Chicken Fajita Pasta

Chicken Fajita Pasta is a yummy one-pot recipe you will be sure to enjoy! It’s creamy and packed with peppers, onions, and tender chicken in each bite. The main selling point for me on this recipe is that you cook the entire meal in one-pot which means less dishes and easier clean up. The recipe can be found here. Start by slicing the chicken, onion, and bell peppers, and mince the garlic. Heat oil in a large skillet or Dutch oven over medium-high heat. You want the skillet to be large enough to cook all the ingredients so make sure you are using a large enough vessel. Add the chicken and cook for 3-4 minutes. Then, add ½ of the fajita seasoning and stir to coat. Continue to cook for another 3-4 minutes or until the chicken is cooked through. It will absorb the fajita flavor and be perfectly seasoned. Remove the chicken from the pan and set … Continue reading

Cajun Chicken Sloppy Joe’s

Cajun Chicken Sloppy Joe’s is a wonderful weeknight meal! It’s easy to make, is done in less than 30 minutes, and is packed full of flavor. The Cajun seasoning really bring this dish together and is a wonderful spice. You can find it at your local Festival Foods or make a homemade version. It pairs well with so many dishes – pasta, shrimp, steak, chicken, etc. and has a bit of a kick. The bold, spicy flavor comes from the cayenne and the earthiness you tastes is from the herbs. Pair the Cajun seasoning with some ground chicken, corn, onions, and melted cheese, and you have a delicious sandwich. The recipe can be found here. Start by preheating the oven to 250 degrees F. This is so you can melt the cheese and toast the buns before assembly. Heat a large skillet over medium heat. Add the ground chicken and cook to completion, making sure to break … Continue reading

Mediterranean Chicken Bowls

I’ve been a big fan of “bowls” lately. For example, instead of eating a stuffed bell pepper, I would eat the ingredients tossed together in a bowl. Or instead of having an egg roll, the ingredients would be in a bowl….you get the picture. My most recent bowl idea is for a Mediterranean Chicken Bowl. It has a lemon-dill rice, wonderfully seasoned Greek chicken, a fresh cucumber and tomato salad, and yummy tzatziki sauce to bring it all together. The flavors are rich and vibrant, and incredibly fresh. It’s a light and healthy meal the whole family will love! The recipe can be found here. This is really a 4-part recipe. You must prepare the tzatziki sauce, cucumber tomato salad, chicken, and rice. I like to start with the tzatziki sauce and salad because those can be refrigerated while you prepare the chicken and rice. For the tzatziki sauce, combine the shredded cucumber, Greek yogurt, lemon juice, … Continue reading

Tuscan Chicken Alfredo

Tuscan Chicken Alfredo tastes like a restaurant quality meal! You won’t be able to get over how amazing the creamy sauce is and how each bite just the perfect amount of spice to it. This dish is loaded with tender chicken, sun dried tomatoes, and a lovely garlic sauce. Not only does it taste amazing but it’s easy to make. The chicken is marinated before cooking, the sauce whisks together in no time, and the veggies add a little texture to each bite. You might even find yourself licking your plate clean! The recipe can be found here. Start by slicing the chicken. I like to slice the chicken into 1-inch pieces, but you can use strips if you prefer. Place the chicken in a bowl and pour the Roasted Red Pepper Salad Dressing over the top. The chicken should be mostly coated but you can push it down … Continue reading

Chicken Souvlaki

Chicken Souvlaki is a classic Greek dish consisting of marinated grilled meat that is served with vegetables, creamy Tzatziki sauce, and pita bread. It is a low carb, low in fat and very fresh. So, for a very good reason, it’s a popular street food in Greece! Souvlaki means “meat on a skewer”. Pork is the most common type of meat used but chicken, beef, and lamb are other options. The recipe I am going to share with you today uses chicken. It’s packed with flavor and will bring a taste of Greece to your kitchen! The recipe can be found here. This is a 3-part recipe. You must prepare the chicken souvlaki (aka skewers), the yogurt sauce (tzatziki), and tomato cucumber salad. Each has a vibrant, fresh taste. You will feel satisfied without feeling full after this meal. Let’s start with the chicken. Combine the lemon juice, olive oil, … Continue reading

Chicken Bacon Ranch Sandwiches

Chicken. Bacon. Ranch. Three things that pair amazingly well together. Combine them in sandwich form and you have one mighty fine meal. Think tender chicken, creamy ranch (which really goes with just about anything), and crispy bacon smothered between a bun with some melted cheese for good measure. This is what dreams are made of. I may be getting ahead of myself, but I do sure enjoy a good Chicken Bacon Ranch Sandwich! The recipe can be found here. Start by cooking the bacon according to package instructions. I like to move the bacon to a paper towel lined plate to absorb some of the grease and set aside until I’m ready to use. Add the cream cheese to a large saucepan or pot and heat over medium-low heat. Stir occasionally to melt the cream cheese. Once it’s about halfway melted, add the entire packet of ranch seasoning (Ugh, it … Continue reading

Instant Pot Garlic Chicken Pasta

Flavorful and creamy Instant Pot Garlic Chicken Pasta will make weeknight cooking a breeze! It’s rich, without being too rich, easy to make, and delicious. Plus, it’s a one-pot meal because it is entirely made in the Instant Pot. That’s a win-win for dishes and cleanup if you ask me. The chicken is simmered in a rich and creamy sauce that envelopes the tender pasta noodles. Each bite is filled with wonderful flavor. It’s like eating an alfredo sauce that doesn’t actually taste like alfredo. This is a meal the whole family will enjoy! You can jazz it up with some spinach leaves for added color or substitute the chicken for ground beef. If you are looking for a vegetarian option, skip the meat and add mushrooms instead. The recipe can be found here. Start by adding salt, Italian seasoning, paprika, garlic powder, and black pepper to a large Ziploc … Continue reading

Chicken Bacon Ranch Sloppy Joe’s

Step up your Sloppy Joe game with Chicken Bacon Ranch Sloppy Joe’s! Ready in under 30 minutes, these Sloppy Joe’s are a yummy mixture of chicken, bacon, mozzarella cheese, cheddar cheese, and ranch seasoning all sandwiched between a bun. If you’ve ever had anything chicken-bacon-ranch flavored before, you know what I’m talking about 😊 This recipe is a win! The recipe can be found here. Start by heating a large skillet over medium high heat. Add the bacon and cook according to package instructions. Remove the bacon to a paper towel lined plate to drain some of the grease. Do not drain the grease from the pan – you will be cooking the other ingredients in the bacon grease. Reduce the heat to medium and add the chopped onion. Cook until soft and translucent. This shouldn’t take long because the bacon grease will already be plenty hot! Add the ground chicken to the skillet and cook until … Continue reading

Beer Can Whole Grilled Chicken

Beer Can Whole Grilled Chicken is a fun way to cook chicken. You need a beer can chicken stand to do this. The stand along with the can of beer and chicken legs helps support the chicken on the grill, and the beer helps keep the chicken moist while grilling. I don’t taste a lot of beer flavor in the chicken but if this is a concern of yours, you could easily swap out the beer for a can of pop – any cola flavor will work well. Coca Cola or Dr Pepper seem to be the most popular, but I bet you could get a hint of citrus flavor if you used Mountain Dew. The recipe can be found here. Preheat the grill to 350 – 375 degrees F. If you have an upper rack in your grill, remove it before preheating because the chicken will not fit with … Continue reading
