Rosemary, Garlic & Bacon Chicken Burgers

Rosemary, Garlic & Bacon Chicken Burgers are packed with flavor yet light and almost more satisfying than a beef burger. You use this lovely rosemary and garlic mayo as a spread on the bun and inside the burger making it extra moist and juicy. I like to top the burgers with arugula, but you could substitute lettuce. I like the peppery, crunchy texture of arugula and this it pairs well with the flavors of the chicken burger. The recipe can be found here. Start by cooking the bacon according to package instructions. Transfer to a paper towel lined plate to drain the excess grease and set aside. Pimento BLT Sandwich

A Pimento BLT Sandwich is not your ordinary, run of the mill sandwich. It’s an elevated BLT because of the Pimento Cheese spread. If you aren’t familiar with Pimento Cheese, it’s a creamy, cheese, and tangy spread that is often referred to as the pâté of the South. It’s made with cream cheese, cheddar cheese, pimento peppers (which are sweet and mild), and mayonnaise. You can adjust the spicy by adding cayenne pepper and other seasonings. It’s best when homemade but you can usually find a jarred variety at your local grocery store. It goes well with crackers, vegetables, or spread on a sandwich, which is what we are doing today. Pizza Grilled Cheese

Pizza Grilled Cheese combines 2 of my favorite things…pizza and grilled cheese. It’s the ultimate mash-up meal! And it’s something the kids will absolutely love! Think mounds of melted cheese and spicy pepperoni sandwiched between 2 slices of buttery, garlicky bread. Dip it in your favorite marinara sauce before each bite and you will be in heaven. The sandwiches are somewhat customizable too. Use turkey pepperoni vs traditional pork/beef pepperoni, add crumbled sausage, etc.…you get the picture, so each family member can easily create their own yummy sandwich. Cajun Chicken Sloppy Joe’s

Cajun Chicken Sloppy Joe’s is a wonderful weeknight meal! It’s easy to make, is done in less than 30 minutes, and is packed full of flavor. The Cajun seasoning really bring this dish together and is a wonderful spice. You can find it at your local Festival Foods or make a homemade version. It pairs well with so many dishes – pasta, shrimp, steak, chicken, etc. and has a bit of a kick. The bold, spicy flavor comes from the cayenne and the earthiness you tastes is from the herbs. The bread is toasted to perfection, the jalapenos add the right amount of heat, the bacon is crisp and adds a hint of salt, and the combination of cheeses oozing out of the sandwich in each bite make it just perfect. Apple Harvest

We are in the midst of apple season in MN has some of the best orchards around! Prime apple picking is mid-to-late August through late October and makes for a wonderful family tradition! Our family went to a local apple orchard recently and it was a blast. We enjoyed some delicious apple treats, took a nice walk through the orchards, picked out a pumpkin to bring home, and just had an all-around good day. Most people have a favorite kind of apple but with so many varieties to choose from, I think it’s hard to pick. And different kinds work for different recipes, so you have the option to sample different flavors while you cook and try out new recipes. Baguette sandwiches are my new favorite thing! There is something about a baguette that makes you feel like you are in a French café, sipping cappuccino, and enjoying local fare. They are crisp on the outside and soft on the inside and make for a great sandwich. Prosciutto & Arugula Baguette Sandwiches make the perfect meal. The prosciutto is salty, the cheese is sharp, and the arugula adds some fresh flavor. Pair it with some mustard or mayonnaise and jam, and you are set! The recipe can be found here. Chicken. Bacon. Ranch. Three things that pair amazingly well together. Combine them in sandwich form and you have one mighty fine meal. Think tender chicken, creamy ranch (which really goes with just about anything), and crispy bacon smothered between a bun with some melted cheese for good measure. This is what dreams are made of.
