Chicken Bacon Ranch Kabobs are a simple 5 ingredient meal the whole family will love!  They are very flavorful and a combination most people are already familiar with.  Try them for a quick weeknight meal or serve at a summer BBQ.  The kabobs are packed with crispy bacon, tender chicken, and are marinated in a homemade ranch dressing. The recipe can be found here. Start by adding the wooden skewers to a drinking glass filled with water to soak before grilling.  This will prevent the wood from catching fire on the grill.  Set aside until ready to use.  I like to marinate mine for at least a few hours.  Alternately, you can use metal skewers and skip the soaking process.  My preference is to use 6” skewers but 10” skewers also work, you just won’t have as many skewers. Summer is coming to an end, kids are starting school, cooler weather is on the way, and you are probably stuck with the never-ending questions about snack time at home 😊 I’ve always been a big fan of keeping “chow” on hand for an easy snack you can grab on the go but also a snack that will last a few days.  Chow is known by a few different names and it’s something I’m sure you’ve tried before.  I like to play around with different flavor combinations and create unique ways to change the recipe, so we don’t get sick of the same old thing week after week. Any garlic lovers out there?  When a recipe calls for garlic cloves, I tend to double to triple the number of cloves used because we love the fragrance and flavor in our house 🙂 Recently, I tried roasting an entire head of garlic that was ultimately combined with butter and other seasonings to spread on warm baguette as a side dish for our meal.  It was phenomenal! The recipe can be found here. Start by preheating the oven to 400 degrees F. Cut the ends off the garlic heads but keep the head of garlic intact.  Does that make sense?  You don’t want the garlic cloves to fall apart, just expose the tops. Chicken Pesto Naan Flatbread is a quick and easy meal that comes together with minimal effort and few ingredients.  It’s filling, flavorful, and done in about 20 minutes.  This recipe is great for spring or summer and can be made in the oven or on the grill. The recipe can be found here. Start by preheating the oven to 350 degrees F.  Line a baking sheet with parchment paper. Place the flatbreads on the baking sheet. Top each with ¼ cup of pesto and spread evenly over the top.  Add more or less to taste.  We like pesto at our house, so I tend to go a little pesto crazy 🙂 Add ½ cup of mozzarella cheese to each flatbread. Creamy Tomato Gnocchi with Burrata is the ultimate weeknight meal!  It’s quick and easy to make, uses simple yet fresh ingredients, and highlights some popular summer flavors.  Think fresh tomatoes and basil (possibly from your garden), creamy burrata, and soft gnocchi.  It’s a game changer! Bring a large pot of water to a boil and cook the gnocchi according to package instructions.  Reserve ½ cup of the pasta water and drain the rest of the water.  Set the gnocchi aside.  You can prepare homemade gnocchi if you prefer but store-bought works well for this recipe. Heat oil in a large skillet over low heat.  Add the garlic and cook until fragrant, about 60 seconds. Do you remember those yummy ice cream pizzas you probably had as a child at Dairy Queen?  They came in multiple favors and were typically served at a party.  They were my FAVORITE!  And there was a time in my life that I believe they were discontinued, and I was admittedly bummed to never have one again.  However, I was able to find a way to recreate them as copycat versions of the original. Meatless 7-Layer Tostadas are a spin on the traditional 7-layer dip you’ve probably had at a party or 2 in the past.  Instead of serving the 7-layers in dip form, you assemble the layers on crispy tostadas and serve as the main course.  They have delicious flavor, great texture, and can be customized for various tastes. I like to use refried beans, guacamole, seasoned sour cream, shredded cheese, tomatoes, green onion, and black olives.  I will admit, all my ingredients are store-bought.  You can prepare homemade refried beans and guacamole if you prefer.  I like the simplicity and efficiency of store-bought from time to time 🙂 Start by preparing the ingredients.  Chop the tomato, slice the green onion, and black olives. Trash Can Nachos are a fun way to prepare and serve nachos.  The nachos are stacked in a cylinder-shaped metal container and baked until all ingredients are heated through or melted.  They are then inverted onto a serving platter and served in a stack.  Trash Can Nachos are easy to make, customizable, and delicious.  They were originally made famous by Guy Fieri and the Food Network. The recipe I want to share with you today is for Trash Can Chicken Nachos.  I will admit this recipe was trial and error for me.  I wasn’t sure how the nachos would bake, if they would hold their shape when removed from the can, etc.  And I didn’t really have a recipe to follow.  I simply used our favorite nacho toppings and hoped for the best!  The result was pretty amazing. Something I love to do from time to time is making homemade bread.  I don’t do it often because it can be time consuming, but nothing beats the taste of a hot, fresh loaf of bread right out of the oven.  I recently purchased the KitchenAid Bread Bowl with Baking Lid which makes creating artisan bread at home quite simple!  It’s essentially one bowl that goes from mixing to rising to baking.  First, I’ll walk through hot to make the homemade bread then I’ll walk you through my favorite recipe to use with the bread. Honey Dijon Grilled Chicken Sandwiches should be on your menu this week!  It’s sweet from honey, tangy from mustard, salty from bacon, and a little earthy / nutty from cheese.  Pair it with some juicy, tender chicken and sandwich it between a pretzel bun or brioche bun and you have the perfect meal.  It’s simple to make, is packed with flavor, and will please everyone at the dinner table. Start by making the sauce.  Add the olive oil, apple cider vinegar, honey, Dijon mustard, and salt to a mixing bowl.  Whisk to combine.  Taste and adjust the seasoning, if needed, and set aside.
