Friday night is pizza night at our house.  With COVID, we’ve been cooking at home a lot more than ordering in or going out to eat so we’ve taken to preparing our own pizzas from scratch at home.  It’s been fun to play around with toppings and be creative with what we add to each pizza.  You can definitely stick with the traditional toppings if that’s what you prefer on pizza, but we like to branch out and make each pizza unique. This crust is a favorite of mine as well.  I’d prefer less dough and more toppings in each bite so I’m going to share with you my recipe for Thin Crust Pizza Dough.  This is the base I use for all my homemade pizzas.  It’s thin, doesn’t require any time to rise, and gets nice and crispy when you bake it on a pizza stone.  One plus side … Continue reading

Veggie French Bread Pizza is incredibly flavorful and the perfect weeknight meal, especially if you’re in a hurry!  It’s an alternative to traditional pizza and is completely customizable so you can tailor it to meet anyone’s taste preference.  It comes together in about 30 minutes or less. I selected vegetables to use that I knew both Andrew and I would like but use whatever you have on hand or whatever is fresh in your garden.  It’s your creation so it’s up to you! The recipe can be found here. Preheat the oven to 375 degrees F and line a baking sheet with parchment paper. Slice the French bread in half, horizontally.  If the bread is too long to fit on the baking sheet, slice the bread in half again so you have 4 shorter pieces instead of 2 long pieces. I bought one long French bread, but I know you … Continue reading

The MN State Fair is cancelled.  Those are words I never thought would come out of my mouth, but it’s 2020, and anything is possible this year 🙂  And what a year it’s been!  Luckily, some food trucks and vendors are still able to sell their highly demanded food at various locations around town.  If you have ventured out and waited in line for any of your favorites – good for you!  If you have not, there’s still time.  OR…. drum roll, please…. you can enjoy fair food in the comfort of your own home. Just think….no crowds, no waiting in line, no overcrowded buildings, no “sold out” signs, etc.  I love the MN State Fair so if I have to miss out on one of my favorite summer traditions, this is as good as it gets.  The list of foods we “have to get” is quite long and the … Continue reading

Have you ever tried Vegan cheese?  It’s actually quite yummy!  I was hesitant at first….is it expensive?  Is it going to taste good?  What if I hate it?  Does it melt? And so many more questions crossed my mind, but I went for it and really enjoyed it. My go-to brand of choice is Vegan Chao Slices.  You can find the Creamy Original and Tomato Cayenne flavors at your local Festival Foods.  Both are sold in a 7oz package and the cheese is pre-sliced.  It’s delicious on its own if you want to enjoy a slice right out of the package but also tastes lovely in the few dishes I’m about to share with you. I admittedly started by trying each flavor on its own, so I knew what I was getting myself into.  The Creamy Original tastes like provolone cheese and the Tomato Cayenne tastes like a spiced cheddar … Continue reading

Are you ready for some football?  The Super Bowl is right around the corn and I’m sure you’re busy getting ready to host a party or determine what you are going to bring to someone else’s party.  It’s always fun to plan food that’s themed for a special event and try to make something unique. When I host an event, I like to have a variety of snacks to choose from; something warm, something hearty, grab-and-go type snacks, and at least one dessert item.  This year for the Super Bowl, we are providing the following food options to our guests: Buffalo Chicken Dip with Tortilla Chips Fresh Popped Popcorn from Lauri’s Pop-Corner Pepperoni Pizza Rolls Mini Loaded Potato Skins Ranch Snack Mix Football Cupcakes   The Buffalo Chicken Dip is available from the deli at your local Festival Foods.  You can always order online ahead of time to guarantee availability.  … Continue reading

Sliders are a great way to keep everyone happy whether you’re hosting a football party, entertaining with appetizers, or trying to be creative with school lunches.  They really are a crowd pleaser with so many different flavors!  I recently tried 3 different kinds of sliders and want to share them with you today.  Each is delicious in its own way and something I will definitely make again! Sliders are incredibly easy to make.  You slice the rolls in half, layer the ingredients, place the other half of the rolls on top, brush with a buttery topping, bake, and enjoy! Caprese Sliders Pizza Sliders Chicken Bacon Ranch Sliders   Caprese Sliders are light and refreshing.  The combination of fresh sliced mozzarella with tomatoes and basil is perfection!  Next year, we plan on using the tomatoes and basil from our garden to make these sliders – it doesn’t get any fresher than … Continue reading

Are you ready for some football…and delicious food?  Snacks and appetizers served during a football game need to be fit for a crowd and easy to eat.  Think finger foods, grab-and-go, quick and easy…. foods that don’t draw your attention away from the game for too long – you don’t want to miss any big plays!     We’re hosting a football part this week and will be serving the following items: Football Pretzel Rods Individual Chicken Taco Bowls Loaded Tater Tot Kabobs Mini Football Pizzas Dessert   Football Pretzel Rods are super simple to make and a crowd favorite!  Plus, pretzels are such a common snack food so you can’t go wrong. I like to pick team colors or traditional football colors (or think seasonably if making these for a holiday gathering).  My pretzel rods wills be dipped in milk chocolate with white chocolate used to create the look … Continue reading

Summer is finally here and now it’s time to look ahead to the 4th of July.  Can you believe it’s only a week away?  We plan on celebrating with family and friends – backyard bash, BBQ, yard games, drinks, the whole shebang!  If you are as unprepared as I am, you are probably in need of a few quick and easy food options 🙂 First up is Buffalo Chicken Firecrackers.  These are fun to assemble and a great themed food for your spread.  Feel free to use your favorite homemade Buffalo Chicken Dip if you prefer but I like to order fresh from the deli.  Saves me some time and effort, and it’s delicious!  Plus, any leftovers can be set out to enjoy with the rest of the food. Start by laying out wonton wrappers on the counter.  Place a spoonful of the Buffalo Chicken Dip on each wonton wrapper.  Then … Continue reading

We have been obsessed with flatbreads lately, specifically Naan flatbreads.  Naan is a leavened, oven-baked bread that is moist and tender.  And makes amazing flatbreads 🙂 One reason we love to make flatbreads is they are quick and easy, can be customized to any flavor preference, and taste great.  You simply buy a package of Naan bread, choose your toppings, bake, and enjoy.  The possibilities are endless! I have a few of our favorite recipes to share with you. Buffalo Chicken Naan Flatbread If you or your family likes spicy food, you’ll love this pizza.  It has the perfect amount of spice that is cut with celery chunks.  You can obviously make this as light or as spicy as you want by adding more hot sauce.  We usually make our own individual pizzas because Andrew likes his much spicier than I do.  Then the never-ending debate of Blue Cheese vs Ranch dressing starts…. but you can serve with … Continue reading

Halloween might be Andrew’s favorite holiday and it’s a close second for me. Temperatures are dropping, you have to pick out your Halloween costume, decorate your house, get ready for trick-or-treaters, and the list goes on. I particularly like all the spooky food you can make for a Halloween party or just for fun! Below are a few new recipes and ideas you can try out to make the most of Halloween. Cutout Cheese and Crackers This is probably the easiest snack you can make. All you need is sliced cheese, crackers, and Halloween shaped cookie cutters. Use cookie cutters to cut different shapes out of the cheese slices. I picked Colby Jack and Cheddar cheese but you can use any flavor of sliced cheese. Pair with crackers and you have a quick snack that is still Halloween themed. Cheesy Breadstick Bones Find the recipe here! I had fun making … Continue reading
