Monte Cristo Sandwiches are my new go to sandwich!  They are served warm, so the cheese is perfectly melted, the bread is toasted, and the meat just seems to be extra tender and juicy.  It’s not quite a panini, because you aren’t pressing the sandwich or grilling it, but instead you are baking it.  I like to use French Toast as the bread as well.  It adds a little extra something to each bite! The recipe can be found here. Start by cooking the bacon according to package instructions.  Set aside. Preheat the oven to 300 degrees F and line a baking sheet with parchment paper. Buffalo Chicken is an obsession of mine and seems to be a very popular food item in general.  Most people I talk to have a favorite buffalo chicken dish of some kind.  I don’t know what it is that draws me back but it’s SO juicy and flavorful…. I could eat it every night of the week. Recently, we made Crock Pot Pulled Buffalo Chicken.  I have a long list of why I love this recipe but the gist of it is, it’s juice, spicy, simple to make, and absolutely delicious!  It can be a meal by itself or used in sandwiches, salads, wraps, tacos, dips, on pizza, and more.  We chose to use it in sandwiches.  It’s a crock pot meal and makes a healthy portion so you’ll be able to eat it for a few days or serve to a crowd. Have you ever eaten something and thought “this is the only way I can ever eat this again”?  That happened to me with this sandwich. Don’t get mad, but I have to admit I’m not really a fan of BLT’s.  They are fine sandwiches but there isn’t much to them.  It’s like they are missing something, and I think I found out exactly what’s been missing.  You have to revamp the entire sandwich…. bread and fry the tomatoes, candy the bacon, make a delicious aioli, and eat it all on a pretzel bun. It’s a souped-up BLT…a gourmet BLT if you will…it’s a Fried Tomato Sandwich with Pecan Bacon and Chipotle Aioli.  And, it’s delicious. The recipe can be found here. I had a craving recently for something spicy and cheesy…. something with big flavor that wouldn’t be a dish I’ve had in the past or one of our standard weeknight meals.  Jalapenos were the first thing to cross my mind, so I started getting creative and settled on Jalapeno Popper Dip and Cheesy Jalapeno Turkey Sliders. Jalapeno Popper Dip is very similar to Jalapeno Poppers but in dip form with the jalapenos mixed in.  If you love Jalapeno Poppers, you’re going to love this Jalapeno Popper Dip!  There is plenty of cheese and diced jalapenos in each bite, and the breadcrumbs on top adds a little crunch that brings the whole dip together.  It’s the perfect party appetizer! Sliders are a great way to keep everyone happy whether you’re hosting a football party, entertaining with appetizers, or trying to be creative with school lunches.  They really are a crowd pleaser with so many different flavors!  I recently tried 3 different kinds of sliders and want to share them with you today.  Each is delicious in its own way and something I will definitely make again! Sliders are incredibly easy to make.  You slice the rolls in half, layer the ingredients, place the other half of the rolls on top, brush with a buttery topping, bake, and enjoy! I love a good fried chicken sandwich and want to share my go-to recipe with you.  This Beer Battered Chicken Sandwich with Lime Coleslaw is crispy, juicy, and doesn’t disappoint.  The batter includes beer, giving it a light and crisp texture once fried, plus a slight beer flavor comes through in the crust and who doesn’t love that? I suggest using a brown ale for the best batter flavor but any malty ale or heavier seasonal beer (such as Oktoberfest) will work.  You only use 2 cups of beer so you will have a little extra in the bottle to enjoy while you cook 🙂 The chicken is only fried once and then finished in the oven.  Once an internal temperature of 165 degrees is reached, you could fry the chicken again for a very short amount of time to maximize crunch.  I’ve never done this but if you like … Continue reading

Have you ever heard of Jackfruit?  If not, let me fill you in.  It is a meatless alternative (it’s actually fruit) that closely resembles pulled pork.  It’s great for vegans, vegetarians, or anyone looking for a little variety.  I was skeptical at first but it’s quite good.  I like to buy canned jackfruit because it’s pre-sliced and easy to work with – all you have to do is cook it and shred it! I want to share my recipe for BBQ Pulled Jackfruit Sandwiches.  It’s real deal shredded BBQ, loaded with BBQ flavor, but is a plant-based recipe.  It’s a little sweet and savory but looks and tastes like pulled pork. If you are having a hard time deciding what to make for St Patrick’s Day, I can help!  There are some really great recipes out there whether you are hosting a party or enjoying a quiet meal at home.  I want to share my take on St Patrick’s Day and the menu I plan on serving. I’m sticking with a “green theme” for my menu and serving mostly food that is…green.  The menu is not necessarily traditional Irish food but is fun and festive for the occasion! When was the last time you ate a Sloppy Joe?  It’s not a common meal in my house but there is something about a Sloppy Joe that reminds me of family dinners as a child.  I wanted to create a new version of a Sloppy Joe that combines another favorite food of ours – buffalo chicken.  The result was a Buffalo Chicken Sloppy Joe.  It was amazing! These Buffalo Chicken Sloppy Joe’s have enough heat without being too spicy and veggies hidden within the meat that add great flavor.  I recommend drizzling some ranch or blue cheese dressing on top to offset the heat.  And because who can enjoy buffalo sauce without ranch or blue cheese?  It really completes the sandwich! For many years I thought the word “slider” meant a tiny hamburger, but boy was I wrong!  Sliders are small sandwiches made with slider rolls that come in a variety of flavors, and they are all the rage.  Think meat and cheese melted together in the oven on a crisp roll – yum!
