Sheet Pan Roasted Gnocchi & Veggies
Sheet Pan Roasted Gnocchi & Veggies is a great one-pan meal the whole family will love! It’s full of toasted gnocchi (store bought but still delicious), roasted fresh veggies, herbs, and a dusting of Parmesan cheese. It’s easy to throw together on a busy weeknight and is a meal that can be enjoyed year-round. The recipe can be found here. Start by preheating the oven to 425 degrees. All your favorite breakfast foods are combined in a pancake shell to create these breakfast tacos; piled high with scrambled eggs, bacon, sausage, etc. Super yummy and easy to make, so start your morning right with Pancake Breakfast Tacos! The recipe can be found here. Start by making the pancake mixture according to package instructions. Heat a flat-bottomed skillet or griddle. Once hot, add the pancake batter and cook the pancakes according to package instructions. I made 6 large pancakes but make however many batches necessary to feed your family or guests. Yuletide Yummies
Baking is one of my favorite things to do but baking Christmas cookies is extra meaningful to me. I used to spend a few days with my mom in the kitchen before the holidays baking her traditional cookies. It was always so much fun…and something I looked forward to helping with every year. Nowadays, I help when I can, but also like to bake a few batches of my own. I like to create new recipes or put a holiday spin on an existing recipe. It’s fun to be creative and I love hearing reactions to the different goodies. It doesn’t hurt that I have a sweet tooth so if no one else wants the cookies, I sure do! Apple Cider Chicken & Apples is the ultimate fall dish! Think juicy chicken, tender apple slices, the crisp taste of apple cider……my mouth is watering just thinking about it 🙂 Your whole kitchen will smell like fall with this dish. It’s a healthy and simple fall meal. The recipe can be found here. Start by heating a large skillet over medium-high heat. Add the olive oil and onions and cook until soft and translucent. Then add the chicken, season with salt and pepper, and cook until the chicken is about 80% done. Chicken Apple Chili
With the low temperatures we’ve had lately I want to hunker down and have a hot meal after work. Chicken Apple Chili is my new favorite go-to meal! It’s a bit non-traditional but is very easy to assemble, is light and refreshing, and is the perfect fall meal. Plus, it comes together in just a few hours (set it and forget it) so you aren’t waiting 4-8 hours like traditional chili. The recipe can be found here. You need a slow cooker for this one-pot recipe. Add all ingredients to the bowl of the slow cooker, except the apples, and stir together. Cover and cook on high for 2 hours. Terrific Turkey Dinner
One of my favorite Thanksgiving traditions from my childhood was getting up early to help my mom prepare all the food. We’d spend hours in the kitchen chopping vegetables, assembling casseroles, prepping the turkey (one in the oven and one on the grill), and baking pies. We would clean up and get ready for the day while everything was baking in the oven, then we’d wait for company to arrive. It was the best! This year, I’m thinking of changing the plan. Why not do something a little simpler and less time consuming so we can enjoy each other’s company and spend the day with family? The holidays are busy enough without spending hours in the kitchen, so I want to create a menu that is delicious but also fairly quick to put together. Mediterranean Munchies
With the cold weather approaching, I thought it would be fun to make a Mediterranean based meal, and imagine I’m in warmer weather, perhaps sitting on a beach somewhere 🙂 I made Chicken Gyros with Tzatziki Sauce for the main course and served Mediterranean Layered Hummus on the side. Both are easy to make, flavorful, and healthy! Chicken Gyros with Tzatziki Sauce are filled with spiced chicken, fresh veggies, and a tangy homemade sauce, and are served on warm pita bread. The tangy homemade sauce is Tzatziki Sauce, which is a Greek yogurt-based sauce with cucumber and fresh herbs added. These gyros are incredibly tasty! Start by preheating the oven. Perfect Fall Meal
With the temperatures starting to drop I’ve been craving something warm and hearty for dinner. My criteria is the dish has to be hot, filling, seasonal, and something good enough (and big enough) to have leftovers. I ended up with the following: Pumpkin Dinner Rolls Apple Cheese and Beer Soup Banana Cookies with Brown Sugar Cream Cheese Frosting The Pumpkin Dinner Rolls are homemade. Sure, you can buy store-bought rolls if you prefer but there is something about the smell of bread baking in the oven that gets me every time. The bread is fresh (literally right out of the oven), warm and so easy to pull apart to eat. I recommend using a stand mixer to make these rolls but it’s OK to mix by hand if you don’t have a stand mixer – you’ll just get quite the arm workout!
