Halloween is fast approaching. Friends and family will be coming together with Christmas right around the corner.  Are you ready for all the festivities?  Are you hosting a party?  It can be stressful preparing for a get-together with a house full of guests, but it doesn’t need to be.  Some people have multiple places to stop in one night while others have one stop to make.  Whether your guest are coming and going or staying for the evening, you can serve a simple menu of appetizers. I think this is a great idea because 1) your guests can eat as much or as little as they like, 2) you can have a large variety of options to choose from, and 3) you spend more time socializing with your guests than you do in the kitchen. It’s a busy time of year with summer coming to an end, school starting, preparing for fall and all the delicious food that comes with it (more on that later) but we were able to squeeze in one more weekend at the cabin!  We opted for a fairly simple menu because the weather was perfect and we wanted to make the most of the holiday weekend by spending as much time outside as possible. Let’s be honest, no one is up early at the lake, but when we do get up we are ready for some Bloody Mary’s and breakfast.  Our favorite is Tito’s Vodka with equal parts Tomato Juice and Clamato plus all the fixings!  We used Ellsworth, WI Cheese Curds, pickles, and summer sausage for our skewers.  Refreshing and a great way to start the day! Time to break out our favorite summer recipes and begin shopping for Memorial Day weekend groceries for the unofficial beginning of summer. Most likely the weather won’t feel like summer but we won’t care because we will have some great food to enjoy. And there must be guacamole, right? One meal of the weekend will be a slow roasted beef brisket, simple to prepare and provides a great atmosphere to relax with some beer and wine while it’s roasting. To roast it slow and low heat you want to order an untrimmed whole beef brisket from our meat counter, trimming the fat would cause you to lose the moist and tender texture of the beef. A simple dry rub of equal portions of Kosher salt and fresh ground black pepper and a small amount of paprika over the entire brisket. Spring has finally arrived and with the good weather comes lots of outdoor weekend activities and not as much time to cook on the weekends, opening cabins for the summer and yard work leave little time to spend in the kitchen. Burgers are delicious and a simple solution, my favorite is our 1/3 lb. ground beef 85% lean patties, cooked on the grill with a slice of melted cheddar cheese and served on the cheddar onion buns from our bakery. Bubbies bread and butter pickle chips are a staple in our house and add a sweet and crunchy contrast to the burgers. Lucky’s mustards are another condiment that will add extra special touch to your burgers and brats! If you are anything like us, and love watching Game of Thrones on Sundays, then you might celebrate with a tasty meal to go with your viewing experience! For the last episode, we decided to go with a themed recipe and make something that you might find in Westeros, with some modern updates of course. We chose to make a Chicken Pot Pie fit for a king! The recipe we followed was for a 13×19 pan, but we modified it slightly to make it look like a more authentic Game of Thrones Pie. Don’t worry, this was not a Frey Pie (book reader joke). We followed the recipe available on our site almost completely, until we got to actual pie section. Time to breakout the bun and enjoy some great burgers. Burgers are an easy dinner solution and so much better when you make them at home! First up is our Guacamole Burger, we think Guacamole is always welcome on the table and we like it chunky with nice large pieces of avocado. This burger is served with bacon slices and we think the easiest way to cook bacon is in the oven. We placed our bacon slices on racks on a baking sheet and baked at 350 degrees until cooked thoroughly. If you’re looking for a ground turkey burger this is our fav – this Pesto Turkey Ciabatta Burger is delicious and you may substitute the ground turkey with ground chicken. Our Juicy Lucy recipe is cheesy and fabulous, we Minnesotans love our Juicy Lucys. We use Tilamook Cheddar a wonderfully rich and tasty cheddar that melts easily. Nothing beats melty for a quick solution to dinner during these hectic weeks at the beginning of the school year. We decided to experiment with Gouda cheese for easy yet very tasty melty sandwiches. If you’re going to have a great sandwich you must use great bread, we chose a wonderful Boule made by Taste of Scandinavia for our sandwich bread. Simply toasting the bread didn’t seem like a good idea for a perfect melty sandwich so we settled on spreading the outside of the bread slices with Hellman’s Mayonnaise and cooked until a beautiful golden brown in a large non-stick frying pan or griddle. Our first melty sandwich effort was using Smoked Gouda on our golden crusted bread. Any good American holiday, like the Fourth of July revolves around food and our favorite on the center of the plate for summer is the burger! First up is a trifecta of flavors with our Black Angus Premium Choice ground beef, Tickler Cheddar cheese and our own Festival Foods smokehouse bacon. We call it the Tickler Bacon Burger, easy to prepare but mouth-watering, big flavor. The Cheese Sauce can be made the day before, chilled and then reheated and served, making this entertaining-friendly. For those looking for some options other than beef burgers we have a few ground chicken burger recipes that are very tasty, our latest ground chicken recipe is a Mexican Chicken Burger.
