Sheet Pan Chicken Fajitas are a quick and easy meal that’s bursting with flavor!  The seasoning is a homemade mixture that has the perfect fajita flavor; a bit of spice but not overpowering.  The chicken and veggies are tender, and you can add any toppings of your choosing.  Even better, everything cooks on the same pan for easy cleanup! Salmon is slowly becoming one of my favorite seafood dishes to make for a weeknight meal.  It’s healthy, fills you up without leaving you feeling “stuffed”, and can be prepared a variety of ways.  I most commonly bake salmon but have also tried my hand at grilling salmon.  The recipe I want to share with you today calls for baked salmon, but only after it’s been marinated and absorbs some lovely flavors. The recipe is for Bourbon Brown Sugar Glazed Salmon.  I’m not a big fan on bourbon in general, and if you aren’t either, don’t let that deter you from trying this dish.  Bourbon is in the marinade, but you can’t taste the alcohol because it’s complemented with other seasonings and spices. Pizza is always on my mind.  I could eat it for every meal of the day, and sometime do.  I have no shame (wink).  I also love tacos but eat them far less frequently.  One night we were deciding what to have for dinner and couldn’t decide between the two, and quite honestly, I can’t blame us.  Both are simple to make, offer a variety of flavor options, and can come together in no time.  Our compromise was to make a Taco Pizza and have the best of both worlds.  The end result was quite tasty!  I mean, as Homer Simpson always says, “Mmmmm…. Who doesn’t love a good chocolate chip cookie?  I consider myself somewhat of a cookie connoisseur.  I will eat *almost* any flavor and typically have a container of cookies on the counter at the ready……and maybe a backup in the freezer.  I just love cookies! Have you ever had an Empanada?  They are common in Southern Europe, Latin America, and the Philippines but I’m sure you’ve noticed them as a menu item from time to time.  Empanadas are essentially pockets of dough with some kind of filling; typically, meat, cheese, and vegetables, or any combination of those. I think they are pretty easy to make and tend to feed a crowd because the recipe makes so many.  And they are often freezer friendly so you can have leftovers for another day.  You do want to be careful with what kind of vegetable you use in empanadas because some vegetables hold up better when being used as filling.  For instance, bell peppers, onions, broccoli, carrots, spinach, etc. all work very well.  Squash, tomatoes, or other watery vegetables will need to be drained before using, otherwise you will be left with some soggy dough!  So, feel free … Continue reading
