Burrata, Prosciutto, and Arugula Flatbread with Fig Jam is a wonderful recipe for any time of year.  It’s light, flavorful, and packed with fresh ingredients.  It’s so damn delicious!  The burrata is rich and creamy, and one ball is the perfect amount for the flatbread.  The prosciutto is nice and salty and adds a nice texture to each bite.  The arugula is a nice pizza topping because it adds fresh flavor and a bit of crunch to each bite.  You often see this combination in recipes (burrata, prosciutto, arugula) so you know this pizza will be good! The recipe can be found here. Start by preheating the oven to 375 degrees F.  Place the naan flatbread on a baking sheet and spread fig jam on each flatbread. A Thin Crust Potato Pizza with Thyme is my new favorite obsession.  I enjoyed a variation of this pizza at a local restaurant and have been wanting to recreate it at home ever since.  I must say, mine tastes just as good!  The base is a homemade pizza dough that is topped with shredded cheese, thinly sliced (almost paper thin) potatoes and onions, and fresh thyme.  It’s easy to make, flavorful, and delicious. I used my recipe for Thin Crust Pizza Dough for the crust.  If you have a different crust recipe you prefer, go ahead and use it, but this recipe is simple to prepare and doesn’t require any proofing so you can make this recipe on a whim and don’t have to worry about added time for the dough to rise.  Easy weeknight meal?  I think so. We recently went on a camping trip, and it was HOT.  Hotter than normal this time of year which was both pleasant and unfortunate.  Pleasant because it was nicer than cold, rainy days but unfortunate because we didn’t have AC 😊 The only way to beat the heat was to make homemade ice cream.  Yes, you read that correctly.  We made ice cream, from scratch, while camping.  And it’s actually quite easy. First, you need to purchase an Ice Cream Ball.  The one we have is YayLabs! Soft Shell Ice Cream Ball.  You can find it at your local sporting goods store or online by doing a simple Google search.  They are reasonably priced and very fun to use. Star Wars Day is upon us!  If you aren’t familiar, it’s an informal commemorative day observed annually on May 4th to celebrate all things Star Wars.  It’s not an official holiday by any means but any diehard fan is aware as observance of the day has spread quickly.  The title of this blog, May the Fourth Be with You, is a play on the popular catchphrase May the Force Be with You.  It you’ve watched the movies, you know what I’m referring to 😊 It’s a popular day for franchise fans and whether you plan on celebrating at home or in a galaxy far, far away, I hope you enjoy the recipes I’m going to share with you.  As expected, all are Star Wars themed. Bring a taste of Italy into your kitchen with Chicken Alfredo Bruschetta Pizza!  It combines the delicious flavor of alfredo sauce with chicken, bruschetta, mozzarella cheese, and crispy crust.  You’ll love it! This recipe comes together in about 30 minutes, is packed with flavor, and is perfect for pizza night.  I even hear it makes great leftovers for lunch (or breakfast if you’re into that sort of thing) 😊 The recipe can be found here. Start by preheating the oven to 400 degrees F.  I like to line my baking sheet with parchment paper so it’s easier to transfer the pizza to slice when done baking but that is completely up to you. These low carb Hawaiian Pizza Chicken Tenders will be a new weeknight favorite!  They are all the flavors of a traditional Hawaiian pizza but without the crust.  Instead, the ingredients are piled on top of chicken tenders and baked to perfection.  The recipe is amazing!  The chicken is moist and tender, the Canadian bacon is lean and a little salty, the marinara sauce is fresh and herby, the pineapple adds a wonderfully sweet flavor, and the mozzarella really brings it all together. The recipe can be found here. Start by preheating the oven to 350 degrees F and line a baking sheet with parchment paper. Season each chicken tender with salt and pepper or garlic powder.  This step is optional, but I think it’s necessary to add flavor to the chicken.  You could also use an Italian blend. My new favorite obsession (aka quick and easy weeknight meal) is Naan Flatbread.  You can create so many different variations by swapping out toppings and utilizing premade / store-bought naan flatbread.  My most recent creation is Walnut, Pear & Gouda Naan Flatbread.  It’s perfect for pizza night, to serve as an appetizer, or to serve alongside a salad or pasta dish.  Think fresh, juicy pears on top of warm, chewy flatbread with spicy arugula, walnuts, and a savory balsamic glaze.  It’s yummy! The recipe can be found here. Start by preheating the oven to 350 degrees F and line a baking sheet with parchment paper. Place both flatbreads on the baking sheet and drizzle with 1 Tbsp olive oil (drizzle on both).
