Apple Butter & Prosciutto Naan Flatbread is the perfect fall dinner.  It’s easy to assemble, quick to make, and tastes amazing!  The classic combination of apples and cheese give this recipe a sweet and savory taste, and very unique flavor.  It’s a great way to use up those apples or apple butter you bought during a visit to the orchard this fall 😊 The recipe can be found here. Start by preheating the oven to 350 degrees F and lining a baking sheet with parchment paper. Place the flatbreads on the baking sheet. Top each flatbread with ¼ cup of apple butter.  Add more to taste.  I like to use store-bought apple butter (from either a local apple orchard or grocery store) for convenience.  You can use homemade apple butter if you prefer. If you are looking for a quick and easy weeknight meal, I have the perfect recipe – BLT Naan Flatbread.  It’s all the flavors of your favorite BLT sandwich but in flatbread form.  Think soft and chewy naan flatbread in lieu of toasted bread, crispy bacon, crunchy lettuce, juicy tomatoes, and melted cheese.  The mayonnaise is whisked into a lovely sauce to drizzle over the top.  And it’s all ready in about 20 minutes or less. Every now again we get a craving for some Cajun cuisine.  Something spicy (but not too spicy), hearty, and full of favor.  Chicken wings are an easy fit because they are simple to prepare and make a great meal when paired with a side, like Cajun Rice… We’re clearly getting our Cajun fix with this meal 😊 Cajun Baked Chicken Wings are crispy on the outside and tender on the inside.  They are marinated in a dry rub and baked to perfection before being tossed in a yummy Cajun butter sauce. Chicken with Parmesan Garlic Rice is a phenomenal weeknight meal!  It combines pan seared chicken with a cheesy, garlic filled bed of rice.  The chicken is perfectly seasoned and tender, the rice is soft and pillowy with lots of fragrant garlic and parmesan cheese mixed in, and it’s topped with fresh, crisp parsley.  It’s delicious and I hope you give it a try! Start by seasoning the chicken tenders with salt, pepper, and garlic powder on both sides.  I used chicken tenders but feel free to use boneless skinless chicken breasts or chicken thighs, if you prefer. Spooky Season is upon us!  Now that it’s after October 1, we can gear up for Halloween and all things spooky 😊 Halloween is a month-long celebration at my house.  We watch all the classic movies and anything new we can find, gorge ourselves on candy, and decorate with probably too many pumpkins.  But it’s fun and helps us get in the holiday spirit! If you haven’t checked out the Meat Counter at your local Festival Foods, I highly recommend it!  You can find plenty of standard meat options; beef, chicken, seafood, etc. …things you would expect to see.  BUT you will also find some specialty items you might not be familiar with.  My favorite items to buy are the encrusted chicken breasts.  They come in a variety of flavors; pecan, parmesan, buffalo, and tortilla are the most common.  If you are lucky, you might find a different flavor from time to time.  They are sold individually or pre-packaged as a pack of 2, depending on the store location. Summer is officially over, and fall is officially here!  That means the temperatures are starting to drop, but it isn’t quite cold enough yet, to stop eating ice cream and enjoying some warmer weather treats.  Before you finally put away your ice cream maker for the year, try out these 3 new ice cream recipes I’m going to share with you today. It’s my favorite time of year!  The weather is starting to cool down, the leaves are starting to change, and you can find pumpkin spice at just about any store.  That’s what I’m talking about when I say my favorite time of year…. all things pumpkin spice.  I love the flavor, but I also love that it’s available for a limited time, so it’s something I look forward to enjoying. Hot Dog Grilled Cheese is a wonderful combination of 2 classics – hot dogs and grilled cheese!  Is it an elevated grilled cheese or is it an elevated hot dog?  You tell me!  They are super cheesy, have a crispy toasted bun, and can be made with any type of hotdog (beef, pork, turkey, etc.) …what’s not to love?  I devoured 2 of these on my own and was still thinking about them the next day 😊 So, if you have picky eaters or have an argument about what’s for dinner every night, I highly recommend you give these Hot Dog Grilled Cheese sandwiches a try.  They are sure to please everyone!
