and rise, so plan for additional time.  It’ll be worth it!  The crust is layered with cheese and other toppings first – the sauce goes in last.  This is very important because it helps the crust say crispy and … Continue reading

Halloween is fast approaching – are you ready? We sure are. Halloween is a month-long celebration at our house. We decorate early, spend 31 days gorging on candy, watch every Halloween movie possible, and make some fun themed treats to enjoy. I want to share with you some of my new Halloween recipes and ideas for this year. Each is fairly customizable and will be sure to put your friends and family in a mood to celebrate. My first Halloween idea is for a Char-Spookery board. This is a traditional charcuterie board but with a spooky flair. To be called a charcuterie board, it must contain meat. Otherwise, it’s just a plain old board. What I like about charcuterie boards is how easy they are to put together and how customizable they are. Choose 2-3 meats, 3-4 cheeses, some fruit, nuts, olives, and maybe a few pieces of chocolate, and … Continue reading

When I think of crisp and refreshing, I think of caprese salad.  It has juicy, ripe tomatoes, slices of soft mozzarella, and is finished with incredibly fresh basil leaves.  If you add some French bread and a smear of pesto and can turn a lovely caprese salad into a tasty pizza.  It’s bursting with flavor and is to toasted to perfection. The recipe can be found here. Start by preheating the oven to 350 degrees F. Slice the French bread in half, horizontally.  If the bread is too long to fit on a baking sheet, slice the bread in half so it will fit.  Make sure you look for soft Italian bread or French bread.  You don’t want to use a hearty baguette or anything that will be too hard and crusty after baking. I like to use store-bought basil pesto, but you can make homemade pesto if you have … Continue reading

The Minnesota State Fair is in full swing.  Do you plan on going?  I know a lot of people that plan on attending the fair and a lot of people that don’t, for various reasons.  I sure love the fair and missed not being able to attend last year.  Unfortunately, this year, it’s also not in the cards for me.  However, that doesn’t mean I can’t enjoy some delicious fair food at home, and you can do the same! First off, I want to share with you a link to a blog I wrote last year.  The blog is called Your Favorite MN State Fair Food…at Home, because that’s what the blog is about – creating and enjoying all the classic state fair foods in the comfort of your own home.  I wrote this blog because the fair was cancelled last year and wanted to give everyone the option of … Continue reading

BBQ Chicken Pizza Rolls are a spin on a classic pizza roll recipe.  Imagine a pizza but replace the traditional ingredients like pepperoni and sausage and with BBQ sauce and chicken.  Then imagine that same pizza in a bite sized form.  That is basically what a pizza roll is; all your favorite ingredients rolled up and nestled in fluffy dough. The BBQ sauce replaces the marinara sauce in this dish and add the perfect amount of zest to each bite.  It pairs perfectly with the tender chicken, crisp bacon, and melted cheese. The recipe can be found here. Start by removing the pizza dough from the tube.  Place it in a well-oiled bowl and cover with plastic wrap.  You want the dough to come to room temperature and then rise for about 1 hour.  This makes the dough easier to work with, similar to homemade dough.  And since I’m on … Continue reading

Two of my favorite things to eat are breakfast foods and pizza.  There is nothing like a good brunch with plenty of options to choose from but there is also something so satisfying about leftover pizza for breakfast.  So really, pizza is a breakfast food 🙂 Today I want to share with you my recipe for a super simple Breakfast Pizza.  We actually ate this for dinner one night (breakfast for dinner = brinner at our house) and it was the perfect meal, but you could easily whip this up on the weekend for breakfast.  It’s a quick recipe that is ready in under 30 minutes and tastes incredible.  The recipe is also customizable.  We had cheese, bacon, and egg pizza but you could substitute the bacon with sausage, add some diced onions or bell peppers, etc. The recipe can be found here. Start by cooking the bacon to package … Continue reading

Pizza is always on my mind.  I could eat it for every meal of the day, and sometime do.  I have no shame (wink).  I also love tacos but eat them far less frequently.  One night we were deciding what to have for dinner and couldn’t decide between the two, and quite honestly, I can’t blame us.  Both are simple to make, offer a variety of flavor options, and can come together in no time.  Our compromise was to make a Taco Pizza and have the best of both worlds.  The end result was quite tasty!  I mean, as Homer Simpson always says, “Mmmmm…. Pizza”. The recipe can be found here. Start by preheating the oven to 375 degrees F.  Spray a baking sheet with cooking spray. Unroll 2 tubes of crescent rolls and lay them on the baking sheet, slightly overlapping each other to make them fit.  Pinch the … Continue reading
