Are you ever hosting a party or having a few guests over for dinner but don’t know what to serve?  I always struggle with what to cook because I want my guests to enjoy the meal but also want time to socialize and not be stuck in the kitchen.  Pulled chicken or pulled pork is always a good option.  You can prepare it in the slow cooker so it’s no fuss, it feeds a crowd, and is great to serve for a build-your-own-sandwich bar.  Or you can make it for yourself to enjoy for meals through the week or to freeze for later. Normally by mid-December we would have a plan for Christmas Eve dinner, Christmas Day brunch, and Christmas Day dinner…. it’s a busy 2 days to say the least!  But we have zero plans scheduled at the moment.  It’s an odd feeling and we know we are not along.  Do you spend time with family and friends over the holidays or opt for a quiet day at home?  Do you take the simple route and order a meal to go from your favorite restaurant or perhaps a heat-and-serve meal from the grocery store?  Whatever you end up doing, it will be a year to remember! With the low temperatures we’ve had lately I want to hunker down and have a hot meal after work.  Chicken Apple Chili is my new favorite go-to meal!  It’s a bit non-traditional but is very easy to assemble, is light and refreshing, and is the perfect fall meal.  Plus, it comes together in just a few hours (set it and forget it) so you aren’t waiting 4-8 hours like traditional chili. The recipe can be found here. You need a slow cooker for this one-pot recipe.  Add all ingredients to the bowl of the slow cooker, except the apples, and stir together.  Cover and cook on high for 2 hours.  Serve with chopped apples on top.  Easy peasy!   With Super Bowl XLVII in New Orleans we thought a Muffuletta Sandwich might be on your menu. This recipe for Muffuletta sandwich with Olive salad is a hearty sandwich with lots of tradition, our recipe is for individual Mufulletta sandwiches but if you wish you can use a round loaf of bread and make one large sandwich and cut into servings.   One item always on our shopping list at this time of year is Asparagus, we had it for dinner three times last week! Steaming and roasting the asparagus are my favorite methods to cook the Asparagus. Roasting is so simple just wash and trim the Asparagus toss to coat with olive oil and a tiny squeeze of lemon and sprinkle of kosher salt. Lay flat on a baking sheet and bake in a 375 degree oven for 15 minutes. Another simply delicious recipe is Grilled Asparagus Salad with Fried Eggs. Asparagus would be a wonderful side dish to many of our recipes included in our menu for the week.
