Air Fryer Vegetable Egg Rolls are incredibly delicious!  They are essentially baked, not fried, creating the perfect crispy and crunchy crust in every bite!  These are made in a fraction of the time and taste just like the Egg Rolls you would get at a restaurant.  Perfect for an appetizer, snack, or side dish! I always start by prepping my ingredients, so they are ready to go when needed.  Slice the red bell pepper and green onions.  Then combine the cabbage slaw, green onion, red bell pepper, flaxseed, soy sauce, and red pepper flakes in a large bowl.  Make sure to mix well.  If you like heat, you can always add additional red pepper flakes. Fresh Vegetable Soup is vibrant, hearty, and full of fresh, wholesome flavors.  It’s perfect for lunches, cold winter nights, rainy nights, or anytime you are looking for a delicious homemade meal!  This soup will fill you up without the “heavy, too full” feeling. I like to use frozen corn because I think it tastes better than canned corn, but you can use either.  If you are using frozen corn, start by cooking the corn according to package instructions.  If you are using canned corn, drain and set aside. I.  Love. Sweets.  Candy, cake, cupcakes, pie, cookies, you name it!  I would rather skip dinner and go right to dessert, then go back and have dinner.  That’s how much I like sweets. I recently made some homemade candy bars as a treat to bring to work for Valentine’s Day.  These can be treats for any time of year, no special occasion needed, it just happened to be around Valentine’s Day for me 🙂  If you like to treat your coworkers (or family or friends) from time to time, I would highly recommend trying any of these recipes! Mardi Gras falls on Tuesday, February 25th this year.  Traditionally, the days leading up to Lent, people would binge on rich/fatty foods in anticipation of fasting or limiting intake of certain foods.  Mardi Gras translates to Fat Tuesday and is celebrate the day before Ash Wednesday, making it quite the celebration! New Orleans is famous for its Mardi Gras parties.  I’ve been to New Orleans and enjoyed some awesome food but have never participated in the Mardi Gras festivities…maybe someday I’ll get back!  I want to celebrate Mardi Gras this year with a delicious feast.  I’m thinking traditional New Orleans foods with a little twist!  I’ll be making Muffuletta Dip and Chicken and Sausage Gumbo. Fajita or Burrito Bowls are a super simple, healthy, and filling dinner that come together in little to no time!  I personally like how tasty and customizable they are.  You can make them ahead of time, double the recipe to have leftovers, add and any vegetables or toppings you choose. My version of a Fajita Veggie Bowl is incredibly easy to make!  You start by making a batch of rice, either white or brown, whichever you prefer. While the rice is cooking, slice a few bell peppers and a large onion.  I like to use 2 different colors of bell peppers and a white onion.  Heat oil in a large skillet over medium-high heat.  Add the peppers and onion and sauté until tender. Creamy Hummus Pasta with Sun Dried Tomatoes is something we tried recently.  We both like pasta and we both like hummus, so why not try them together, right? It’s savory, delicious, and light.  You’ll be satisfied without the heavy feeling of being too full.  The hummus replaces traditional pasta sauce, so you have a creamy and slightly nutty flavored sauce.  The sun dried tomatoes are roasted with garlic so they are tender and give off great flavor.  This recipe is a winner in our house! We’ve been eating a lot of meatballs at our house lately!  Our idea was to take traditional dishes and turn them into meatballs.  The idea is you get the same great taste but in bite-sized morsels.  The recipes I’m going to share with you today are easy to assemble, wonderful weeknight dinner options, crowd pleasers, and make great leftovers!  The fight at our house is no longer “what’s for dinner” but “which are we going to make first” 🙂 Orange Chicken Meatballs are everything you love about a classic takeout meal!  The flavor is incredible – you will think you are eating orange chicken from your favorite Chinese restaurant but with fewer calories and fat.  I like to serve the Orange Chicken Meatballs on top of Cilantro Lime Rice.  You could serve these with rice, noodles, or as is. Looking for a warm, healthy, and filling breakfast on a cold winter morning?  Look no further than Instant Pot Apple Cinnamon Oatmeal!  It cooks up perfectly in little to no time, only takes one pot, and will leave you feeling very cozy 🙂 It’s the perfect combination of warm and fluffy oatmeal, apples, and cinnamon.  Even better, the recipe is vegan, if you lead a vegan lifestyle.
