Open Faced Chicken Parmesan Sandwiches will be your next go-to meal for a busy weeknight!  They are easy to make, hearty, and perfect for a cold winter night.  These open-faced sandwiches are packed with tender rotisserie chicken that’s coated in marinara sauce (or tomato sauce) flavored with garlic and added seasonings and are served open-faced on crispy garlic Texas toast with plenty of melted cheese.  They are delicious and come together in about 20 minutes (including prep and cook time). The recipe can be found here. Start by removing the rotisserie chicken from the bone.  Shred it and set aside.  You will only need about ½ the rotisserie chicken for this recipe.  The recipe makes enough for 4 open-faced sandwiches.  If you need more than 4, adjust the ingredients accordingly.  Preheat the oven to 425 degrees F and line a baking sheet with parchment paper. Hot Dog Grilled Cheese is a wonderful combination of 2 classics – hot dogs and grilled cheese!  Is it an elevated grilled cheese or is it an elevated hot dog?  You tell me!  They are super cheesy, have a crispy toasted bun, and can be made with any type of hotdog (beef, pork, turkey, etc.) …what’s not to love?  I devoured 2 of these on my own and was still thinking about them the next day 😊 So, if you have picky eaters or have an argument about what’s for dinner every night, I highly recommend you give these Hot Dog Grilled Cheese sandwiches a try.  They are sure to please everyone! Something I love to do from time to time is making homemade bread.  I don’t do it often because it can be time consuming, but nothing beats the taste of a hot, fresh loaf of bread right out of the oven.  I recently purchased the KitchenAid Bread Bowl with Baking Lid which makes creating artisan bread at home quite simple!  It’s essentially one bowl that goes from mixing to rising to baking.  First, I’ll walk through hot to make the homemade bread then I’ll walk you through my favorite recipe to use with the bread. Honey Dijon Grilled Chicken Sandwiches should be on your menu this week!  It’s sweet from honey, tangy from mustard, salty from bacon, and a little earthy / nutty from cheese.  Pair it with some juicy, tender chicken and sandwich it between a pretzel bun or brioche bun and you have the perfect meal.  It’s simple to make, is packed with flavor, and will please everyone at the dinner table. Start by making the sauce.  Add the olive oil, apple cider vinegar, honey, Dijon mustard, and salt to a mixing bowl.  Whisk to combine.  Taste and adjust the seasoning, if needed, and set aside. Rosemary, Garlic & Bacon Chicken Burgers are packed with flavor yet light and almost more satisfying than a beef burger.  You use this lovely rosemary and garlic mayo as a spread on the bun and inside the burger making it extra moist and juicy.  I like to top the burgers with arugula, but you could substitute lettuce.  I like the peppery, crunchy texture of arugula and this it pairs well with the flavors of the chicken burger. Start by cooking the bacon according to package instructions.  Transfer to a paper towel lined plate to drain the excess grease and set aside.  The recipe calls for 1 slice of bacon per burger, but you can make more and add as much as you like. A Pimento BLT Sandwich is not your ordinary, run of the mill sandwich.  It’s an elevated BLT because of the Pimento Cheese spread.  If you aren’t familiar with Pimento Cheese, it’s a creamy, cheese, and tangy spread that is often referred to as the pâté of the South.  It’s made with cream cheese, cheddar cheese, pimento peppers (which are sweet and mild), and mayonnaise.  You can adjust the spicy by adding cayenne pepper and other seasonings.  It’s best when homemade but you can usually find a jarred variety at your local grocery store.  It goes well with crackers, vegetables, or spread on a sandwich, which is what we are doing today. Pizza Grilled Cheese combines 2 of my favorite things…pizza and grilled cheese.  It’s the ultimate mash-up meal!  And it’s something the kids will absolutely love!  Think mounds of melted cheese and spicy pepperoni sandwiched between 2 slices of buttery, garlicky bread.  Dip it in your favorite marinara sauce before each bite and you will be in heaven. The sandwiches are somewhat customizable too.  Use turkey pepperoni vs traditional pork/beef pepperoni, add crumbled sausage, etc.…you get the picture, so each family member can easily create their own yummy sandwich. Start by adding 3 Tbsp unsalted butter to a microwave safe bowl.  Microwave for 30 seconds or until melted.  Add the parsley, Italian seasoning, garlic powder, and salt.  Stir to combine and set aside.  If you prefer to use salted butter, simply skip adding any additional salt.
