Oven Baked Buffalo Chicken Taquitos
Taquitos are a fun hand-held treat that are crunchy and delicious. You can customize the filling and change up the flavors to create different versions of the same dish and cook them in different ways. They can be deep fried, baked in an oven or cooked in an air fryer. I bet you could even use an Instant Pot, but I haven’t figured that recipe out yet 🙂 I’ve use Taquitos as both an appetizer and dinner. They work well as an appetizer if you are hosting a party and want finger foods or if you plan to bring them to a potluck. Meatball Madness

Wingin’ It
I’ve been on a chicken wing kick lately. There’s just something about them that I can’t get enough of. Sure, they are messy to eat, but picking every juicy morsel off the bone is pretty satisfying 🙂 There are a lot of words I would use to describe chicken wings…oven baked, grilled, crispy, sticky, sweet, spicy, saucy, tender, juicy, etc.…but it all depends on the recipe. There is also the debate of boneless vs. bone-in chicken. Is it really a chicken wing if it’s boneless? I used to only eat boneless wings because I didn’t want to do the work but now, I usually prefer bone-in wings because they a bit more succulent. I think a lot of people would agree. Tricks…but mostly treats
Halloween might look a little different this year but that doesn’t mean you can’t enjoy some spooky treats! I for one, love Halloween and all the fun food, scary movies, and candy. I’m sure a lot of families are deciding what is right for them…do you send your kids out to trick-or-treat or keep them home? Do you plan a small get-together with your closest friends or family to celebrate? Dress up and parade around the neighborhood? Whatever people decide to do, I hope they stay safe and healthy. If you are staying in, I highly recommend making some themed treats to enjoy. This year, I’m going to have a dessert buffet for us to enjoy. When I say “us”, I mean Andrew and me. St Paddy’s Provisions
St Patrick’s Day is a fun holiday for everyone! You can usually find some type of celebration around town whether it be a parade, green beer at your favorite bar or specials on Irish food at restaurants. Even if you aren’t Irish, it’s fun to participate in the festivities. We like to watch the parade and enjoy an adult beverage with the dressed-up crowds (the people watching is phenomenal), then head home for a feast! Some years we like to enjoy traditional Irish food but other years we like to take a favorite dish and add and Irish twist. It really depends on what we feel like cooking that day! Mardi Gras!
Mardi Gras falls on Tuesday, February 25th this year. Traditionally, the days leading up to Lent, people would binge on rich/fatty foods in anticipation of fasting or limiting intake of certain foods. Mardi Gras translates to Fat Tuesday and is celebrate the day before Ash Wednesday, making it quite the celebration! New Orleans is famous for its Mardi Gras parties. I’ve been to New Orleans and enjoyed some awesome food but have never participated in the Mardi Gras festivities…maybe someday I’ll get back! I want to celebrate Mardi Gras this year with a delicious feast. I’m thinking traditional New Orleans foods with a little twist! I’ll be making Muffuletta Dip and Chicken and Sausage Gumbo. I got my inspiration for Muffuletta Dip from a traditional, and signature, New Orleans sandwich that features olive salad, salami, and cheese. This is essentially a Muffuletta sandwich in dip form. Are you ready for some football? The Super Bowl is right around the corn and I’m sure you’re busy getting ready to host a party or determine what you are going to bring to someone else’s party. It’s always fun to plan food that’s themed for a special event and try to make something unique. We recently purchased an air fryer to see what the hype is all about – it’s pretty awesome! Our first meal consisted of Air Fryer Lemon Pepper Chicken Wings and Air Fryer Homemade French Fries.
