I recently acquired a spaetzle maker and thought I would play around with creating a fun and delicious recipe.  I bought the spaetzle maker without ever having spaetzle before but thought it looked like a neat kitchen tool to try and after researching recipes, thought it wouldn’t be too hard to make. Monte Cristo Sandwiches are my new go to sandwich!  They are served warm, so the cheese is perfectly melted, the bread is toasted, and the meat just seems to be extra tender and juicy.  It’s not quite a panini, because you aren’t pressing the sandwich or grilling it, but instead you are baking it.  I like to use French Toast as the bread as well.  It adds a little extra something to each bite! The recipe can be found here. Start by cooking the bacon according to package instructions.  Set aside. Preheat the oven to 300 degrees F and line a baking sheet with parchment paper. If you need a fun new dinner idea, are looking for an appetizer for a party, or simply want to have Mexican night at home, Tostadas are the way to go!  They are very versatile yet simple and easy to make.  Tostada is the Spanish word for toasted, which fits the description perfectly, because a toasted (or deep fried) tortilla is the base of the dish.  You then top the tortilla with beans, cheese, meat, lettuce, fruit, and other toppings.  Basically, you want to pile the ingredients high and dig in…. these are meant to be messy! Friday night is pizza night at our house.  With COVID, we’ve been cooking at home a lot more than ordering in or going out to eat so we’ve taken to preparing our own pizzas from scratch at home.  It’s been fun to play around with toppings and be creative with what we add to each pizza.  You can definitely stick with the traditional toppings if that’s what you prefer on pizza, but we like to branch out and make each pizza unique. This crust is a favorite of mine as well.  I’d prefer less dough and more toppings in each bite so I’m going to share with you my recipe for Thin Crust Pizza Dough.  This is the base I use for all my homemade pizzas.  It’s thin, doesn’t require any time to rise, and gets nice and crispy when you bake it on a pizza stone.  One plus side … Continue reading

Have you ever eaten something and thought “this is the only way I can ever eat this again”?  That happened to me with this sandwich. Don’t get mad, but I have to admit I’m not really a fan of BLT’s.  They are fine sandwiches but there isn’t much to them.  It’s like they are missing something, and I think I found out exactly what’s been missing.  You have to revamp the entire sandwich…. bread and fry the tomatoes, candy the bacon, make a delicious aioli, and eat it all on a pretzel bun. It’s a souped-up BLT…a gourmet BLT if you will…it’s a Fried Tomato Sandwich with Pecan Bacon and Chipotle Aioli.  And, it’s delicious. The recipe can be found here. Can you believe it?  Easter is right around the corner.  With all that is going on in the world these days I’m starting to lose track of time.  What is typically a day of family and friends gathering together will most likely be spend apart or perhaps in very small groups.  This puts quite the strain on menu planning when you won’t be hosting, won’t be attending the usual get-together, or are just trying to maintain social distance. Just when you thought breakfast couldn’t get any better, along comes Pancake Breakfast Tacos! All your favorite breakfast foods are combined in a pancake shell to create these breakfast tacos; piled high with scrambled eggs, bacon, sausage, etc.  Super yummy and easy to make, so start your morning right with Pancake Breakfast Tacos! The recipe can be found here. Start by making the pancake mixture according to package instructions.  Heat a flat-bottomed skillet or griddle.  Once hot, add the pancake batter and cook the pancakes according to package instructions.  I made 6 large pancakes but make however many batches necessary to feed your family or guests. If you are making multiple batches, I recommend preheating the oven to 200 degrees and placing the cooked pancakes on a baking sheet in the oven to stay warm while the rest of the pancakes are cooking.  You can always place the cooked pancakes … Continue reading

Halloween is fast approaching.
