Spicy Grilled Queso is the perfect appetizer or side dish for your next party!  It’s SO SIMPLE to make…you cook the meat, add all ingredients to a disposable pan, heat on the grill, and serve.  It could not be simpler to make or more delicious to eat 😊 It has a slightly smokey taste from the BBQ, a hint of heat from the jalapenos (don’t worry, it’s not overpowering), and plenty of melted cheese for dipping. The recipe can be found here. Start by preheating the grill to 250-300 degrees F. While the grill preheats, prepare the ingredients.  Heat a large skillet over medium heat.  Add the pound of meat and cook until cooked through, crumbling as it cooks.  Then remove from the heat and set aside. I used Beyond Meat for my recipe because that’s what I had on hand.  This recipe would be amazing with ground beef or a pork sausage.  You could also use ground chicken … Continue reading

Spooky Season is upon us!  Now that it’s after October 1, we can gear up for Halloween and all things spooky 😊 Halloween is a month-long celebration at my house.  We watch all the classic movies and anything new we can find, gorge ourselves on candy, and decorate with probably too many pumpkins.  But it’s fun and helps us get in the holiday spirit! I like to try new Halloween themed recipes every year too.  It’s fun to have themed treats for a movie viewing party or to simply enjoy throughout the week.  This year, I have 3 recipes to share with you: Halloween Pizza Dip Candy Corn Quesadilla Candy Corn Cupcakes   Halloween Pizza Dip is the perfect appetizer!  It’s loaded with cheese, pizza sauce, and pepperoni, and is enjoyed with soft pizza dough bites that are baked around the dip.  It’s served hot, right from the oven, and won’t last long 😊 It’s easy to make and comes together in … Continue reading

It’s my favorite time of year!  The weather is starting to cool down, the leaves are starting to change, and you can find pumpkin spice at just about any store.  That’s what I’m talking about when I say my favorite time of year…. all things pumpkin spice.  I love the flavor, but I also love that it’s available for a limited time, so it’s something I look forward to enjoying. I like to create a few new recipes each year that are pumpkin spice themed.  Most are breakfast or dessert themed but that’s OK with me!  Pumpkin spice is a combination of nutmeg, cinnamon, allspice, and ginger.  It’s sweet, spicy, warm, and cozy.  Yes…cozy.  Think of the feeling you get when you drink a hot cup of apple cider on a cool day.  That’s a feeling I get when enjoying pumpkin spice food.  Even better, the pumpkin spice recipes I’m going to share with you today are hearty and filling, … Continue reading

Do you remember those yummy ice cream pizzas you probably had as a child at Dairy Queen?  They came in multiple favors and were typically served at a party.  They were my FAVORITE!  And there was a time in my life that I believe they were discontinued, and I was admittedly bummed to never have one again.  However, I was able to find a way to recreate them as copycat versions of the original. I have 3 recipes to share with you today for Copycat Treatzza Pizzas…I call them Ice Cream Pizza. M&M Ice Cream Pizza Heath Bar Ice Cream Pizza Peanut Butter Ice Cream Pizza   Let’s start by walking through the M&M Ice Cream Pizza.  You start with an Oreo crust, top it with vanilla ice cream, drizzle with hot fudge, and add M&M candies to finish it off.  This is a classic ice cream dessert that’s incredibly … Continue reading

We were watching a cooking show recently where they made Sheet Pan Quesadillas.  They not only looked amazing but seemed very simple to make so we thought, let’s grab some of our favorite ingredients, play around with different seasonings, and give it a try!  The result is Sheet Pan Chicken Quesadillas. These are fabulous!  You get tender chicken and loads of beans and veggies in each bite, it’s perfectly seasoned, and has plenty of melted cheese.  We use onion, bell pepper, black beans, and corn for our recipe but you can easily customize the “filling” to your liking.  Add mushrooms, green onion, etc.  Substitute the chicken breast for ground beef or pulled pork, etc.  You can really make this meal your own and cater to individual tastes.  I mean, you do have an entire sheet pan of quesadillas, so go ahead and make one side to your liking and the other side to your kids liking. And don’t … Continue reading

Bacon Jalapeno Crescent Roll Puffs is an easy appetizer or dinner recipe that will be a crowd favorite!  I say appetizer or dinner because the recipe is something most people would serve as an appetizer but if you eat enough of them (like we did) they can also be filling enough for an entire meal 😊 Think of this recipe as a spin on a traditional jalapeno popper.  You still have the jalapeno, bacon, shredded cheese, and cream cheese but instead of being stuffed inside the jalapenos, the ingredients are wrapped in crescent roll dough.  You get crispy bacon and spicy jalapeno, but the heat is cut by the combination of Colby jack and cream cheese.  The crescent roll dough creates this warm, soft, pillowy blanket to hold the ingredients together.  They are addictive! The recipe can be found here. Start by preheating the oven to 350 degrees F.  Line a baking sheet with parchment paper. Cook the … Continue reading

I will be preparing the following items to enjoy during our viewing pleasure, and you might notice a theme… Kentucky (where the derby is held) and whiskey/bourbon (sponsors of the event and heavily influenced in the south). Kentucky Hot Brown Dip Whiskey Spiced Chicken Wings Kentucky Oaks Cocktail Maple Bourbon Candied Pecans   Kentucky Hot Brown Dip is a rich a creamy dip that encompasses the wonderful ingredients and flavors of a … Continue reading

One thing I always hear people talk about is Easter Brunch.  Who is hosting?  What are we having? So on and so forth.  But what I never hear anyone talk about is Easter Cocktails.  Why not add adult beverages to the celebration?  Well, I did just that!  I use Peeps for a festive touch and each cocktail is themed to a different Peep color. Here’s what I have for you today: Blue Peeps Cocktail Pink Peeps Cocktail Yellow Peeps Lemon Cocktail   The Blue Peeps Cocktail is very citrusy and a little sweet.  It reminds me of a cocktail I would drink on a tropical beach somewhere 😊 The Pink Peeps Cocktail tastes just like a vodka lemonade.  Perfect on a hot summer day! The Yellow Peeps Lemon Cocktail is like a lemon drop.  It’s a little sour with a sweet aftertaste. Two of the recipes call for marshmallow vodka, which I couldn’t locate, so I did have to make … Continue reading
