Cajun Chicken Sloppy Joe’s is a wonderful weeknight meal!  It’s easy to make, is done in less than 30 minutes, and is packed full of flavor. The Cajun seasoning really bring this dish together and is a wonderful spice.  You can find it at your local Festival Foods or make a homemade version.  It pairs well with so many dishes – pasta, shrimp, steak, chicken, etc. and has a bit of a kick.  The bold, spicy flavor comes from the cayenne and the earthiness you tastes is from the herbs.  Pair the Cajun seasoning with some ground chicken, corn, onions, and melted cheese, and you have a delicious sandwich. If you’re a jalapeno popper fan, I have a wonderful recipe for you!  It’s a Jalapeno Popper Grilled Cheese sandwich…and it’s incredible!  The bread is toasted to perfection, the jalapenos add the right amount of heat, the bacon is crisp and adds a hint of salt, and the combination of cheeses oozing out of the sandwich in each bite make it just perfect. We are in the midst of apple season in MN has some of the best orchards around!  Prime apple picking is mid-to-late August through late October and makes for a wonderful family tradition!  Our family went to a local apple orchard recently and it was a blast.  We enjoyed some delicious apple treats, took a nice walk through the orchards, picked out a pumpkin to bring home, and just had an all-around good day. Most people have a favorite kind of apple but with so many varieties to choose from, I think it’s hard to pick.  And different kinds work for different recipes, so you have the option to sample different flavors while you cook and try out new recipes. Baguette sandwiches are my new favorite thing!  There is something about a baguette that makes you feel like you are in a French café, sipping cappuccino, and enjoying local fare.  They are crisp on the outside and soft on the inside and make for a great sandwich.   Prosciutto & Arugula Baguette Sandwiches make the perfect meal.  The prosciutto is salty, the cheese is sharp, and the arugula adds some fresh flavor.  Pair it with some mustard or mayonnaise and jam, and you are set! Chicken.  Bacon.  Ranch.  Three things that pair amazingly well together.  Combine them in sandwich form and you have one mighty fine meal.  Think tender chicken, creamy ranch (which really goes with just about anything), and crispy bacon smothered between a bun with some melted cheese for good measure.  This is what dreams are made of.  I may be getting ahead of myself, but I do sure enjoy a good Chicken Bacon Ranch Sandwich! Your favorite Chicken Parmesan dish is now available in sandwich form with Chicken Parmesan Sloppy Joe’s.  These Sloppy Joe’s are a delectable mixture of chicken, tomato sauce, mozzarella cheese, and breadcrumbs.  It’s a very family / kid friendly meal and tastes amazing!  Plus, it’s ready in under 30 minutes. Start by adding the breadcrumbs to a small skillet.  Heat over medium heat until lightly toasted.  Stir occasionally so they don’t burn!  Remove the breadcrumbs to a plate or bowl to cool and set aside.  Do not leave them in the skillet at they will continue to toast in the hot pan! Step up your Sloppy Joe game with Chicken Bacon Ranch Sloppy Joe’s!  Ready in under 30 minutes, these Sloppy Joe’s are a yummy mixture of chicken, bacon, mozzarella cheese, cheddar cheese, and ranch seasoning all sandwiched between a bun.  If you’ve ever had anything chicken-bacon-ranch flavored before, you know what I’m talking about 😊  This recipe is a win! Who doesn’t love a good sandwich?  I’m always looking for new sandwich recipes, or slider recipes, in this case.  They make for a great tasty little bite, work well as appetizers, or can be packed for a light lunch.  My favorite thing to do is make a 9×13 pan of sandwiches that can be portioned out, wrapped in foil, and grabbed each morning on my way to work. Are you ever hosting a party or having a few guests over for dinner but don’t know what to serve?  I always struggle with what to cook because I want my guests to enjoy the meal but also want time to socialize and not be stuck in the kitchen.  Pulled chicken or pulled pork is always a good option.  You can prepare it in the slow cooker so it’s no fuss, it feeds a crowd, and is great to serve for a build-your-own-sandwich bar.  Or you can make it for yourself to enjoy for meals through the week or to freeze for later. Monte Cristo Sandwiches are my new go to sandwich!  They are served warm, so the cheese is perfectly melted, the bread is toasted, and the meat just seems to be extra tender and juicy.  It’s not quite a panini, because you aren’t pressing the sandwich or grilling it, but instead you are baking it.  I like to use French Toast as the bread as well.  It adds a little extra something to each bite!
