Chocolate Peanut Butter Ice Cream Bars are one of my top 10 favorite desserts.  They are essentially cream sandwiches you make on a rimmed baking sheet.  A combination of chocolate and peanut butter makes up the flavors in the cookie with a hint of sea salt sprinkled on top.  The filling is basic vanilla ice cream.  However, you can use any ice cream flavor of your choosing.  Chocolate ice cream would make the perfect chocolate extreme dessert.  Salted Caramel ice cream would pair nicely with the chocolate/peanut butter cookies.  You get the idea!  Make this dessert your own. Scones are a new favorite baked good of mine.  When I was younger, I thought they were hard and dry, and not very tasty, but as I’ve gotten older, I’ve learned to appreciate the texture and flavor.  They are sweet, dense, dry, and crumbly, yet oh so good!  They pair well with a cup of tea or coffee in the morning for breakfast.   I was recently gifted a Mini Scone Pan, and this is the only way I will make scones.  Sure, you can prepare the dough, roll it out, cut it into triangles, and bake it but the pan reduces many of the required steps and is so easy to use.  Plus, you get 16 scones so there is plenty to serve at brunch, to bring to work to share, or to save for leftovers are home.  Click this link for the Mini Scone Pan. Homemade Buster Bar Ice Cream Dessert is one of those desserts you can’t get enough of!  It’s loaded with peanuts, vanilla ice cream, an Oreo crust, and a chocolatey-fudgy topping.  It’s perfect on a hot summer day…or really any day because ice cream isn’t limited to summer enjoyment 😊 It’s a dessert I would recommend for a dinner party or birthday party.  It has something for everyone, is filling, and will feed a crowd. Start by softening the ice cream so it’s easier to work with.  Do this by placing the quart of ice cream on the counter for 15-20 minutes to soften while you prepare the other ingredients. Apple Butter & Prosciutto Naan Flatbread is the perfect fall dinner.  It’s easy to assemble, quick to make, and tastes amazing!  The classic combination of apples and cheese give this recipe a sweet and savory taste, and very unique flavor.  It’s a great way to use up those apples or apple butter you bought during a visit to the orchard this fall 😊 The recipe can be found here. Start by preheating the oven to 350 degrees F and lining a baking sheet with parchment paper. Place the flatbreads on the baking sheet. Top each flatbread with ¼ cup of apple butter.  Add more to taste.  I like to use store-bought apple butter (from either a local apple orchard or grocery store) for convenience.  You can use homemade apple butter if you prefer. If you are looking for a quick and easy weeknight meal, I have the perfect recipe – BLT Naan Flatbread.  It’s all the flavors of your favorite BLT sandwich but in flatbread form.  Think soft and chewy naan flatbread in lieu of toasted bread, crispy bacon, crunchy lettuce, juicy tomatoes, and melted cheese.  The mayonnaise is whisked into a lovely sauce to drizzle over the top.  And it’s all ready in about 20 minutes or less. Start by preparing the bacon according to package instructions.  I like to bake or fry my bacon (kind of depends on the time I have and how much cleanup I want to do).  Remove the bacon to a paper towel lined plate to drain the excess grease and cool.  Once cool, chop into pieces. Every now again we get a craving for some Cajun cuisine.  Something spicy (but not too spicy), hearty, and full of favor.  Chicken wings are an easy fit because they are simple to prepare and make a great meal when paired with a side, like Cajun Rice… We’re clearly getting our Cajun fix with this meal 😊 Cajun Baked Chicken Wings are crispy on the outside and tender on the inside.  They are marinated in a dry rub and baked to perfection before being tossed in a yummy Cajun butter sauce. Cajun Rice is very similar to Dirty Rice (if you are familiar) but without any meat.  Hence the Cajun Baked Chicken Wings being the main course.  The Cajun Rice is perfectly seasoned and spiced and is packed with plenty of onions and peppers.  It’s an elevated rice that the whole family will love. Chicken with Parmesan Garlic Rice is a phenomenal weeknight meal!  It combines pan seared chicken with a cheesy, garlic filled bed of rice.  The chicken is perfectly seasoned and tender, the rice is soft and pillowy with lots of fragrant garlic and parmesan cheese mixed in, and it’s topped with fresh, crisp parsley.  It’s delicious and I hope you give it a try! Start by seasoning the chicken tenders with salt, pepper, and garlic powder on both sides.  I used chicken tenders but feel free to use boneless skinless chicken breasts or chicken thighs, if you prefer. Spooky Season is upon us!  Now that it’s after October 1, we can gear up for Halloween and all things spooky 😊 Halloween is a month-long celebration at my house.  We watch all the classic movies and anything new we can find, gorge ourselves on candy, and decorate with probably too many pumpkins.  But it’s fun and helps us get in the holiday spirit!
