Slow Cooker Shredded Thai Curry Chicken

Slow cooker meals are great for any time of year. Simply set it and forget it and you have a tasty meal that is hearty, filling, and will feed the whole family. That’s what my recipe for Slow Cooker Shredded Thai Curry Chicken is…. simple but delicious. The chicken is braised in a coconut-curry mixture and is moist and tender. The coconut-curry is Thai style with a base of coconut milk, onions, peppers (spicy), sugar (sweet), fish sauce (tangy), and lime juice (citrus)…it’s like a flavor explosion in your mouth. Greek Chicken Lettuce Wraps with Tzatziki Sauce

Greek Chicken Lettuce Wraps with Tzatziki Sauce are super easy to make, healthy, and refreshing. They are packed with zesty chicken, cool cucumbers, crisp tomato and onion, and tangy tzatziki sauce. It’s a burst of Mediterranean flavor! For us, these are simple weeknight meal. However, they would make great lunches because you can meal prep ahead of time and they are pretty light vs. filling. I recommend using bib lettuce, butter lettuce, or romaine hearts. They bib and butter lettuce create these “cups” for the ingredients to sit in and the romaine lettuce wraps the ingredients together well without ripping. Everyone loves a good Chicken Bacon Ranch Sandwich, but have you ever tried Chicken Bacon Ranch Sheet Pan Nachos? Let me tell you…they are yummy! Super easy to make, super quick to make, super easy to cleanup, and they work well as an appetizer (or as a meal for 2…guilty as charged). The chicken is juicy and tender, the bacon is salty and crisp, and melted cheese brings it all (or holds it all) together. My favorite part is the ranch dressing that’s drizzled over the top. Instant Pot Chicken Bruschetta Pasta

Instant Pot meals are quickly becoming a favorite of mine on night we are busy and don’t have a lot of time to spend cooking but still want a nice meal. We probably use our Instant Pot more in the fall and winter than we do in the spring and summer because it’s great for warm and hearty meals. Recently we made Instant Pot Chicken Bruschetta Pasta. It was delicious! The chicken was moist and tender, the noodles were al dente (I hate when they become too soft and mushy), and the bruschetta topping added some lovely color and a bit of freshness to the dish. Hawaiian Sheet Pan Chicken

Hawaiian Sheet Pan Chicken is a quick an easy, yet super tasty, weeknight meal. The entire meal is made with one sheet pan so cleanup will also be quick. You do need a cutting board, mixing bowl, and knife, but that’s still less dishes than normal, right? I think it took me 60 min TOPS to make this dish, including prep time, bake time, and cleanup. This dish is full of flavor! The chicken is moist and juicy, the veggies are tender, the BBQ sauce adds a little tanginess, and the pineapple add a wonderfully fresh, citrus flavor. Jalapeno Popper Chicken Casserole is a favorite and easy to-to dinner when we are looking for something hearty and delicious. It includes tender, juice chicken that is coated in a creamy mixture and topped with spicy jalapenos, shredded cheese, and crisp bacon. This is a great recipe for lunch or dinner. If you are using rotisserie chicken (which I highly recommend), remove the chicken from the bones and shred. If you are using boneless skinless chicken breasts (which also work just fine), cook and cube or shred. You want the meat to be pre-cooked before assembling the dish. Sometimes in the winter months we look for lighter dinner options to break away from the warm and hearty meals people typically eat when it’s so cold out. It makes us feel a little healthier and is a great way to get in those veggies 😊 We recently made a Mediterranean Grilled Chicken with Greek Dill Sauce and paired it with Mediterranean Yellow Rice as a side. It was incredible! The chicken was tender and juicy, and the rice was light and fluffy. But the secret to what makes this recipe so good is the seasoning – it makes the dish really savory. Instant Pot Chicken Tortilla Soup is a wonderful meal that is made from scratch and is ready in a fraction of the time you would spend making this soup on the stove. It’s hearty, spicy, and something the whole family will love. You can even customize your toppings! Add shredded cheese, cilantro, lemon wedges, tortilla chips – you name it! The recipe can be found here. Start by prepping your ingredients. Mince the garlic, mince the onion, drain and rinse the black beans, drain the corn, slice the cilantro, and slice the lime. Instant Pot Chicken Pad Thai is better than takeout! I never thought I would say that about a home cooked meal, but it really is. It’s a one-pot dish that’s packed with chicken, veggies, noodles, and pad thai sauce. It’s salty and nutty with just a hint of sweetness. So, skip the takeout and give this a try! Start by slicing the chicken, bell peppers, and green onions. I like to buy matchstick carrots because the work is already done for me.
