I’ve been a big fan of “bowls” lately.  For example, instead of eating a stuffed bell pepper, I would eat the ingredients tossed together in a bowl.  Or instead of having an egg roll, the ingredients would be in a bowl….you get the picture.  My most recent bowl idea is for a Mediterranean Chicken Bowl.  It has a lemon-dill rice, wonderfully seasoned Greek chicken, a fresh cucumber and tomato salad, and yummy tzatziki sauce to bring it all together.  The flavors are rich and vibrant, and incredibly fresh.  It’s a light and healthy meal the whole family will love! Tuscan Chicken Alfredo tastes like a restaurant quality meal!  You won’t be able to get over how amazing the creamy sauce is and how each bite just the perfect amount of spice to it.  This dish is loaded with tender chicken, sun dried tomatoes, and a lovely garlic sauce. Chicken Souvlaki is a classic Greek dish consisting of marinated grilled meat that is served with vegetables, creamy Tzatziki sauce, and pita bread.  It is a low carb, low in fat and very fresh.  So, for a very good reason, it’s a popular street food in Greece! Chicken.  Bacon.  Ranch.  Three things that pair amazingly well together.  Combine them in sandwich form and you have one mighty fine meal.  Think tender chicken, creamy ranch (which really goes with just about anything), and crispy bacon smothered between a bun with some melted cheese for good measure.  This is what dreams are made of.  I may be getting ahead of myself, but I do sure enjoy a good Chicken Bacon Ranch Sandwich! Step up your Sloppy Joe game with Chicken Bacon Ranch Sloppy Joe’s!  Ready in under 30 minutes, these Sloppy Joe’s are a yummy mixture of chicken, bacon, mozzarella cheese, cheddar cheese, and ranch seasoning all sandwiched between a bun.  If you’ve ever had anything chicken-bacon-ranch flavored before, you know what I’m talking about 😊  This recipe is a win! Start by heating a large skillet over medium high heat.  Add the bacon and cook according to package instructions.  Remove the bacon to a paper towel lined plate to drain some of the grease.  Do not drain the grease from the pan – you will be cooking the other ingredients in the bacon grease. Beer Can Whole Grilled Chicken is a fun way to cook chicken.  You need a beer can chicken stand to do this.  The stand along with the can of beer and chicken legs helps support the chicken on the grill, and the beer helps keep the chicken moist while grilling.  I don’t taste a lot of beer flavor in the chicken but if this is a concern of yours, you could easily swap out the beer for a can of pop – any cola flavor will work well.  Coca Cola or Dr Pepper seem to be the most popular, but I bet you could get a hint of citrus flavor if you used Mountain Dew. One of our favorite side dishes or appetizers to make over the summer is Jalapeno Poppers.  The filling so simple to make yet incredibly rich and flavorful so we thought why not try to use the filling in other recipes!  The result was Jalapeno Popper Stuffed Chicken. Let me tell you, it’s yummy!  You get tender, juicy chicken with spicy jalapeno and creamy cheese in every bite.  And it’s not that hard to make.  Let’s walk through the recipe. Chicken Cordon Bleu Quesadillas are a simplified version of the classic dish.  You still get the amazing layers of ham, cheese, chicken, and Dijon sauce but this time it’s sandwiched between 2 tortillas and cooked until crisp.  Think easy to assemble and fuss free! The recipe can be found here. Start by making the Dijon sauce.  Melt the butter in a saucepan over medium-low heat.  Whisk in the flour.  Then, slowly pour in the milk while whisking.  Add the bouillon cube and continue to whisk until dissolved.  Add the mustard and stir to combine.  Let the mixture simmer for about 5-7 minutes or until thickened. Remove from the heat and stir in the parmesan cheese.  Season with salt and pepper, to taste.  Keep warm on the lowest burner setting while you prepare the quesadillas.  This stuff is good enough to drink!
