Chicken Souvlaki is a classic Greek dish consisting of marinated grilled meat that is served with vegetables, creamy Tzatziki sauce, and pita bread.  It is a low carb, low in fat and very fresh.  So, for a very good reason, it’s a popular street food in Greece! Chicken.  Bacon.  Ranch.  Three things that pair amazingly well together.  Combine them in sandwich form and you have one mighty fine meal.  Think tender chicken, creamy ranch (which really goes with just about anything), and crispy bacon smothered between a bun with some melted cheese for good measure.  This is what dreams are made of.  I may be getting ahead of myself, but I do sure enjoy a good Chicken Bacon Ranch Sandwich! Cauliflower Parmesan is a real delight!  Not only is it delicious and hearty, it’s also a vegetarian meal that will satisfy any carnivore (I think…don’t quote me on this :)).  So, if you are craving Italian food, I recommend you give this a try! The recipe can be found here. Start by preheating the oven to 425 degrees F and line a baking sheet with parchment paper. Slice the cauliflower into 4 planks (or 4 cauliflower steaks if you are familiar with that term).  Place the planks in a single layer on the baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Bake for 30-35 minutes or until the cauliflower is tender and golden brown. Breakfast Enchiladas are a great way to start your day!  Enchiladas are tortillas that are filled with various ingredients, rolled up, covered with sauce, and baked to perfection.  For my Breakfast Enchiladas, I’m swapping a typical enchilada sauce for whisked eggs, and filling the inside with cheese and diced ham. These Breakfast Enchiladas can be customized to meet your taste preferences.  I used diced ham, but you could use bacon or sausage.  I used white onion, but you could substitute with bell peppers, mushrooms, spinach, etc.  Really make these your own and use the recipe below as a guide for quantities! BBQ Chicken Pizza Rolls are a spin on a classic pizza roll recipe.  Imagine a pizza but replace the traditional ingredients like pepperoni and sausage and with BBQ sauce and chicken.  Then imagine that same pizza in a bite sized form.  That is basically what a pizza roll is; all your favorite ingredients rolled up and nestled in fluffy dough. The BBQ sauce replaces the marinara sauce in this dish and add the perfect amount of zest to each bite.  It pairs perfectly with the tender chicken, crisp bacon, and melted cheese. Cashew Chicken Lettuce Wraps are a delicious, low carb dinner option, and are better than takeout!  That’s right…. I said it.  Sometimes homemade meals are better than takeout.  These lettuce wraps are restaurant style and come together in about 20 minutes.  They are filled with tender chicken, cashews, ginger, garlic, and plenty of heat!  Each lettuce wrap is full of flavor and make quite the healthy meal option. Start by slicing the chicken into 1-inch pieces.  Then, season with salt and pepper and set aside.  An alternate option would be to substitute ground chicken or ground turkey if you prefer.  You obviously don’t need to slice either of those but should still season with salt and pepper. Flavorful and creamy Instant Pot Garlic Chicken Pasta will make weeknight cooking a breeze!  It’s rich, without being too rich, easy to make, and delicious.  Plus, it’s a one-pot meal because it is entirely made in the Instant Pot.  That’s a win-win for dishes and cleanup if you ask me. If you are searching for the perfect appetizer or side for your next cookout, look no further!  Grilled Jalapeno Poppers are the way to go!  They are stuffed with an addictive mixture of bacon, cream cheese, and cheddar cheese.  The rich and creamy combination of the stuffing contrasts the spicy jalapeno peppers leaving you wanting more. This is a great alternative to the breaded and fried version because they are fresh, cook up nicely on the grill, and are quite addicting 🙂 You can even skip the bacon for a vegetarian option if you prefer. Two of my favorite things to eat are breakfast foods and pizza.  There is nothing like a good brunch with plenty of options to choose from but there is also something so satisfying about leftover pizza for breakfast.  So really, pizza is a breakfast food 🙂 Today I want to share with you my recipe for a super simple Breakfast Pizza.  We actually ate this for dinner one night (breakfast for dinner = brinner at our house) and it was the perfect meal, but you could easily whip this up on the weekend for breakfast.  It’s a quick recipe that is ready in under 30 minutes and tastes incredible.  The recipe is also customizable.  We had cheese, bacon, and egg pizza but you could substitute the bacon with sausage, add some diced onions or bell peppers, etc. The recipe can be found here.
