Taco Pizza
Pizza is always on my mind. I could eat it for every meal of the day, and sometime do. I have no shame (wink). I also love tacos but eat them far less frequently. One night we were deciding what to have for dinner and couldn’t decide between the two, and quite honestly, I can’t blame us. Both are simple to make, offer a variety of flavor options, and can come together in no time. Our compromise was to make a Taco Pizza and have the best of both worlds. The end result was quite tasty! Celebrating Valentine’s Day
Valentine’s Day is just around the corner and I’m feeling the love. Our house is decorated with everything red and pink, I’ve picked out the perfect Valentine for my sweethearts (yes, I’m including the dog 😊), and we have a wonderful menu planned. A lot of people like to go out to eat on Valentine’s Day and there is nothing wrong with that, but we usually opt to stay in and prepare a nice meal together. It takes away from the rushed atmosphere you often feel at a restaurant on a busy day and allows you to really spend time together and do something fun together. Christmas Dinner
Christmas is my favorite holiday to host. I think it’s due to my love of Christmas lights and decorations, so our house is always over the top! Plus, there are so many festive serveware options available that you can change up your table display as often as you like. (New Christmas plates…hint hint, Andrew 😊) Sometimes I like to go all out with appetizers and the main course but there isn’t anything wrong with keeping it simple if you prefer. I truly enjoy cooking for others and putting on a big spread but also want to enjoy the holiday with family and friends. So, I decided to keep my menu simple this year. A Thanksgiving Feast
I look forward to Thanksgiving every year. Not just for the delicious feast, but because it’s a time to get together with family and friends. For some it’s also about football and the Macy’s Thanksgiving Day Parade, which I too enjoy. I’ve put together a handful of my favorite recipes and ideas you can use to host the perfect Thanksgiving or Friendsgiving. What’s a party without some appetizers? Two of my favorite appetizers for Thanksgiving are Cranberry Crescent Bites and Brie and Apple Crostinis. I think they are sweet and savory but also a little salty. ‘Tis the Season for Pumpkin
If you’re anything like me, you love pumpkin spice! I know, I know, a lot of people are over the pumpkin spice craze but with so many recipes to try how can you not be intrigued by its deliciousness? I personally think it should be a year-round item and not just seasonal, but it’s not up to me. To fulfill my need for pumpkin I decided to have ‘pumpkin weekend’ at our house to hopefully get it out of my system (between us, it will never be out of my system 😊). I’ve been excited to write this post since I originally had the idea! Most of my posts so far have been about food but why stop there? I thought I could write about wine…delicious wine 🙂 For the winos and fitness enthusiasts out there, this is something you’ll want to try! It’s called FitVine and is considered “clean wine”. Don’t worry; I’ll explain what I mean by “clean wine” later. It started with 3 friends that wanted to create a wine that fit their very athletic and constant moving lifestyles…so they created FitVine. There are 5 kinds of FitVine available, Cabernet Sauvignon, Chardonnay, Pinot Grigio, Pinot Noir, and Sauvignon Blanc. Chicken Sloppy Joes
Sloppy Joes seem to be a family tradition in many households but we always forget about them when deciding what to have for dinner. They are quick and easy to make, yet fairly inexpensive because you tend to have many of the ingredients already in your pantry. And for those of you with kids, they tend to be a kid-friendly option even for the picky child, so it’s a win for everyone. Needless to say, now that we’ve made them once they will become a recurring meal in our house. I don’t eat red meat so I like to use ground chicken instead. Ground chicken tends to have a little less fat and little more protein than ground beef so it’s also a slightly healthier option. Seasoned Chicken Juicy Lucy
One thing I’ve always been curious to try is a Juicy Lucy. I’ve never had the opportunity because I don’t eat red meat so I decided to create my own version using ground chicken. It took some tweaking to get the texture and size of the patty right but the result was yummy! The recipe can be found here. I didn’t want to use plain ground chicken without any seasoning because the burger wouldn’t have much flavor then. I followed the seasoning recipe from the Buffalo Chicken Penne recipe. I use this seasoning mix all the time at home. It’s great on a grilled chicken breast or veggies because it adds a salty flavor with a bit of spice, but now I’m getting off topic! Everything Spice
One of my favorite seasonings is Everything Spice. It’s a combination of toasty, salty, and savory that makes every bite that much more delicious. And it goes on, well, everything! We like to make soft pretzel bites to have as an appetizer at holidays, a family get-together, game night, etc. They are a crowd favorite and usually don’t last long…but that’s probably because we tend to pair them with alcohol (who’s keeping track?) 🙂 This time we were feeling adventurous and wanted something a little different from traditional soft pretzel bites so we made Buffalo Cheddar Soft Pretzel Twists with, you guessed it, EVERYTHING SPICE!!! I understand this recipe can be daunting but trust me…it’s delicious! The cheese oozes out as you take your first bite, the buffalo sauce adds the perfect amount of heat, and the everything spice adds a salty flavor. Crusted Chicken Breasts
Every time I shop at Festival Foods I have to checkout the Meat Department because they always have a large assortment of prepackaged meal options. You can find bratwurst, burger patties, marinated chicken, pork chops, and much more. One of my favorite things to buy is Crusted Chicken Breasts. They are available in a variety of flavors and are easy to make for dinner because all you have to do is bake them. I bought 2 different flavors during my last trip to the store, Parmesan Crusted Chicken and Tortilla with Cheese Crusted Chicken. I thought it would be fun to do a taste test to see which one we liked better.
