Burrata, Prosciutto, and Arugula Flatbread with Fig Jam is a wonderful recipe for any time of year. It’s light, flavorful, and packed with fresh ingredients. It’s so damn delicious! The burrata is rich and creamy, and one ball is the perfect amount for the flatbread. The prosciutto is nice and salty and adds a nice texture to each bite. The arugula is a nice pizza topping because it adds fresh flavor and a bit of crunch to each bite. Walnut, Pear & Gouda Naan Flatbread
My new favorite obsession (aka quick and easy weeknight meal) is Naan Flatbread. You can create so many different variations by swapping out toppings and utilizing premade / store-bought naan flatbread. My most recent creation is Walnut, Pear & Gouda Naan Flatbread. It’s perfect for pizza night, to serve as an appetizer, or to serve alongside a salad or pasta dish. Think fresh, juicy pears on top of warm, chewy flatbread with spicy arugula, walnuts, and a savory balsamic glaze. It’s yummy! The recipe can be found here. Bruschetta is a staple of summer meals. I know it’s fall, and the days are getting colder, the sun is setting earlier, and you are probably thinking of warm, hearty meals…not fresh, summer sides. BUT…bruschetta can be enjoyed in many ways. Including being used as a pizza topping. If you have a vegetable garden in your backyard or perhaps like to visit your local Farmer’s Market, you can make bruschetta with some wonderfully fresh produce. This time of year, you most likely have to purchase the ingredients at your local grocery store. And that’s OK! You’ll still have incredibly flavorful and fresh bruschetta to enjoy. If you are looking for a quick and easy weeknight meal, I have the perfect recipe – BLT Naan Flatbread. It’s all the flavors of your favorite BLT sandwich but in flatbread form. Think soft and chewy naan flatbread in lieu of toasted bread, crispy bacon, crunchy lettuce, juicy tomatoes, and melted cheese. The mayonnaise is whisked into a lovely sauce to drizzle over the top. A previous blog of mine for White BBQ Sauce Grilled Chicken discusses a wonderful condiment – White BBQ Sauce. Another recipe I created using the same BBQ sauce is for a White BBQ Sauce Grilled Chicken Flatbread. It’s absolutely divine! The White BBQ Sauce is tangy, zesty, and pairs well with grilled meat…or in this case, acts as a great pizza sauce 🙂 This flatbread recipe is simple to make and can be customized to any taste. I like to use chicken, cheese, red onion, and green onion. You can omit or add any items. Try adding mushrooms or green pepper, chopped bacon, you name it! Gruyere & Onion Flatbread is a wonderful recipe for a quick weeknight meal. It’s light and will leave you feeling satisfied without being overly full, and it has great flavor! It’s a little salty but has this rich and nutty flavor from the gruyere cheese and a hint of tang from the red onion. The Lavash flatbread makes the perfect pizza crust. If you aren’t familiar with Lavash, it’s a flatbread that is low in sodium, low in cholesterol, and is very thin (less doughy). Pesto & Tomato Flatbread is a yummy recipe when you are in need of a quick meal. It’s light and will leave you feeling satisfied without being overly full, and it has great flavor! The Lavash bread is crispy, the pesto has a lovely, fresh taste, the mozzarella cheese is melted and pairs well with the pesto, and the tomatoes are tender and roasted. It’s delicious! Plus, if you’re anything like me, you probably have most of the ingredients at home already so it’s easy to whip up in a bind or when you don’t have other dinner ideas 😊 I like to use store-bought pesto for the convenience, but you can use homemade if you prefer.
