Bacon Jalapeno Crescent Roll Puffs is an easy appetizer or dinner recipe that will be a crowd favorite!  I say appetizer or dinner because the recipe is something most people would serve as an appetizer but if you eat enough of them (like we did) they can also be filling enough for an entire meal 😊 Think of this recipe as a spin on a traditional jalapeno popper.  You still have the jalapeno, bacon, shredded cheese, and cream cheese but instead of being stuffed inside the jalapenos, the ingredients are wrapped in crescent roll dough.  You get crispy bacon and spicy jalapeno, but the heat is cut by the combination of Colby jack and cream cheese.  The crescent roll dough creates this warm, soft, pillowy blanket to hold the ingredients together.  They are addictive! The recipe can be found here. Start by preheating the oven to 350 degrees F.  Line a baking sheet with parchment paper. Cook the … Continue reading

Carbonara Baked Potatoes are something we tried recently, and I would definitely make again!  You are probably most familiar with Pasta Carbonara, but this is a spin on the traditional Italian dish.  Carbonara is essentially pancetta or bacon, with eggs, parmesan, salt, pepper, and maybe a little olive oil.  It’s comfort food at its finest and super yummy when paired with baked potatoes 😊 The recipe can be found here. Start by preheating the oven to 350 degrees F.  Line a baking sheet with parchment paper. Wash and dry the potatoes.  Use a fork to pierce the potatoes on all sides (plus a few extra for good measure).  Rub each potato with a little olive oil and place on the baking sheet.  I also like to sprinkle mine with a little salt but it’s optional.  Bake for 1 hour or until tender (aka you can easily pierce the potato with a fork). While the potatoes bake, cook the bacon according to … Continue reading

Everyone loves a good Chicken Bacon Ranch Sandwich, but have you ever tried Chicken Bacon Ranch Sheet Pan Nachos?  Let me tell you…they are yummy!  Super easy to make, super quick to make, super easy to cleanup, and they work well as an appetizer (or as a meal for 2…guilty as charged).  The chicken is juicy and tender, the bacon is salty and crisp, and melted cheese brings it all (or holds it all) together.  My favorite part is the ranch dressing that’s drizzled over the top.  It’s not just a bottle of ranch dressing but a homemade mixture that is rich and creamy, and you will want some in every bite! The recipe can be found here. Start by making the ranch dressing.  Combine the ranch dressing mix, mayonnaise, sour cream, and milk in a mixing bowl.  Whisk until well combined.  Then cover and refrigerate until ready to use. I like to let mine sit for about an … Continue reading

We recently tried a recipe for Bacon Apple Chicken Burgers with Dijon Sauce, and it was amazing!  The burgers are a little sweet from the apples and a little salty from the crispy bacon.  Add the Dijon sauce and you have a little slice of heaven!  The Dijon sauce is a combination of Dijon mustard, mayonnaise, and maple syrup so it is sweet yet tangy, and I could not get enough of it.  All the flavors in this burger pair well and your taste buds will be happy 😊 The ingredient list looks long but these burgers really are easy to make.  And you will most likely have most of the ingredients at home already, so give them a try! The recipe can be found here. Start by preparing the Dijon sauce.  Add the Dijon mustard, mayonnaise, and maple syrup to a mixing bowl and stir to combine.  Give it a taste and adjust the ingredients, as necessary.  For … Continue reading

Instant Pot Bacon Gouda Mac & Cheese is a very simple yet delicious meal that is ready in no time!  The combination of ingredients is incredibly rich and flavorful.  The bacon is crispy, the onions are caramelized, the noodles are nice and tender (but not mushy), and the gouda adds a wonderful nutty and creamy taste and texture to the whole dish.  You cannot go wrong with this recipe! The recipe can be found here. Start by prepping your ingredients – chop the bacon, dice the onion, measure out your spices, and shred the cheddar and gouda.  Set all ingredients aside. Turn the Instant Pot to the sauté setting.  Once hot, add the bacon and cook until crispy.  Use a slotted spoon to remove the bacon to a paper towel lined plate.  Set the bacon aside but no not discard the bacon grease in the Instant Pot. Add the butter to the Instant Pot (with the bacon … Continue reading

Loaded Cauliflower Soup is a perfect for a cold winter’s night!  It’s rich, creamy, low carb, and packed with flavor.  Let me walk you through the steps to make it. The recipe can be found here. Start by preheating the oven to 425 degrees F.  Line a baking sheet with parchment paper. Cut the cauliflower into florets and place the florets in a large mixing bowl.  Drizzle olive oil over the top and toss to coat.  Then, spread the florets into an even layer (single layer) on the baking sheet and season with salt and pepper.  Place 4-5 sprigs of thyme on top (place randomly over the top, not in a pile). Bake for 20-25 minutes or until the florets are tender and start to turn golden brown. While the cauliflower roasts, prepare the bacon.  Use a large pot or Dutch oven – something large enough to make the entire batch of soup in.  Heat the pot or … Continue reading

If you’re a jalapeno popper fan, I have a wonderful recipe for you!  It’s a Jalapeno Popper Grilled Cheese sandwich…and it’s incredible!  The bread is toasted to perfection, the jalapenos add the right amount of heat, the bacon is crisp and adds a hint of salt, and the combination of cheeses oozing out of the sandwich in each bite make it just perfect. The recipe can be found here. Start by cooking the bacon according to package instructions.  Place on a paper towel lined place to absorb some of the grease and set aside.  Pro tip – if you make extra bacon, you have something to snack on while assembling the sandwiches 😊 Next, preheat the oven to 375 degrees F and line a baking sheet with parchment paper. Slice the jalapenos in half (lengthwise) and remove any seeds.  Fill each piece of jalapeno with cream cheese.  It doesn’t matter if the cream cheese is softened for … Continue reading

Chicken.  Bacon.  Ranch.  Three things that pair amazingly well together.  Combine them in sandwich form and you have one mighty fine meal.  Think tender chicken, creamy ranch (which really goes with just about anything), and crispy bacon smothered between a bun with some melted cheese for good measure.  This is what dreams are made of.  I may be getting ahead of myself, but I do sure enjoy a good Chicken Bacon Ranch Sandwich! The recipe can be found here. Start by cooking the bacon according to package instructions.  I like to move the bacon to a paper towel lined plate to absorb some of the grease and set aside until I’m ready to use. Add the cream cheese to a large saucepan or pot and heat over medium-low heat.  Stir occasionally to melt the cream cheese.  Once it’s about halfway melted, add the entire packet of ranch seasoning (Ugh, it … Continue reading

If you are searching for the perfect appetizer or side for your next cookout, look no further!  Grilled Jalapeno Poppers are the way to go!  They are stuffed with an addictive mixture of bacon, cream cheese, and cheddar cheese.  The rich and creamy combination of the stuffing contrasts the spicy jalapeno peppers leaving you wanting more. This is a great alternative to the breaded and fried version because they are fresh, cook up nicely on the grill, and are quite addicting 🙂 You can even skip the bacon for a vegetarian option if you prefer. The recipe can be found here. We own a Jalapeno Grill Rack that we use for this recipe, which I find quite wonderful to use.  If you don’t have one, I highly recommend getting one! Start by preheating the grill to 325 degrees F.  It can be tricky to keep the grill temperature consistent once … Continue reading
