Sheet Pan Chicken Fajitas
Sheet Pan Chicken Fajitas are a quick and easy meal that’s bursting with flavor! The seasoning is a homemade mixture that has the perfect fajita flavor; a bit of spice but not overpowering. The chicken and veggies are tender, and you can add any toppings of your choosing. Even better, everything cooks on the same pan for easy cleanup! The recipe can be found here. Start by preheating the oven to 400 degrees F. Line a baking sheet with parchment paper. Slice the peppers, onion, and chicken into strips. Set aside. Feel free to use whichever color pepper or onion you like. I like the contrast of red and green peppers in my fajitas. I also prefer the flavor of white onions, so that’s what I use, but you can make this dish with whatever you like to meet your tastes. In a small mixing bowl, combine the chili powder, … Continue reading

A Socially Distanced Thanksgiving
Can you believe Thanksgiving is almost here? It’s been an interesting year (to say the least), so I’m looking forward to the holidays. Although, the holidays might look a little different this year. We still plan on seeing our immediate families for a nice Thanksgiving meal but will keep our gathering to 4-6 people. We will miss traveling, seeing extended family, participating in some Black Friday shopping, and more this Thanksgiving, but will savor the time we do have with the few we choose to celebrate with…socially distanced with some delicious food 🙂 We are going to start our day with a nice fall-themed charcuterie board. You need something to snack on while you cook, right? If you’ve never made a charcuterie board before, you are in for a treat. They are very simple to make, can include as many or as few ingredients as you choose, and make a … Continue reading

Wingin’ It
I’ve been on a chicken wing kick lately. There’s just something about them that I can’t get enough of. Sure, they are messy to eat, but picking every juicy morsel off the bone is pretty satisfying 🙂 There are a lot of words I would use to describe chicken wings…oven baked, grilled, crispy, sticky, sweet, spicy, saucy, tender, juicy, etc.…but it all depends on the recipe. There is also the debate of boneless vs. bone-in chicken. Is it really a chicken wing if it’s boneless? I used to only eat boneless wings because I didn’t want to do the work but now, I usually prefer bone-in wings because they a bit more succulent. I think a lot of people would agree. I started experimenting with different sauce flavors and came up with some fun Asian inspired recipes that I want to share with you today: General Tso’s Chicken Wings Kung … Continue reading

Crock Pot Buffalo Pulled Chicken
Buffalo Chicken is an obsession of mine and seems to be a very popular food item in general. Most people I talk to have a favorite buffalo chicken dish of some kind. I don’t know what it is that draws me back but it’s SO juicy and flavorful…. I could eat it every night of the week. Recently, we made Crock Pot Pulled Buffalo Chicken. I have a long list of why I love this recipe but the gist of it is, it’s juice, spicy, simple to make, and absolutely delicious! It can be a meal by itself or used in sandwiches, salads, wraps, tacos, dips, on pizza, and more. We chose to use it in sandwiches. It’s a crock pot meal and makes a healthy portion so you’ll be able to eat it for a few days or serve to a crowd. The recipe can be found here. Make … Continue reading

St Paddy’s Provisions
St Patrick’s Day is a fun holiday for everyone! You can usually find some type of celebration around town whether it be a parade, green beer at your favorite bar or specials on Irish food at restaurants. Even if you aren’t Irish, it’s fun to participate in the festivities. We like to watch the parade and enjoy an adult beverage with the dressed-up crowds (the people watching is phenomenal), then head home for a feast! Some years we like to enjoy traditional Irish food but other years we like to take a favorite dish and add and Irish twist. It really depends on what we feel like cooking that day! This year, we are going to enjoy the following menu with friends and family: Reuben Dip Guinness Cheddar Mac & Cheese Guinness Glazed Chicken Sandwich Irish Mule Guinness Brownies The Reuben Dip is our appetizer and something to much … Continue reading

Spicy Chicken Rigatoni
Spicy Chicken Rigatoni is hands down one of my top 5 favorite pasta dishes! It has large pieces of tender chicken, perfectly cooked noodles, and a lot of heat (in a good way). Should I go on? There is as little or as much garlic as you would like, alfredo sauce, marinara sauce, and butter…. yes, butter…. for a wonderfully creamy sauce. This dish is so simple to make and tastes amazing. You’ll think you’re eating at a fancy Italian restaurant. Perfetto! The recipe can be found here. In a large skillet or deep pot, heat oil over medium heat. You want the skillet or pot to be large enough to fit the sauce and noodles so you can toss everything together at the end. Add the crushed red pepper, salt, black pepper, and garlic. Sauté just long enough for the garlic to caramelize and red pepper to release flavor … Continue reading
