Any recipe that is “no bake” is pretty amazing.  The recipes are typically simple to make and often don’t take a lot of time (just plan ahead so the pie has time to chill).  My favorite “no bake” recipes are for dessert.  You can make some delicious bars, pies, etc. without ever turning on your oven.  So, if you aren’t a baker or don’t have a lot of experience baking, these pies are for you! Cheesecake is one of my favorite desserts.  It comes in a variety of flavors, can be fruity or sweet, and is usually a crowd pleaser.  Mini cheesecakes are fun for a party or holiday because you can make a few different varieties, or perhaps make one plain batch but let your guests add their own toppings and have a simple yet delicious dessert. One of the recipes I want to share with you today is for Mini Salted Caramel Cheesecakes.  If you like cheesecake and caramel, these are for you!  The crust is a homemade graham cracker crust.  The cheesecake has a creamy texture, sweet taste that might be considered a little rich to some, with a slight tanginess, which comes from the cream cheese.  The mini cheesecakes are then doused in a generous amount of caramel sauce and sprinkled with salt.  SO GOOD! Spring will be over before you know it and as we get into the summer months, you might be looking for something fun for the kids to do over summer break.  Why not make a fresh batch of cookies?  (And then send them outside to recover from the sugar rush) 😊 There is nothing like fresh baked cookies, right out of the oven.  I always have to sample one off the baking sheet (for quality control purpose) before they are even cooled enough to transfer to a cooling rack.  Am I a monster?  Yes.  But so are the 1st cookies I want to share with you today 😊 Monster Cookies are giant in size and truly the best!  They are loaded with peanut butter, oats, butterscotch chips, chocolate chips, and M&M’s, so you are essentially combining aspects of your favorite cookie into one super-sized cookie.  They are thick, chewy, and a crowd pleaser! One of my favorite parts of Easter Brunch is the desserts 😊 Everything is decorated with bunnies, Peeps, little candy eggs, etc. It’s just so cute and festive! I love to explore and create new recipes using all the seasonal candies and that’s what I’m going to share with you today – dessert ideas for your Easter celebration. First up are Birds’ Nests.  I’m sure you’ve seen these before for other holidays, sometimes referred to as Haystacks.  These are super easy to make and only require a few ingredients.  They are sweet, crunchy, and the perfect bite-sized treat!  I have 2 different flavors, Chocolate and Peanut Butter. It doesn’t matter what time of year it is…ice cream is always an acceptable dessert.  Granted, I do tend to enjoy it more frequently during the summer months but every now and then a bowl of ice cream (better yet, homemade ice cream) satisfies my craving during the colder months of the year.  I like to make homemade ice cream.  Sure, store-bought ice cream is wonderful and super convenient but homemade ice cream tastes a bit like soft serve and is creamer in my opinion.  I have 3 recipes to share with you today for homemade ice cream: Birthday Cake Blueberry Butterfinger   The Birthday Cake Ice Cream is BY FAR my favorite ice cream I have ever made.  It tastes like cake batter…the pre-cooked batter you scrape out of the bowl and lick any excess off the spoon…that cake batter.  It’s sweet, creamy and is packed full of sprinkles.  It’s amazing. We are in the midst of apple season in MN has some of the best orchards around!  Prime apple picking is mid-to-late August through late October and makes for a wonderful family tradition!  Our family went to a local apple orchard recently and it was a blast.  We enjoyed some delicious apple treats, took a nice walk through the orchards, picked out a pumpkin to bring home, and just had an all-around good day. Most people have a favorite kind of apple but with so many varieties to choose from, I think it’s hard to pick.  And different kinds work for different recipes, so you have the option to sample different flavors while you cook and try out new recipes. It’s that time of year…. fall…. or pumpkin spice season, as some like to call it.  I did a little research on the fall phenomenon that is pumpkin spice and was quite intrigued by my findings.  Did you know that pumpkin spice earned its name because it was originally used in cakes and pies that contained pumpkin?  I didn’t but McCormick (the seasoning brand) started marketing the spice to save consumers the effort of having to make their own homemade version and could instead buy the spice at their local grocery store.  Pretty cool, huh? The spice mix is generally a blend of ground cinnamon, nutmeg, ginger, cloves, and sometimes allspice.  I admittedly have all these spices in my cabinet but understand that not everyone else does, so I can make homemade pumpkin spice if needed, but something the store-bought version is easier 🙂 I also learned that cravings for … Continue reading

Cake Pops are a fun phenomenon and something I had to try.  When I think of a Cake Pop, I think of cake that is coated in melted chocolate, skewered on a stick, and served as a bite sized treat.  They can be made in most cake flavors and decorated as simple or elaborate as you want.  They are very similar to truffles but are often a little lighter and truffles aren’t served on a stick. I consider myself to be a cookie connoisseur… or a cookie lover of sorts… so I will never turn down the option to sample a new cookie or try a new cookie recipe.  One of my favorite desserts is a warm cookie a la mode.  I could easily skip dinner and go right to dessert if I know this is on my menu, so I thought I would try my hand at making a homemade version.  Something I didn’t need to be at a restaurant to enjoy.  The result is a Cast Iron Chocolate Chip Skillet Cookie. St Patrick’s Day is fun day to celebrate, whether you are Irish or not.  You can typically find a parade or two around town, Irish themed food and drinks at your favorite restaurant or bar, and plenty of people wearing green!  It’s a festive day to celebrate and will unfortunately look a lot different this year due to COVID.  BUT…that doesn’t mean you can’t still celebrate at home! We are going to celebrate by having breakfast for dinner.  You don’t tend to hear of too many Irish breakfast foods but we’re going to make it work!  The food doesn’t have to be Irish necessarily but can be themed to fit the event.  In this case, we’re going to make Shamrock Cinnamon Rolls and Shamrock Fried Eggs.  So instead of being traditional Irish food, we are shaping the food and adding some green elements to fit with the typical colors of … Continue reading
