Homemade Gnocchi
Have you ever tasted gnocchi so good that it melts in your mouth? Light, pillowy morsels that are tender and airy make the best gnocchi. We recently had this experience at a restaurant near our house and wanted to recreate the meal. Ultimately, our goal was to recreate the perfect Homemade Gnocchi, which is in fact what we accomplished. For those of you that aren’t familiar with gnocchi, it’s more of a dumpling than pasta. Gnocchi is made from potatoes that have been riced and mixed with flour and eggs. They also have these little ridges (or cavities) that are very helpful at holding sauce. Instant Pot Chicken Fettuccine Alfredo
Looking for a quick and easy weeknight meal that tastes JUST like it came from a restaurant? I have you covered! I want to share my recipe for Instant Pot Chicken Fettuccini Alfredo that comes together in 30 minutes or less and is something the whole family will enjoy. The recipe can be found here. In the bowl of an Instant Pot, add chicken broth, heavy cream, lemon juice, garlic, salt, and pepper. Break the noodles in half and place in the Instant Pot. Use a spoon to gently push down the noodles to cover with the liquid. You don’t want to press too hard or you’ll break the noodles and you also don’t need to stir the ingredients at this point. Roasted Red Pepper Rigatoni
Roasted Red Pepper Rigatoni is a sweet yet savory pasta dish with a lovely roasted red pepper sauce that is ready in about 20 minutes. The sauce is creamy, the roasted red peppers add a bold flavor, and the noodles are perfectly cooked, al dente. It’s easy to make and creates and explosion of flavor with every bite. The recipe can be found here. Start by bringing a large pot of water to a boil. Make sure to salt the water! Add the noodles and cook according to package instructions. Stir once you’ve added the noodles and again every few minutes to ensure the noodles aren’t sticking together. Once the noodles are cooked al dente, then are done. I think that’s something we all go through but even more so now with spending more time at home. How do you keep the meals exciting? How do you add variety to your weekly menu? Instant Pot Buffalo Chicken Mac & Cheese
Instant Pot Buffalo Chicken Mac & Cheese is a great one-pot meal that will blow your mind! It’s a twist on traditional mac & cheese that is easy to make and done in minutes. It’s super cream, full of tender chicken, and has a great spicy and tangy flavor from the addition of buffalo sauce. The recipe can be found here. Start by slicing the chicken into bite sized pieces. Add the chicken to a bowl and season with salt, pepper, and garlic powder. Toss to coat all pieces. Turn on the sauté function of the Instant Pot. Add a small amount of oil. The Best Vegan Lasagna!
Vegan Lasagna is a flavorful and hearty dish that’s packed with protein. Yes, it is vegan but even meat lovers will enjoy it! It’s layered with tender noodles, cashew ricotta cheese, marinara, spinach, and topped with mozzarella cheese. The recipe can be found here. The ricotta cheese is thick, creamy, and is a great recipe to use in lasagna, pasta, pizza, and more. I was skeptical when making the ricotta because this was my first attempt, but it did not disappoint. I didn’t know what to expect but was pleasantly surprised and admittedly didn’t know vegan cheese could taste this good! It was also very easy to make and only requires a few ingredients, most of which are pantry staples if you lead a vegan lifestyle. It has a lovely texture and amazing cheese flavor. Pantry Meals
In the midst of COVID-19 and the stay-at-home order, meals can be a little harder to plan. Grocery stores are working hard to keep the shelves stocked but that doesn’t mean you will find every item on your list. I think that creates a great opportunity to clean out the pantry and make some meal using existing items on home. Maybe you have a lot of canned goods or items that are nearing expiration…use them! I created 5 different pantry meals last week that I’m going to share with you today. I didn’t use a recipe for any of them. They all resulted from items found in our pantry, fridge, or freezer. It was a great way to use the food, especially from the fridge, before it spoiled and a fun way to create some new meals. I highly suggest doing this at home. St Paddy’s Provisions
St Patrick’s Day is a fun holiday for everyone! You can usually find some type of celebration around town whether it be a parade, green beer at your favorite bar or specials on Irish food at restaurants. Even if you aren’t Irish, it’s fun to participate in the festivities. We like to watch the parade and enjoy an adult beverage with the dressed-up crowds (the people watching is phenomenal), then head home for a feast! Some years we like to enjoy traditional Irish food but other years we like to take a favorite dish and add and Irish twist. It really depends on what we feel like cooking that day! Spicy Chicken Rigatoni
Spicy Chicken Rigatoni is hands down one of my top 5 favorite pasta dishes! It has large pieces of tender chicken, perfectly cooked noodles, and a lot of heat (in a good way). Should I go on? There is as little or as much garlic as you would like, alfredo sauce, marinara sauce, and butter…. yes, butter…. for a wonderfully creamy sauce. This dish is so simple to make and tastes amazing.
