Cashew Chicken Lettuce Wraps are a delicious, low carb dinner option, and are better than takeout!  That’s right…. I said it.  Sometimes homemade meals are better than takeout.  These lettuce wraps are restaurant style and come together in about 20 minutes.  They are filled with tender chicken, cashews, ginger, garlic, and plenty of heat!  Each lettuce wrap is full of flavor and make quite the healthy meal option. The recipe can be found here. Start by slicing the chicken into 1-inch pieces.  Then, season with salt and pepper and set aside.  An alternate option would be to substitute ground chicken or ground turkey if you prefer.  You obviously don’t need to slice either of those but should still season with salt and pepper. In a mixing bowl, combine the chicken stock, soy sauce, ginger, hoisin sauce, rice wine vinegar, and cornstarch.  Whisk until well combined and set aside.  The flavors … Continue reading

Flavorful and creamy Instant Pot Garlic Chicken Pasta will make weeknight cooking a breeze!  It’s rich, without being too rich, easy to make, and delicious.  Plus, it’s a one-pot meal because it is entirely made in the Instant Pot.  That’s a win-win for dishes and cleanup if you ask me. The chicken is simmered in a rich and creamy sauce that envelopes the tender pasta noodles.  Each bite is filled with wonderful flavor.  It’s like eating an alfredo sauce that doesn’t actually taste like alfredo.  This is a meal the whole family will enjoy!  You can jazz it up with some spinach leaves for added color or substitute the chicken for ground beef.  If you are looking for a vegetarian option, skip the meat and add mushrooms instead. The recipe can be found here. Start by adding salt, Italian seasoning, paprika, garlic powder, and black pepper to a large Ziploc … Continue reading

If you are searching for the perfect appetizer or side for your next cookout, look no further!  Grilled Jalapeno Poppers are the way to go!  They are stuffed with an addictive mixture of bacon, cream cheese, and cheddar cheese.  The rich and creamy combination of the stuffing contrasts the spicy jalapeno peppers leaving you wanting more. This is a great alternative to the breaded and fried version because they are fresh, cook up nicely on the grill, and are quite addicting 🙂 You can even skip the bacon for a vegetarian option if you prefer. The recipe can be found here. We own a Jalapeno Grill Rack that we use for this recipe, which I find quite wonderful to use.  If you don’t have one, I highly recommend getting one! Start by preheating the grill to 325 degrees F.  It can be tricky to keep the grill temperature consistent once … Continue reading

Two of my favorite things to eat are breakfast foods and pizza.  There is nothing like a good brunch with plenty of options to choose from but there is also something so satisfying about leftover pizza for breakfast.  So really, pizza is a breakfast food 🙂 Today I want to share with you my recipe for a super simple Breakfast Pizza.  We actually ate this for dinner one night (breakfast for dinner = brinner at our house) and it was the perfect meal, but you could easily whip this up on the weekend for breakfast.  It’s a quick recipe that is ready in under 30 minutes and tastes incredible.  The recipe is also customizable.  We had cheese, bacon, and egg pizza but you could substitute the bacon with sausage, add some diced onions or bell peppers, etc. The recipe can be found here. Start by cooking the bacon to package … Continue reading

I have a few new recipes to share with you today.  They are all 4th of July themed and something you can easily add to your menu – or anytime throughout summer!  I plan on making a few of these this upcoming weekend and look forward to enjoying them at our party. The first recipe is for Firecracker Hot Dogs.  Think hot dog wrapped in breadstick or crescent roll dough and baked to perfection.  They are super simple to make, will satisfy even the pickiest eater, … Continue reading

Your favorite Chicken Parmesan dish is now available in sandwich form with Chicken Parmesan Sloppy Joe’s.  These Sloppy Joe’s are a delectable mixture of chicken, tomato sauce, mozzarella cheese, and breadcrumbs.  It’s a very family / kid friendly meal and tastes amazing!  Plus, it’s ready in under 30 minutes. The recipe can be found here. Start by adding the breadcrumbs to a small skillet.  Heat over medium heat until lightly toasted.  Stir occasionally so they don’t burn!  Remove the breadcrumbs to a plate or bowl to cool and set aside.  Do not leave them in the skillet at they will continue to toast in the hot pan! Heat a large skillet over medium heat.  Add the ground chicken and onion.  Cook until the meat is cooked through, and the onions are soft and translucent.  Break apart the chicken into small chunks as it cooks. Step up your Sloppy Joe game with Chicken Bacon Ranch Sloppy Joe’s!  Ready in under 30 minutes, these Sloppy Joe’s are a yummy mixture of chicken, bacon, mozzarella cheese, cheddar cheese, and ranch seasoning all sandwiched between a bun.  If you’ve ever had anything chicken-bacon-ranch flavored before, you know what I’m talking about 😊  This recipe is a win! The recipe can be found here. Start by heating a large skillet over medium high heat.  Add the bacon and cook according to package instructions.  Remove the bacon to a paper towel lined plate to drain some of the grease.  Do not drain the grease from the pan – you will be cooking the other ingredients in the bacon grease. Reduce the heat to medium and add the chopped onion.  Cook until soft and translucent.  This shouldn’t take long because the bacon grease will already be plenty hot! Add the ground chicken to the skillet and cook until … Continue reading

Sheet pan meals are becoming more frequent at our house.  They are easy to assemble and quick to cleanup because all the cooking happens on…you guessed it…a sheet pan.  We have a 2-person household as well, so the sheet pan meals are often enough to have for 2 meals.  Depending on how busy we are during the week, this is either 2 dinners or 1 dinner and 1 lunch for us.  The combinations are endless as well!  We primarily make chicken with a vegetable on the side, but you could try turkey breasts, pork chops, etc. with any vegetable (or vegetables) of your choosing. My favorite recipe is for Sheet Pan Pretzel Encrusted Honey Mustard Chicken with Potatoes.  I think coating to the chicken adds a fun element to the dish because you had added texture and flavor instead of just plain chicken.  So, you get tender chicken in each bite with a little crunch.  The combination of … Continue reading

We don’t use our air fryer often but every now and again it’s fun to try a new recipe.  This time we tried an Air Fryer Blooming Onion.  A blooming onion is essentially a large onion that is sliced to resemble a flower, battered, deep fried, and served as an appetizer.  My recipe removes the deep-frying step and has you air fry it instead. The batter creates this lovely crust that is crispy, the onion is tender, and the dipping sauce adds a nice tang to each bite. The recipe can be found here. Start by preparing the onion.  Peel the onion and slice off the stem.  Do not remove the base on the other side of the onion – only remove the stem or end of one side.  Otherwise the onion will fall apart!   Turn the onion so the cut side is down.  Cut an inch from the … Continue reading

Oven Baked Cajun Salmon is a great weeknight meal!  It’s a one pan meal that is easy to assemble and will leave you perfectly satisfied.  The salmon is tender and not too filling, and the veggies are roasted to perfection.  The Cajun seasoning gives off a bold, spicy flavor with a slight earthiness.  It’s an all-purpose seasoning that I use on a regular basis. The recipe can be found here. Start by preheating the oven to 425 degrees F.  Line a baking sheet with parchment paper. Place the salmon on the baking sheet.  If you did not have the skin remove from the salmon at the grocery store that is just fine!  Place the skin side down on the baking sheet and it will effortlessly fall off when done baking so no need to worry about removing it yourself.  If you did have the skin removed at the grocery store, … Continue reading
