Scones are a new favorite baked good of mine.  When I was younger, I thought they were hard and dry, and not very tasty, but as I’ve gotten older, I’ve learned to appreciate the texture and flavor.  They are sweet, dense, dry, and crumbly, yet oh so good!  They pair well with a cup of tea or coffee in the morning for breakfast.   I was recently gifted a Mini Scone Pan, and this is the only way I will make scones.  Sure, you can prepare the dough, roll it out, cut it into triangles, and bake it but the pan reduces many of the required steps and is so easy to use.  Plus, you get 16 scones so there is plenty to serve at brunch, to bring to work to share, or to save for leftovers are home.  Click this link for the Mini Scone Pan. Homemade Buster Bar Ice Cream Dessert is one of those desserts you can’t get enough of!  It’s loaded with peanuts, vanilla ice cream, an Oreo crust, and a chocolatey-fudgy topping.  It’s perfect on a hot summer day…or really any day because ice cream isn’t limited to summer enjoyment 😊 It’s a dessert I would recommend for a dinner party or birthday party.  It has something for everyone, is filling, and will feed a crowd. The recipe can be found here. Start by softening the ice cream so it’s easier to work with.  Do this by placing the quart of ice cream on the counter for 15-20 minutes to soften while you prepare the other ingredients. Add the Oreos to the bowl of a food processor.  Pulse until you have fine crumbs.  Pour the crumbs into a mixing bowl and add 1 stick of melted butter.  Stir to combine.  The mixture will resemble wet sand.  Press this mixture into the bottom of … Continue reading

Farro is something I was recently introduced to and it’s the star of these recipes.  It’s a grain that makes great salads when used as the base or when added to leafy greens.  It’s hearty, has a slightly nutty taste, holds up well with dressing, and makes a great meal.  Farro is something I find myself craving because there is such a wide range for its use, and it can be completely customizable when added to other dishes…. like salads 😊 I’d like to share with you a handful of new recipes I’ve been working on over the past few months, all-encompassing farro.  I will admit, I went on a bit of a farro-kick, but the end result did NOT disappoint!  Here are the recipes: Apple, Gouda, & Farro Mixed Greens Salad Cilantro Lime Farro Mediterranean Farro Salad Summer Farro Salad with Apples, Pecans, and Arugula Thai Peanut Farro Salad Butternut Squash & Farro Salad Greek … Continue reading

Apple Butter & Prosciutto Naan Flatbread is the perfect fall dinner.  It’s easy to assemble, quick to make, and tastes amazing!  The classic combination of apples and cheese give this recipe a sweet and savory taste, and very unique flavor.  It’s a great way to use up those apples or apple butter you bought during a visit to the orchard this fall 😊 The recipe can be found here. Start by preheating the oven to 350 degrees F and lining a baking sheet with parchment paper. Place the flatbreads on the baking sheet. Top each flatbread with ¼ cup of apple butter.  Add more to taste.  I like to use store-bought apple butter (from either a local apple orchard or grocery store) for convenience.  You can use homemade apple butter if you prefer. Top each flatbread with 1 cup of mozzarella cheese, spread evenly over the top. Bake for 10-12 minutes or until the cheese is melted and the … Continue reading

If you are looking for a quick and easy weeknight meal, I have the perfect recipe – BLT Naan Flatbread.  It’s all the flavors of your favorite BLT sandwich but in flatbread form.  Think soft and chewy naan flatbread in lieu of toasted bread, crispy bacon, crunchy lettuce, juicy tomatoes, and melted cheese.  The mayonnaise is whisked into a lovely sauce to drizzle over the top.  And it’s all ready in about 20 minutes or less. The recipe can be found here. Start by preparing the bacon according to package instructions.  I like to bake or fry my bacon (kind of depends on the time I have and how much cleanup I want to do).  Remove the bacon to a paper towel lined plate to drain the excess grease and cool.  Once cool, chop into pieces. Preheat the oven to 350 degrees F and lining a baking sheet with parchment paper. Place the flatbreads on the baking … Continue reading

Every now again we get a craving for some Cajun cuisine.  Something spicy (but not too spicy), hearty, and full of favor.  Chicken wings are an easy fit because they are simple to prepare and make a great meal when paired with a side, like Cajun Rice… We’re clearly getting our Cajun fix with this meal 😊 Cajun Baked Chicken Wings are crispy on the outside and tender on the inside.  They are marinated in a dry rub and baked to perfection before being tossed in a yummy Cajun butter sauce. Cajun Rice is very similar to Dirty Rice (if you are familiar) but without any meat.  Hence the Cajun Baked Chicken Wings being the main course.  The Cajun Rice is perfectly seasoned and spiced and is packed with plenty of onions and peppers.  It’s an elevated rice that the whole family will love. Let’s walk through how to make each recipe. Cajun Baked Chicken Wings Start by making … Continue reading

Chicken with Parmesan Garlic Rice is a phenomenal weeknight meal!  It combines pan seared chicken with a cheesy, garlic filled bed of rice.  The chicken is perfectly seasoned and tender, the rice is soft and pillowy with lots of fragrant garlic and parmesan cheese mixed in, and it’s topped with fresh, crisp parsley.  It’s delicious and I hope you give it a try! The recipe can be found here. Start by seasoning the chicken tenders with salt, pepper, and garlic powder on both sides.  I used chicken tenders but feel free to use boneless skinless chicken breasts or chicken thighs, if you prefer. Heat oil in a large skillet over medium heat.  Add the chicken and cook for 6-8 minutes (per side) or until cooked through and an internal temperature of 165 degrees F is reached.  Remove the chicken to a place and cover with aluminum foil to keep warm.  Set aside. Using the same skillet, melt … Continue reading

Spooky Season is upon us!  Now that it’s after October 1, we can gear up for Halloween and all things spooky 😊 Halloween is a month-long celebration at my house.  We watch all the classic movies and anything new we can find, gorge ourselves on candy, and decorate with probably too many pumpkins.  But it’s fun and helps us get in the holiday spirit! I like to try new Halloween themed recipes every year too.  It’s fun to have themed treats for a movie viewing party or to simply enjoy throughout the week.  This year, I have 3 recipes to share with you: Halloween Pizza Dip Candy Corn Quesadilla Candy Corn Cupcakes   Halloween Pizza Dip is the perfect appetizer!  It’s loaded with cheese, pizza sauce, and pepperoni, and is enjoyed with soft pizza dough bites that are baked around the dip.  It’s served hot, right from the oven, and won’t last long 😊 It’s easy to make and comes together in … Continue reading

As colder weather sets in you are probably looking for something warm and filling to satisfy your cravings.  It is apple season (so move over pumpkin spice) and I think apple is one of the best flavors of the season because it pairs well with many dishes.  There are so many varieties of apples you are sure to find one that is your favorite and tastes great on a salad, or in a sandwich, or perhaps baked into a dessert. I like to create new recipes each fall that are themed around apples and have a few to share with you today: Slow Cooker Apple Cider Chicken & Apple Melts with Honey Mustard Gouda, Apple & Bacon Naan Flatbread Caramel Apple Cupcakes   Slow Cooker Apple Cider is completely homemade.  The base is water, you add chopped fruit and some mulling spices, turn on the slow cooker, and forget it overnight.  Your house will … Continue reading

If you haven’t checked out the Meat Counter at your local Festival Foods, I highly recommend it!  You can find plenty of standard meat options; beef, chicken, seafood, etc. …things you would expect to see.  BUT you will also find some specialty items you might not be familiar with.  My favorite items to buy are the encrusted chicken breasts.  They come in a variety of flavors; pecan, parmesan, buffalo, and tortilla are the most common.  If you are lucky, you might find a different flavor from time to time.  They are sold individually or pre-packaged as a pack of 2, depending on the store location. You can typically find some of each in our freezer for a quick and easy weeknight meal.  Most commonly, I will bake the chicken breasts and serve them with a side salad or slice the chicken to eat on top of a bed of lettuce.  You can play around with different flavor combinations … Continue reading
