Breakfast Enchiladas are a great way to start your day!  Enchiladas are tortillas that are filled with various ingredients, rolled up, covered with sauce, and baked to perfection.  For my Breakfast Enchiladas, I’m swapping a typical enchilada sauce for whisked eggs, and filling the inside with cheese and diced ham. These Breakfast Enchiladas can be customized to meet your taste preferences.  I used diced ham, but you could use bacon or sausage.  I used white onion, but you could substitute with bell peppers, mushrooms, spinach, etc.  Really make these your own and use the recipe below as a guide for quantities! Two of my favorite things to eat are breakfast foods and pizza.  There is nothing like a good brunch with plenty of options to choose from but there is also something so satisfying about leftover pizza for breakfast.  So really, pizza is a breakfast food 🙂 Today I want to share with you my recipe for a super simple Breakfast Pizza.  We actually ate this for dinner one night (breakfast for dinner = brinner at our house) and it was the perfect meal, but you could easily whip this up on the weekend for breakfast.  It’s a quick recipe that is ready in under 30 minutes and tastes incredible.  The recipe is also customizable.  We had cheese, bacon, and egg pizza but you could substitute the bacon with sausage, add some diced onions or bell peppers, etc. The recipe can be found here. St Patrick’s Day is fun day to celebrate, whether you are Irish or not.  You can typically find a parade or two around town, Irish themed food and drinks at your favorite restaurant or bar, and plenty of people wearing green!  It’s a festive day to celebrate and will unfortunately look a lot different this year due to COVID.  BUT…that doesn’t mean you can’t still celebrate at home! We are going to celebrate by having breakfast for dinner.  You don’t tend to hear of too many Irish breakfast foods but we’re going to make it work!  The food doesn’t have to be Irish necessarily but can be themed to fit the event.  In this case, we’re going to make Shamrock Cinnamon Rolls and Shamrock Fried Eggs.  So instead of being traditional Irish food, we are shaping the food and adding some green elements to fit with the typical colors of … Continue reading

Just when you thought breakfast couldn’t get any better, along comes Pancake Breakfast Tacos! All your favorite breakfast foods are combined in a pancake shell to create these breakfast tacos; piled high with scrambled eggs, bacon, sausage, etc.  Super yummy and easy to make, so start your morning right with Pancake Breakfast Tacos! The recipe can be found here. Start by making the pancake mixture according to package instructions.  Heat a flat-bottomed skillet or griddle.  Once hot, add the pancake batter and cook the pancakes according to package instructions.  I made 6 large pancakes but make however many batches necessary to feed your family or guests. Today is National Waffle Day and what better way to celebrate than with some yummy waffles!  Traditional waffles are best when smothered in syrup or topped with fried chicken or fruit.  I bet really anything would be delicious when paired with a waffle 🙂 but I thought it would be fun to try something different.  I’m making Cinnamon Roll Waffles and Hash Brown Waffles to enjoy while observing this fine holiday! Cinnamon Roll Waffles are exactly what you think – waffles made from cinnamon rolls.  These are SUPER easy to make and take about the same amount of time as a traditional waffle when using a waffle iron.  Still undecided?  You don’t need to make any batter because you are using refrigerated, store-bought cinnamon rolls. It’s the time of year for all the pumpkin flavored lattes, pancakes, cookies, pasta, etc. starts popping up.  If you can eat it, I’m sure someone has tried adding pumpkin flavoring to it!  It’s a craze that I’m more than happy to participate in 🙂 But, another fall favorite I don’t think gets enough credit is apple cider. I thought it would be fun to do a taste test of pumpkin vs apple cider with breakfast foods to see which the fan favorite is.  I made the same two items with both flavors. Christmas is my favorite holiday to host.  I think it’s due to my love of Christmas lights and decorations, so our house is always over the top!  Plus, there are so many festive serveware options available that you can change up your table display as often as you like.  (New Christmas plates…hint hint, Andrew 😊) Sometimes I like to go all out with appetizers and the main course but there isn’t anything wrong with keeping it simple if you prefer.  I truly enjoy cooking for others and putting on a big spread but also want to enjoy the holiday with family and friends.  So, I decided to keep my menu simple this year.  I’ll be serving a few appetizers with some of the drinks from my Christmas Cocktails blog post.
