Greek Chicken Wings with Lemon & Feta
Greek Chicken Wings with Lemon & Feta are the perfect combination for a light weeknight meal. These crispy chicken wings have a wonderful lemony flavor and are inspired by Greek/Mediterranean cuisine. They do need to be marinated so plan for timing, but you won’t regret your decision. It’s a delicious recipe that can be enjoyed as an entrée, appetizer, or side dish. The recipe can be found here. Start by marinating the wings. Whisk together the lemon zest, lemon juice, crushed garlic, olive oil, salt, pepper, and oregano in a large bowl. Add the wings to a large Ziplock bag and pour the sauce over the top. Seal the bag and toss to coat. Place in the fridge for at least 2 hours or up to 12 hours if you want to prepare these waaaaaay ahead of time 😊 Preheat the oven to 375 degrees F and line 2 baking sheets with parchment paper. Remove the wings from the marinate (use … Continue reading

Baked Feta Mashed Potatoes
Baking with blocks of feta cheese recently became all the rage on TikTok. I admittedly tried the Baked Feta Pasta recipe from a TikTok post, and it was phenomenal! This blog, however, isn’t about pasta. It’s about mashed potatoes. Baked Feta Mashed Potatoes to be specific. They are just as easy and effortless to make as the baked pasta and have a wonderfully creamy texture with a hint of tang from the feta cheese. It’s the perfect recipe for a weeknight side dish (with leftovers to spare), to serve at a holiday dinner, or perhaps bring to a potluck. It’s a foolproof recipe I’m sure you’ll love! The recipe can be found here. Start by preheating the oven to 400 degrees F and spray a 9×13 baking dish with cooking spray. Next, wash, peel, and chop the potatoes, chop the chives, and slice the butter. Add the potatoes to the baking dish and pour the half & half … Continue reading

Summer Salads
Summer is fast approaching and one thing I look forward to eating more of is salads. There is something about a big bowl of leafy greens with all the fixings that screams summer. It’s a healthy meal and is light and refreshing on a hot day. You also don’t often feel like you overate with a salad, and you can customize the ingredients to match your tastes. I want to share 4 of my favorite salad recipes with you: BLT Chicken Chopped Salad Grilled Chicken Arugula Salad with Strawberries & Feta Doritos Taco Salad Spinach Salad with Fruit & Maple Dressing All are simple to make, delicious, and large enough to feed a family of 4. If you leave the dressing off, you can portion out the ingredients to have lunches prepared for the week or dinner a couple night during the week (just add the dressing when you are ready to serve). … Continue reading

Baked Feta & Vegetable Pasta
Not too long ago, I hopped on the TikTok trend where you bake a block of feta cheese with cherry tomatoes and when done, toss it with cooked noodles for a light and refreshing pasta. It was a HUGE hit in our house so I figured I would try it again but with a few changes. The original recipe is for Baked Feta and Tomato Pasta but the recipe I’m going to share with you today is for Baked Feta and Vegetable Pasta. The recipe can be found here. Start by preheating the oven to 400 degrees F. Line a baking sheet with parchment paper. Place the feat in the center of the baking sheet. This recipe calls for a block of feta but if it’s OK to use crumbled if that’s the only available option at the grocery store. Just pile it high and try to keep it as … Continue reading

Baked Feta and Tomato Pasta
I can’t say that I’m super “with it” and on top of today’s trends but did come across a recent TikTok trend where people are baking an entire brick of feta cheese and turning it into pasta. We tried it at home and not only is it a simple dish to prepare but it’s also delicious! The result is Baked Feta and Tomato Pasta. The recipe can be found here. Start by preheating the oven to 400 degrees F. Add your tomatoes to a 9×13 baking dish. Either cherry or grape tomatoes are fine but make sure you have 2 pints. Then, liberally drizzle with olive oil and sprinkle with salt and pepper. Stir until the tomatoes are fully coated. Shift the tomatoes there is a large well in the center. Place the brick of feta in the center. If you can’t find a brick of feta that’s ok. You can use crumbled feta but make sure to put it … Continue reading

Mediterranean Munchies
With the cold weather approaching, I thought it would be fun to make a Mediterranean based meal, and imagine I’m in warmer weather, perhaps sitting on a beach somewhere 🙂 I made Chicken Gyros with Tzatziki Sauce for the main course and served Mediterranean Layered Hummus on the side. Both are easy to make, flavorful, and healthy! Chicken Gyros with Tzatziki Sauce are filled with spiced chicken, fresh veggies, and a tangy homemade sauce, and are served on warm pita bread. The tangy homemade sauce is Tzatziki Sauce, which is a Greek yogurt-based sauce with cucumber and fresh herbs added. These gyros are incredibly tasty! Start by preheating the oven. While the oven preheats, prep the chicken. Place the chicken in a small baking dish and drizzle with olive oil. Use your hands to rub the olive oil over both sides of the chicken. Then sprinkle fresh minced garlic, paprika, … Continue reading
