Bacon Apple Chicken Burgers with Dijon Sauce
We recently tried a recipe for Bacon Apple Chicken Burgers with Dijon Sauce, and it was amazing! The burgers are a little sweet from the apples and a little salty from the crispy bacon. Add the Dijon sauce and you have a little slice of heaven! The Dijon sauce is a combination of Dijon mustard, mayonnaise, and maple syrup so it is sweet yet tangy, and I could not get enough of it. All the flavors in this burger pair well and your taste buds will be happy 😊 The ingredient list looks long but these burgers really are easy to make. And you will most likely have most of the ingredients at home already, so give them a try! The recipe can be found here. Start by preparing the Dijon sauce. Add the Dijon mustard, mayonnaise, and maple syrup to a mixing bowl and stir to combine. Give it a taste and adjust the ingredients, as necessary. For … Continue reading

Luck of the Irish
St Patrick’s Day is fast approaching. Do you have plans to celebrate? I’m admittedly well past the years of bar hopping downtown to drink some mediocre green beer in an overcrowded bar…. I tend to opt for a more homebound celebration that involves some good food, maybe a cocktail or 2, and allows me to be in my jammies by 8pm 6pm 😊 This year, we are going to make the following recipes for our St Patrick’s Day dinner: Pot of Gold Mimosa Irish Soda Muffins Guinness Glazed Meatballs Irish Cream Brownies The Pot of Gold Mimosa is an elevated mimosa to be St Patrick’s Day themed. This is a cocktail I like to enjoy while making dinner as well as during dinner. It’s very light and refreshing. The recipe can be found here. Start by adding 3 oz of orange juice to a champagne glass. Next, add ½ oz of vodka (you can always skip the … Continue reading

Instant Pot Chicken Bruschetta Pasta
Instant Pot meals are quickly becoming a favorite of mine on night we are busy and don’t have a lot of time to spend cooking but still want a nice meal. We probably use our Instant Pot more in the fall and winter than we do in the spring and summer because it’s great for warm and hearty meals. Recently we made Instant Pot Chicken Bruschetta Pasta. It was delicious! The chicken was moist and tender, the noodles were al dente (I hate when they become too soft and mushy), and the bruschetta topping added some lovely color and a bit of freshness to the dish. The flavors pair well together and left us feeling quite satisfied! The recipe can be found here. Start by preparing your ingredients – the ingredients you will be putting in the Instant Pot. Slice the chicken, mince the garlic, etc. Then, add the ingredients to the Instant Pot in the … Continue reading

Hawaiian Sheet Pan Chicken
Hawaiian Sheet Pan Chicken is a quick an easy, yet super tasty, weeknight meal. The entire meal is made with one sheet pan so cleanup will also be quick. You do need a cutting board, mixing bowl, and knife, but that’s still less dishes than normal, right? I think it took me 60 min TOPS to make this dish, including prep time, bake time, and cleanup. This dish is full of flavor! The chicken is moist and juicy, the veggies are tender, the BBQ sauce adds a little tanginess, and the pineapple add a wonderfully fresh, citrus flavor. My favorite way to serve this is over a bed of rice but mashed potatoes or a salad would be a good substitute. The recipe can be found here. Start by preheating the oven to 350 degrees F and line a baking sheet with parchment paper. Slice the chicken and add to a mixing bowl. Drizzle with olive … Continue reading

Jalapeno Popper Chicken Casserole
Jalapeno Popper Chicken Casserole is a favorite and easy to-to dinner when we are looking for something hearty and delicious. It includes tender, juice chicken that is coated in a creamy mixture and topped with spicy jalapenos, shredded cheese, and crisp bacon. This is a great recipe for lunch or dinner. The recipe can be found here. Start by cooking the bacon according to package instructions. If you are using rotisserie chicken (which I highly recommend), remove the chicken from the bones and shred. If you are using boneless skinless chicken breasts (which also work just fine), cook and cube or shred. You want the meat to be pre-cooked before assembling the dish. Preheat the oven to 375 degrees F. Spread the chicken in the bottom of a 9×13 baking dish. Season with garlic powder, paprika, and pepper (optional). Whisk together the heavy cream, chicken stock, and cream cheese. Spread … Continue reading

Mediterranean Eating
Sometimes in the winter months we look for lighter dinner options to break away from the warm and hearty meals people typically eat when it’s so cold out. It makes us feel a little healthier and is a great way to get in those veggies 😊 We recently made a Mediterranean Grilled Chicken with Greek Dill Sauce and paired it with Mediterranean Yellow Rice as a side. It was incredible! The chicken was tender and juicy, and the rice was light and fluffy. But the secret to what makes this recipe so good is the seasoning – it makes the dish really savory. The chicken is prepared with allspice, nutmeg, and cardamon, and the yellow rice is prepared with turmeric and cumin, making both dishes a little sweet. So run (don’t walk) to your local Festival Foods to gather ingredients to make this wonderful Mediterranean style dish today! The recipes can be found here: Mediterranean Grilled Chicken … Continue reading

Chicken Parmesan Wings
Chicken Parmesan Wings are a bite-sized version of the classic Italian dish. The wings are breaded and baked and are perfectly juicy and tender. They are then topped with marinara sauce and mozzarella cheese before serving. They make a great appetizer or finger food to serve at a party. For us, they make a wonderful dinner for 2. I tend to serve the wings with additional marinara sauce on the side for dipping but a side of spaghetti noodles or some mashed potatoes would also pair well! The recipe can be found here. Start by preheating the oven to 425 degrees F and lining a baking sheet with parchment paper. Add the chicken wings to a large bowl (pat dry first if they are wet). Add the flour and toss to evenly coat. Then, season with salt. I like to use about ½-1 Tsp of salt. I don’t want the wings to be too salty and often the marinara … Continue reading

Chicken Sausage Kabobs with Honey Balsamic Glaze
It’s getting to be the time of year when grills get covered and ignored for a few months while we all hunker down and brave the cold temperatures from the warmth of our house. If you are a die-hard griller that uses their grill year-round – kudos to you! If you are like me and want to sneak in one last grilled meal before you stick to indoor cooking, keep reading 😊 Chicken Sausage Kabobs with Honey Balsamic Glaze are a quick and easy weeknight meal that is ready in about 30 minutes. The chicken is moist, the vegetables are tender, and the pineapple adds a lovely citrus flavor to every bite. My favorite part is the honey balsamic glaze. It’s sweet and salty and creates this lovely coating on the kabobs. I prefer to use bell peppers on the kabobs, but you can use zucchini, squash, mushrooms, cherry tomatoes, onions, etc. Feel free to really make the … Continue reading

Instant Pot Chicken Pad Thai
Instant Pot Chicken Pad Thai is better than takeout! I never thought I would say that about a home cooked meal, but it really is. It’s a one-pot dish that’s packed with chicken, veggies, noodles, and pad thai sauce. It’s salty and nutty with just a hint of sweetness. So, skip the takeout and give this a try! The recipe can be found here. As mentioned previously, this is a one-pot dish, so all you need is your Instant Pot, a cutting board, knife, and spoon. Start by slicing the chicken, bell peppers, and green onions. I like to buy matchstick carrots because the work is already done for me. If you can’t find matchstick carrots at the grocery store, you can slice your own. You want them to be very thin…. julienne style. Then, mince the garlic and chop the cilantro. Set the prepared ingredients aside. Add olive oil to the bottom of the Instant Pot. Add the … Continue reading

Chicken Fajita Pasta
Chicken Fajita Pasta is a yummy one-pot recipe you will be sure to enjoy! It’s creamy and packed with peppers, onions, and tender chicken in each bite. The main selling point for me on this recipe is that you cook the entire meal in one-pot which means less dishes and easier clean up. The recipe can be found here. Start by slicing the chicken, onion, and bell peppers, and mince the garlic. Heat oil in a large skillet or Dutch oven over medium-high heat. You want the skillet to be large enough to cook all the ingredients so make sure you are using a large enough vessel. Add the chicken and cook for 3-4 minutes. Then, add ½ of the fajita seasoning and stir to coat. Continue to cook for another 3-4 minutes or until the chicken is cooked through. It will absorb the fajita flavor and be perfectly seasoned. Remove the chicken from the pan and set … Continue reading
