Air Fryer Garlic Parmesan Chicken Skewers
Air Fryer Garlic Parmesan Chicken Skewers are now part of my menu rotation! They are packed full of juicy, tender chicken, basted in an amazing parmesan-garlic sauce (IYKYK), and slide right off the skewer. Nothing is better than that. These make a great appetizer or can be made into an easy weeknight meal when paired with some rice, cooked veggies, or perhaps a side salad. The recipe can be found here. Start by soaking the wooden skewer for at least 30 minutes. This helps to prevent the meat from sticking to the skewer while cooking and it prevents the wood from burning. Greek Chicken Wings with Lemon & Feta are the perfect combination for a light weeknight meal. These crispy chicken wings have a wonderful lemony flavor and are inspired by Greek/Mediterranean cuisine. They do need to be marinated so plan for timing, but you won’t regret your decision. It’s a delicious recipe that can be enjoyed as an entrée, appetizer, or side dish. The recipe can be found here. Start by marinating the wings. Whisk together the lemon zest, lemon juice, crushed garlic, olive oil, salt, pepper, and oregano in a large bowl. Add the wings to a large Ziplock bag and pour the sauce over the top. Farro with Chicken and Tomatoes is a one pot meal that is ready in about 30 minutes, making it great for a busy weeknight meal. It’s warm and comforting without being overly filling so it’s something you can enjoy year-round. This recipe is essentially a healthy grain bowl that’s packed with protein. If you aren’t familiar with farro, it’s a bit heavier than quinoa and a bit chewier in my opinion, with a similar texture to rice. It has a nutty flavor and is a perfect plant-based alternative to meat (if you have dietary restrictions) and is packed with protein and fiber. Slow Cooker Honey Mustard Pulled Chicken is my new favorite recipe! It’s a slow cooker recipe so get ready to set it, forget it, and have a yummy meal waiting for you. I love honey mustard when paired with chicken, chicken tenders specifically, but shredded chicken slathered in a honey mustard sauce isn’t too bad either 😊 The chicken is tender and juicy and is paired with a perfect sweet and tangy sauce. Slow Cooker Shredded Ranch Chicken is a delicious yet versatile recipe that is perfect for any day of the week! With only 4 ingredients needed, you’ll be able to whip it up in no time (or whip it up and start your slow cooker, lol). It’s a classic sandwich you could get at your local bistro or café style restaurant, and I thought, why not try making it at home? It has warm, crusty ciabatta bread that is filled with juicy chicken, crispy bacon, spicy, melted cheese, and tender veggies. The sandwich tastes light and won’t leave you feeling too full. Balsamic & Guinness Chicken Wings
Balsamic & Guinness Chicken Wings are a unique yet delicious appetizer or dinner option. They have quite the pleasant flavor…it’s a little tangy and sweet. I think Guinness is mildly sweet with a hoppy/bitter flavor and notes of coffee, almost tastes like roasted almonds. Balsamic is rich in flavor with a mellow tartness and some acidity, kind of herby. But both complement each other nicely. The recipe can be found here. Start by preheating the oven to 350 degrees F and line a baking sheet with parchment paper. Line the chicken wings on the baking sheet, leaving a little space in between. Drizzle with olive oil and sprinkle with salt and pepper. Chicken Balti
I was gifted a Cast Iron Balti Dish and immediately started researching recipes and the type of cuisine to prepare in it. I learned A LOT! Balti is a cooking method traced back to Southern Asia and is named for the dish in which it is made. It’s similar to Indian curries and contains meat, vegetables, and spices. The main difference is how the dish is served but the ingredients used are cooked the same way. Balti dishes are stir-fried with vegetable oil over high heat in a flat-bottomed wok. Chicken Pesto Ciabatta Melts are perfect for your next weeknight meal! Think of a classic bistro sandwich with warm, toasted bread, tender, juicy chicken, fresh, ripe tomatoes, melted cheese, and an herby pesto to top it off. Creamy Cajun Chicken Pasta is my newest weeknight recipe that your family will love! It’s a filling and delicious pasta that comes together in about 30 minutes. It’s rich, creamy, a little spicy, and packed with wonderful ingredients. I will admit…when I was originally working on this recipe it was going to be soup, not pasta, but plans changed, and soup just wasn’t in the cards that night. I blame the noodles for absorbing so much of the liquid that would have been yummy soup, but the recipe still turned into something great, and we had a lovely pasta dinner.
