Ciabatta Melts with Chicken, Bacon & Pepper Jack are delicious sandwiches that are easy to make and are sure to be a hit! It’s a classic sandwich you could get at your local bistro or café style restaurant, and I thought, why not try making it at home? It has warm, crusty ciabatta bread that is filled with juicy chicken, crispy bacon, spicy, melted cheese, and tender veggies. The sandwich tastes light and won’t leave you feeling too full. Balsamic & Guinness Chicken Wings

Balsamic & Guinness Chicken Wings are a unique yet delicious appetizer or dinner option. They have quite the pleasant flavor…it’s a little tangy and sweet. I think Guinness is mildly sweet with a hoppy/bitter flavor and notes of coffee, almost tastes like roasted almonds. Balsamic is rich in flavor with a mellow tartness and some acidity, kind of herby. But both complement each other nicely. The recipe can be found here. Start by preheating the oven to 350 degrees F and line a baking sheet with parchment paper. Line the chicken wings on the baking sheet, leaving a little space in between. Drizzle with olive oil and sprinkle with salt and pepper. Chicken Balti

I was gifted a Cast Iron Balti Dish and immediately started researching recipes and the type of cuisine to prepare in it. I learned A LOT! Balti is a cooking method traced back to Southern Asia and is named for the dish in which it is made. It’s similar to Indian curries and contains meat, vegetables, and spices. The main difference is how the dish is served but the ingredients used are cooked the same way. Balti dishes are stir-fried with vegetable oil over high heat in a flat-bottomed wok. Creamy Cajun Chicken Pasta is my newest weeknight recipe that your family will love! It’s a filling and delicious pasta that comes together in about 30 minutes. It’s rich, creamy, a little spicy, and packed with wonderful ingredients. I will admit…when I was originally working on this recipe it was going to be soup, not pasta, but plans changed, and soup just wasn’t in the cards that night. I blame the noodles for absorbing so much of the liquid that would have been yummy soup, but the recipe still turned into something great, and we had a lovely pasta dinner. Taco ‘bout a good time!

Cinco de Mayo is coming soon – it’s Friday, May 5th. Cinco de Mayo quite literally means the 5th of May in Spanish so it’s easy to keep track of the date If you aren’t familiar, here are 3 fun facts about Cinco de Mayo, 1) it’s not Mexico’s Independence Day, 2) it’s not a national holiday in Mexico, 3) it celebrates Mexico’s victory against Imperial France. As you can see, it’s a relatively minor holiday that is celebrated regionally in Mexico….and pretty much everywhere in the United States. In Puebla, Mexico it is celebrated with parades, parties, music, folk dancing, and traditional foods. In the United States, it’s celebrated with Mexican food. Are you sensing a theme to my blog post? Slow Cooker Chicken Philly Cheesesteak

Slow Cooker Chicken Philly Cheesesteak Sandwiches are loaded with tender chicken, bell peppers, and onions, piled high on a hoagie roll and covered in melted cheese. It’s a tasty meal that’s easy to make! I think it’s perfect on a cold winter night or on a busy weekend because your slow cooker is doing most of the work. The recipe can be found here. Start by placing the chicken in a slow cooker. I recommend using boneless skinless chicken breasts but if you prefer to use chicken thighs, make sure to trim some of the fat off first. Sprinkle with salt, pepper, garlic powder, and paprika. Season to taste. I tend to add more garlic powder because we love the flavor. Pour the chicken broth over the top and cover. Chicken Bacon Ranch Meatloaf

Meatloaf is a wonderful comfort food and if you’re from the Midwest…it’s a bit of a staple. It’s one of those meals you either love or hate. If you hate it, you probably ate it too much as a kid but I think you should give it one more chance and try my Chicken Bacon Ranch Meatloaf. I’m a chicken-bacon-ranch fan and consider myself to be somewhat of a CBR (chicken-bacon-ranch) connoisseur. If it’s available at a restaurant in some capacity, chances are I’ll order it. Asian Cuisine: Ground Chicken Meals

Every so often I’m looking for a simple weeknight meal that is filling, flavorful, and doesn’t require a lot of effort or groceries. One thing we both like is Asian cuisine and the wonderful variety of flavors and sauces (some homemade and some store-bought) you can use to create meals and elevate your recipes. A favorite in our house is to prepare ground meat and serve it over a bed of rice. It’s simple, you can change up the flavors for each recipe, so you aren’t eating the same thing over and over, and we often already have all the ingredients on hand, so the recipes are easy to whip up.
