Open Faced BBQ Chicken Sandwich
Open Faced BBQ Chicken Sandwich are a great addition to any weekly menu! Simple to prepare, hearty, and comforting on a cold night. These open-faced sandwiches are very flavorful; crispy toast, melted cheese, BBQ rotisserie chicken that’s piled high, what’s not to love? They are yummy and come together in about 20 minutes (including prep and cook time). The recipe can be found here. Start by removing the rotisserie chicken from the bone. Shred it and set aside. You will only need about ½ the rotisserie chicken for this recipe. The recipe makes enough for 4 open-faced sandwiches. If you need more than 4, adjust the ingredients accordingly. The recipe I want to share with you today is for Baked Chicken Jalapeno Popper Flautas, which is a combination of jalapeno poppers and chicken flautas. They are made with shredded rotisserie chicken, cream cheese, shredded cheese, jalapeno, and tortillas. This recipe is very easy to make, doesn’t take a lot of time, and makes the perfect appetizer or meal, depending on how many people you are serving. Chicken with Parmesan Garlic Rice is a phenomenal weeknight meal! It combines pan seared chicken with a cheesy, garlic filled bed of rice. The chicken is perfectly seasoned and tender, the rice is soft and pillowy with lots of fragrant garlic and parmesan cheese mixed in, and it’s topped with fresh, crisp parsley. It’s delicious and I hope you give it a try! The recipe can be found here. Start by seasoning the chicken tenders with salt, pepper, and garlic powder on both sides. I used chicken tenders but feel free to use boneless skinless chicken breasts or chicken thighs, if you prefer. Heat oil in a large skillet over medium heat. Chicken Bacon Ranch Kabobs are a simple 5 ingredient meal the whole family will love! They are very flavorful and a combination most people are already familiar with. Try them for a quick weeknight meal or serve at a summer BBQ. The kabobs are packed with crispy bacon, tender chicken, and are marinated in a homemade ranch dressing. The recipe can be found here. Start by adding the wooden skewers to a drinking glass filled with water to soak before grilling. This will prevent the wood from catching fire on the grill. Set aside until ready to use. Chicken Pesto Naan Flatbread is a quick and easy meal that comes together with minimal effort and few ingredients. It’s filling, flavorful, and done in about 20 minutes. This recipe is great for spring or summer and can be made in the oven or on the grill. The recipe can be found here. Start by preheating the oven to 350 degrees F. Line a baking sheet with parchment paper. Place the flatbreads on the baking sheet. Top each with ¼ cup of pesto and spread evenly over the top. Add more or less to taste. These are addicting! Who knew a chicken burger could taste so good? Chicken Bacon Ranch Burgers are loaded with juicy chicken, melted cheddar cheese, crisp bacon, and plenty of ranch seasoning. They are a new household favorite and something you should keep stocked in your freezer for plenty of summer grilling. The recipe can be found here. Start by cooking the bacon according to package instructions. You can use any brand, thickness, or flavor of bacon you prefer. Just make sure to have enough bacon to use as an ingredient inside the burgers and as a topping. Once cooked, remove to a paper towel lined plate to drain the excess grease. Summer is fast approaching and one thing I look forward to eating more of is salads. There is something about a big bowl of leafy greens with all the fixings that screams summer. It’s a healthy meal and is light and refreshing on a hot day. You also don’t often feel like you overate with a salad, and you can customize the ingredients to match your tastes. Slow Cooker Shredded Thai Curry Chicken
Slow cooker meals are great for any time of year. Simply set it and forget it and you have a tasty meal that is hearty, filling, and will feed the whole family. That’s what my recipe for Slow Cooker Shredded Thai Curry Chicken is…. simple but delicious. The chicken is braised in a coconut-curry mixture and is moist and tender. The coconut-curry is Thai style with a base of coconut milk, onions, peppers (spicy), sugar (sweet), fish sauce (tangy), and lime juice (citrus)…it’s like a flavor explosion in your mouth.
