Taquitos are a fun hand-held treat that are crunchy and delicious.  You can customize the filling and change up the flavors to create different versions of the same dish and cook them in different ways.  They can be deep fried, baked in an oven or cooked in an air fryer.  I bet you could even use an Instant Pot, but I haven’t figured that recipe out yet 🙂 I’ve use Taquitos as both an appetizer and dinner.  They work well as an appetizer if you are hosting a party and want finger foods or if you plan to bring them to a potluck.  They are a quick grab-and-go item as you typically don’t need a plate or silverware.  Dinner is also an option if you want the Taquitos to be the main event. Instant Pot Buffalo Chicken Mac & Cheese is a great one-pot meal that will blow your mind!  It’s a twist on traditional mac & cheese that is easy to make and done in minutes.  It’s super cream, full of tender chicken, and has a great spicy and tangy flavor from the addition of buffalo sauce. The recipe can be found here. Start by slicing the chicken into bite sized pieces.  Add the chicken to a bowl and season with salt, pepper, and garlic powder.  Toss to coat all pieces. Buffalo Chicken is an obsession of mine and seems to be a very popular food item in general.  Most people I talk to have a favorite buffalo chicken dish of some kind.  I don’t know what it is that draws me back but it’s SO juicy and flavorful…. I could eat it every night of the week. Recently, we made Crock Pot Pulled Buffalo Chicken.  I have a long list of why I love this recipe but the gist of it is, it’s juice, spicy, simple to make, and absolutely delicious!  It can be a meal by itself or used in sandwiches, salads, wraps, tacos, dips, on pizza, and more.  We chose to use it in sandwiches.  It’s a crock pot meal and makes a healthy portion so you’ll be able to eat it for a few days or serve to a crowd. Buffalo Chicken Stuffed Bread is a meal in itself.  I typically think of buffalo chicken as an appetizer or side dish but could seriously make a loaf of this bread and eat the entire thing as a meal.  I probably wouldn’t feel the best after but at least I’d be happy, right? 🙂 All joking aside, this Buffalo Chicken Stuffed Bread is amazing!  It’s huge flavor packed into a loaf of bread…. think creamy, cheesy, spicy and crunchy.  You get a little of each in every bite! The recipe can be found here. Preheat the oven to 350 degrees.  While the oven preheats, make the buffalo chicken dip and prepare the bread loaf. Instant Pot Buffalo Chicken Dip is the perfect recipe when you are looking for something quick and easy!  It’s cheesy, filled with tender chicken, has a bit of heat (hope you can handle it :)), and comes together in very little time.  It’s a great appetizer for game day or parties…or whenever you just need a little buffalo chicken kick! The recipe can be found here. Make sure the chicken is completely thawed and trim off any excess fat.  Place the chicken in the bottom of the Instant Pot.  Pour the hot sauce over the top.  I like to use Frank’s Xtra Red Hot Sauce for a little extra heat.  If you don’t want the added spice, use Frank’s Original Red Hot Sauce. Summer is finally here and now it’s time to look ahead to the 4th of July.  Can you believe it’s only a week away?  We plan on celebrating with family and friends – backyard bash, BBQ, yard games, drinks, the whole shebang!  If you are as unprepared as I am, you are probably in need of a few quick and easy food options 🙂 First up is Buffalo Chicken Firecrackers.  These are fun to assemble and a great themed food for your spread.  Feel free to use your favorite homemade Buffalo Chicken Dip if you prefer but I like to order fresh from the deli.  Saves me some time and effort, and it’s delicious!  Plus, any leftovers can be set out to enjoy with the rest of the food. When was the last time you ate a Sloppy Joe?  It’s not a common meal in my house but there is something about a Sloppy Joe that reminds me of family dinners as a child.  I wanted to create a new version of a Sloppy Joe that combines another favorite food of ours – buffalo chicken.  The result was a Buffalo Chicken Sloppy Joe.  It was amazing! These Buffalo Chicken Sloppy Joe’s have enough heat without being too spicy and veggies hidden within the meat that add great flavor.  I recommend drizzling some ranch or blue cheese dressing on top to offset the heat.  And because who can enjoy buffalo sauce without ranch or blue cheese?  It really completes the sandwich! My new favorite slow cooker chili recipe is for Buffalo Chicken Chili.  It has the perfect amount of spice, a creamy base, tender chicken in every bite, and only take about 10 minutes to assemble.  Then…set it and forget it!  There is so much flavor packed into this recipe, you’re sure to like it! Start by adding the chicken to the base of the crock pot, then layer all other ingredients on top – beans, corn, tomatoes, chicken broth, Ranch dressing mix, buffalo wing sauce, onion powder, garlic powder, celery salt, dried cilantro, and salt. Stir to combine all ingredients.  Then place the brick of cream cheese on top. Cover and cook on high for 4 hours.  Once 4 hours have passed, remove the chicken and either shred or cube, and put back into the crock pot.  Stir and cook for another 30 minutes. … Continue reading

There is nothing like a juicy burger hot off the grill, chilled cocktail in hand, and warm weather to cure those winter blues.  I want to share some of my favorite chicken/turkey burger recipes with you now that it’s starting to feel like summer!  These are all a nice break from typical hamburgers and healthier for you (well, maybe not once you add all the toppings).  I think they are very flavorful, simple to make, and delicious to eat.  The first recipe I want to share is for Buffalo Chicken Burgers.  These are ¼ pound burgers that taste just like buffalo wings but without the mess.  Who wouldn’t want that?  I like to top my burger with extra buffalo sauce and a little ranch dressing, then add a small amount of each onto my plate for extra dipping sauce.  This burger would also pair well with blue cheese.  The recipe … Continue reading
